Breakfast Sandwich Egg tomato avacado

I didn’t used to be a big fan of breakfast, but I am beginning to enjoy it more and more.

One of my favorite new hot, healthy, protein and vitamin-rich go-to’s is this yummy breakfast sandwich.

A protein-rich fried egg topped with fresh and juicy, red-ripe Campari tomatoes and slices of nutrient-dense avocado sandwiched between a whole wheat English muffin is just the way to start my day.

When I don’t have ripe avocados, I love to use a slice of smoked gouda cheese or some crispy bacon.  Not nearly as healthy, but oh so yummy!

I’m already looking forward to my next breakfast!  How about you?

Healthy Egg and Avocado Breakfast Sandwich

Ingredients:Breakfast Sandwich Egg tomato avacado

While English muffin is toasting, fry egg to your liking – sunny side up, over easy, over hard (my personal preference).  Add salt and pepper to taste.  Place egg on lightly buttered toasted English muffin, top with slices of tomato and avocado.  Smoosh together, cut in half, and ENJOY!

Remember what we were always told as children….
Breakfast is the most important meal of the day, so here’s to breakfast!

  10. I had just finished breakfast but you make me want to eat breakfast again! Happily, our hens have begun to lay again so we might have an egg sandwich this weekend. Unfortunately, we’ll have to wait until summer to have a slice of tomato with the sandwich…we never buy tomatoes, especially out of season. 🙂

      2. Oh – a good Heirloom (I love the pineapple yellow ones) truly are the BEST! I hope you will try these Campari, though, as they come as close as you can even this time of year. It is amazing how sweet they are. And I’m sure you know, but do not ever refrigerate. Totally kills the flavor.

  11. I love breakfast anytime, and eat an egg a few times a week usually with toasted crust. I like the crust and save the inside for croutons, or bread crumbs. I love avocados and just got a bunch yesterday, but they’re not ripe enough yet or I’d be making this right now!

  16. I love avocados! This looks yummy, Jodi! I struggle with breakfasts so will definitely give this a try. It reminds me of the B-fast sandwich at Starbucks that I love with the bacon and Gouda cheese – but this is a MUCH healthier version. 😍👍💕

    1. Oh how wonderful! Be sure it is fully ripe before you use it or you may be disappointed. It needs to be soft to the touch. If you eat it too green and hard, it will not taste good, and too ripe it will get brown. They are a bit tempermental to get “just right, but when you do, they are heavenly! They should be firm enough to slice without smooshing, yet you could spread like butter if you had to. 🙂 They are buttery and delicious when ripe. Good luck Suzy!
