Pecan Tassies: Wedding Cookies
If I were standing at a wedding cookie table and was told I could only choose ONE cookie from all the varieties on the table…
every single time…. I would choose a Pecan Tassie.
That’s just me. Now I know my friend Mary would pick the Hershey Kiss Brownie Bite. Nick would pick the Chocolate Chip. My friend Wayne would go for the Carrot Cake Thumbprint. Jake would likely take the Peanut Butter Cup Cookie. Hubby – he always goes for the Apricot Kolache…. Always – anything apricot.
So this week, as I continue to bake cookies for the wedding cookie table, I made my faves, and I happily continue to bake.
If you could only pick one cookie from the cookie table, which would yours be?
Pecan Tassie Cookies
- Cookie Crust
- 1 cup butter, softened
- 6 oz. cream cheese, softened
- 2 cups flour
- Pecan Filling
- 1 1/2 cups brown sugar
- 2 tsp. vanilla
- 2 eggs
- 1 1/2 cups chopped pecans
Directions:
Prepare cookie crust by blending cream cheese and butter. Stir in flour and work with your hands to form a ball of dough. Wrap tightly with plastic wrap and refrigerate for several hours or overnight.
When ready to bake, preheat oven to 325 degrees F.
Divide dough into 48 balls and place into mini muffin pans. Press balls in with Mini Tart Shaper (the most genius baking invention ever!) to form shell for filling.
Combine brown sugar, eggs, vanilla and chopped nuts. Scoop into mini tarts filling 1/2 to 3/4 full.
Bake 12-18 minutes – depending on your oven – until lightly browned.
Cool and gently remove from pans.
Enjoy!

Okay if I could only one cookie, I would some would say cheat, BUT technically it would only be ONE COOKIE. I would have half a Peanut Butter Cup Cookie, and half a Carrot Cake Thumbprint cookie. Ta dah! One cookie, and only 10 calories…right? 🙂

My choice would be the pecan tassies because they look like miniature pecan pies and I love pecan pies!! They look absolutely delicious!! YUM!!

I can honestly say, I have never been to a wedding with cookies. But, I have been to a wedding on my birthday and my friends sang happy birthday to me as we ate the wedding cake..lol great times!

Hands down – THIS ONE!!! I am not a huge sweet eater but my grandma’s Texas Pecan Pie is mandatory every Thanksgiving. And was always my requested “birthday cake” growing up, when it wasn’t German Chocolate Cake. Do you see the pecan relation? My favorite nut! 🙂

Oh, they all look so good!! 😃 I’d put one of each on my hubby’s plate and take a nibble off of each one! ❤ I’m not a big sweet fan but still love a snickerdoodle every now and then! 😄🍪👍

My Mom made these often for “teas” and ladies’ club meetings, Jodi. 🙂 Such yummy cream cheese crust and inside, pecan pie part.

Well, must say delicious! First hand. Went to thrift store, purchased 2 little tart pans hold 12 ea bargain price 75¢ ea. So simple a recipe too, is it your family recipe? Labor intensive took me several hours making the trays and baking yesterday. Your Son’s wedding should be wonderful. All those lovely delights I hope you’ll take photos of the cookie table before they are all gone. I can’t wait to try the other recipes, but I’m saving one special for tommorrow. So I’ll be there in someway sharing in your happiness with a little piece of pecan tassie thru smell & tastes and my best wishes to your son and all your family.

Oh some how magically I already owned the wooden fluted dowel thing. Think I bought it thinking it was for something else. Definitely worked like a dream made cute ruffles and no suction created when removing.
