I thought I had discovered the best ever banana bread recipe (which is ULTRA amazing!) – but then…. I discovered…

BISCOFF BANANA BREAD!
Oh Goodness Gracious – the YUMMMMiness of Biscoff Spread, crunchy Biscoff cookies, and sweet, moist banana bread. It is pretty much the ultimate deliciousness – especially for this time of year when we just crave comforting foods!
My guys loved it!
In fact, when I gave Nick his “sample,” I asked if it was a thumbs up.
His reply:

No oil in this bread either. It is made with Greek yogurt.
The original recipe, which I have shared below from Table for Two, calls for plain Greek yogurt.
I used vanilla.
Yum!
And I added about one more tablespoon of butter, which I added in dabbles on top of the crushed up Biscoff cookies on top, just to make them a bit crisper and crunchier. (I can never just leave well enough alone!)
3 ripened bananas, peeled and mashed 1. Preheat oven to 350 degrees. Grease a 9×5 loaf pan and set aside. 2. Combine the first five ingredients and mix until well blended. 3. In a large bowl, combine the sugar, flour, baking soda, salt, and cinnamon. 4. Add the dry ingredients to the wet ingredients and mix until combined. 5. Gently fold in 3/4 of the crushed Biscoff cookies with a spatula. 6. Pour the batter into loaf pan and top with the remaining 1/4 crushed Biscoff cookies. 7. Bake for 1 hour or until toothpick inserted in the middle comes out clean. 8. Let cool completely before removing from pan and slicing. Biscoff Banana Bread

1/3 cup plain Greek yogurt
1/2 cup Biscoff spread
3 tbsp. butter, melted
2 eggs
1/2 cup granulated sugar
3/4 cup all purpose flour
3/4 tsp. baking soda
1/2 tsp. salt
1/2 tsp. ground cinnamon
18 Biscoff cookies, crushed

This looks delicious! In fact, mmmm, I can smell it baking! I have 3 bananas in my freezer waiting to make this bread! I have to ask, what are Biscoff cookies?? Soon as I find out and can get to the store to get them, I am making this recipe!

They are those little shortbread type of cookies you get on airplanes. Google it Pj and see if they look similar. The spread is also marketed someplaces as cookie butter. Oh so yummy you can eat by the spoonful!! 😜

Yum, Oh boy, you did it again Jodi. I had to look up Biscoff on the Internet, I’d never heard of it. I never seen it in the shelves in Las Vegas, but now I must take a closer look.

Oh God… How I wish I had an oven.. Whenever I read food blogs I sit there salivating over beautiful food and then go eat something I can pull off with what I have got.. Love your recipe. Will sure try when I have a kitchen to myself 😀 ehhe 😉

Not recently on the aircraft but when I see them on the aircraft I will ask for as many as I can get – yum! I see them in the grocery too of course but forget to get some.

I have never seen Biscoff cookies here in the store. And is Biscoff spread like a butter? We have Trader Joes here so I will have to look for it. Your photo looks yummy I must say, Jodi! ❤️❤️❤️

I would certainly be several sizes larger if I baked as much as you do! When my younger daughter was in high school she used to get the urge to bake at night and just concoct something from what we had in the house…but luckily she would take the results in to share with her friends for lunch. Photography has much less calories than food, so I’m glad I’m enjoying your baking in that way.

This looks and sounds amazing. I use European vanilla yogurt in my Banana Bread recipe. It makes it so moist, and yummy. I’m printing this recipe. I hadn’t heard of those cookies, or spread before either. I’ll be looking them up.

I think you will fall in love with Biscoff 🙂 I’ve not had European Vanilla Yogurt. Is there a particular brand? Or is it called “European?” hmmm. what makes it unique and different from Greek?

It’s really called European Style Yogurt. I get ours from a local Dairy. The brand is Strauss. It’s super creamy, the consistency is so hard to describe…creamy, thick like ice cream you let melt just so you stir it up probably comes the closest, or a super thick gravy.
FWIW- I buy their milk too. It still comes in a glass half gallon bottle, and they top off every bottle with a plug of pure cream. I love it!
