Avocado Toast.
My latest obsession.
Skip the butter.
Skip the jam.
A perfectly ripe,
creamy avocado half
spread on toast.
Topped with a spoonful
of fresh pico de gallo
with a slight kick
and a dash of salt.
O M Geee!
When only using a half of an avocado, I’ve found a way to keep the other half fresh until the next day. Leave the pit in and cover tightly with plastic wrap to keep out any bit of air that could touch it and turn it brown, then refrigerate. I don’t refrigerate avocado before they are cut, but if you only eat half, I think it best to refrigerate the cut one.
Leaving the pit in is key too. A friend whose son works in a restaurant that makes fresh guacamole shared this life-changing tip with me recently. When making fresh guacamole, throw one of the pits in. It keeps the guac from turning brown. It really works!

That looks delicious! I LOVE avocados! I usually just peel them and then eat the whole thing (minus the pit of course). I will have to try it on toast sometime.

Jodi, I think you are a bit late to this party!! Even I have been loving avocado toast for the last two years (just plain) and I’m always slow to embrace changing food trends!! Glad you found it, aren’t you? The avocado pit tip is amazing too, my youngest shared that with me. Avocados are so versatile, yummy and good for you! My pico de gallo is onionless, just a little touch of onion powder for flavor! Never tried it on avocado toast, but must do so. Thank-you for another delicious post!

I like mine on sourdough with an egg easy over topped with a little salt and pepper. I can eat it for breakfast, a snack, or dinner and be a happy camper.

I’ve been eating avocado sandwiches since I was a girl on sourdough with a little salt & pepper. As an adult I’ll occasionally add a slice of tomato to it, but really I like them sort of plain. It’s all about the avocado. 🙂

This sounds really good. I like that the avocado is not only a fruit/vegetable but that it has a great deal of protein. I don’t eat a great deal of toast or carbs that aren’t fruit/vegetables; however sometimes for a snack 2 piece of multigrain toast is wonderful and the avocado sounds good to try. My fav is very usual a bit of becel and raspberry jelly.

Sounds good! ❤️ I like to store my cut avocado with the pit and a squeeze of lemon juice in a zip lock bag in the fridge. We eat a lot of avocados but mainly on salads or sandwiches. I like to add prepared pico to it for a quick dip too! 🥑👍

Yum. I was leaving the pit in the half avocado but not making the plastic wrap tight enough. I love avocados. Got some on my roast beef sandwich today and it was good.

Avocado is good with anything.
I usually squeeze lime juice over cut avocado to keep it fresh, but I’ll have to try using the pit. (K)
