Roasted Turkey, Bacon, & Avocado Sammie.

Warmer weather means lighter meals and sometimes even sandwiches for dinner.

Here is a yummy fave I made this past Sunday.

Often times on Sundays, we have a bigger, late breakfast, skip lunch, and have an early dinner.

After enjoying hearty breakfast omelets hubby made with our leftover prime rib from dinner out the night before, we made a light sandwich supper.

On a sweet onion bun thickly slathered with mayonnaise, we sliced some roasted turkey, topped it with crispy, smokey bacon, creamy avocado slices, juicy ripe tomatoes and peppery arugula and spinach.  It was yum on a bun.

Crockpot Honey Garlic Chicken

It is such a great time of year to slow cook meals in the crockpot.  And if you love the sweet and spicy flair of many Asian chicken dishes, you are going to love this fast and easy way to make a real crowd pleaser.

It seriously goes together in under 10 minutes, makes your house smell wonderful all day, and creates a dinner that tastes like you slaved.

Serve it with your favorite rice or noodle.  My son even liked it shredded up on a bun as a sandwich as it is so tender and juicy and falls apart that easy.  Serve with a salad, and you know it – you have another….

Winner Winner Chicken Dinner!

I made this for the last dinner before my son moved out this weekend and sent the leftovers with him.  He can enjoy it again in his new home.

Here is the recipe the way I made it.  Feel free to adjust hot sauces and seasonings to your taste.

Crockpot Honey Garlic Chicken

  • 2 lbs. Boneless Chicken Breast and Thighs (combo or one or the other if you prefer)
  • 3/4 cup ketchup
  • 3/4 cup low sodium soy sauce
  • 1/2 cup honey
  • 1 Tbsp dried oregano
  • 2 Tbsp dried parsley
  • 1 Tbsp Sriracha hot sauce
  • 1 Tbsp Cholula hot sauce
  • 4-5 cloves fresh minced garlic
  • 1 tsp black pepper
  • 1 tsp smokey paprika chipotle (optional)

Directions:

  • Place chicken pieces in bottom of crockpot.
  • Combine remaining ingredients and pour over top of chicken.
  • Cook on low 4-5 hours.  Sprinkle with 1 Tbsp sesame seeds.
  • Serve over rice (I love brown rice and quinoa combo) and sprinkle with additional sesame seeds if desire.

I love avocados!  When they are at their peak of ripeness, there is nothing more amazing with just a sprinkle of salt.

Avocado is great smeared on whole grain toast for breakfast and topped with a fried egg.  It is wonderful for lunch cut up into a fresh green salad.  It makes an amazing dip for tortilla chips.  And it is a fabulous addition to a juicy, grilled burger for a great summertime supper sandwich!

Yesterday, I made a batch of fresh guacamole from some avocados I had that were right at their peak of ripeness and decided to use it as a topping to some fresh grilled burgers for a hot summer Sunday supper.  We enjoyed the burgers with some fresh sweet corn on the cob and a tossed green salad.  It was the perfect meal to end a warm, relaxing weekend.

If the green color makes you nervous, let me tell you I have never had anyone try my guacamole that didn’t end up loving it – even the skeptics.  Hope you’ll give it a try.  Not only is it yummy, it is quite healthy!  Avocados have more potassium than bananas, are loaded with heart-healthy monounsaturated fatty acids, and are packed with fiber.  Adding garlic, onions, tomatoes, cilantro, and lime juice, make it even better!

Guacamole Burgers

Ingredients:Avocado Burger

Directions:

Prepare guacamole and set aside (covered tightly with plastic wrap to avoid air that will brown the avocados).

Mix ground beef and onion soup mix until well combined.  Form mixture into 6 large hamburger patties.  Grill burgers to medium-well (or your desired doneness).   Top with a slice of white American cheese, and allow to melt.

To assemble, place burger on bun, top with guacamole and sliced tomato.

If you are looking for a fresh, bright, colorful, crunchy salad, I hope you will give my favorite version of cabbage slaw or cole slaw a try.

I so prefer a bright, light vinaigrette on my cole slaw to the heavier mayonnaise-based version.  How about you?

This salad goes well with so many Spring and Summertime meals (and if you live in or near Pittsburgh like me – you can even use it as as an addition to your actual cheese steak or burger like our famous Primanti’s Brothers does!)

I made this last night as our salad with a kielbasa potato skillet hash and steamed broccoli, and we all had seconds!

Here’s my recipe if you’d like to give it a try.

Fresh Poppy Seed Vinaigrette Cole Slaw

Ingredients:Fresh Poppyseed Viniagrette Cole Slaw 2

  • 4 Tbsp. red wine vinegar
  • 4 Tbsp. canola oil
  • 3 Tbsp. white sugar
  • 1/2 tsp. dry mustard
  • 1 tsp. poppy seeds
  • 1 tsp. coarsely ground black pepper
  • 1/2  tsp. salt
  • 1/2 tsp. hot pepper sauce
  • 1/2 large head or 1 small head (approx. 4 cups) shredded green cabbage
  • 2 carrots, shredded
  • 2 stalks of celery,  minced
  • 2 green onions, sliced thinly
  • 1/2 cup diced sweet red, yellow, or orange peppers

Whisk vinegar,  oil, sugar, dry mustard, poppy seeds, black pepper, salt, and hot pepper sauce in a bowl, stirring until sugar has dissolved.

Mix cabbage and vegetables in a large salad bowl and pour dressing over slaw. Stir to coat. Refrigerate at least 2 hours before serving.

This past Sunday, my son Nick took over the kitchen for dinner and made us his amazing Chopped Chicken & Veggie Wraps.

Nick likes anything chicken and anything that can be wrapped up in a tortilla and eaten by hand.

This recipe requires a bit of chopping ahead of time, but throws together quick and easy and tastes so delish!

Starting with marinated grilled skinless, boneless chicken breasts and adding your favorite veggies makes for a healthy, quick, and oh so yummy dinner or lunch or anything in between!

The secret is in the double chopping.  Once you pile all the chopped ingredients together, you chop again.

And the thing that really kicks this wrap up for me is the Peach Mango Salsa!  OOOOO LAA LAA!

Throw in anything you like, but here is how Nick made these for us.

Nick's Chopped Chicken & Veggie Wraps

Ingredients:Nicks Chopped Chicken and Veggie Wraps 3

  • I lbs boneless skinless chicken breasts and/or thighs
  • 1/2 bottle Wishbone Italian Dressing (or your favorite marinade)
  • 1/2 lb bacon, crisped and chopped (option – but oh so yummy!)
  • Lettuce, chopped
  • 1 tomato, chopped
  • 1/2 seedless English cucumber
  • 1/2 chopped sweet red pepper
  • 4 green onions, chopped
  • 1/4 cup chopped hamburger dill pickles
  • 1/4 cup chopped pickled jalapeno slices
  • 1/4 cup chopped marinated artichoke hearts (or banana peppers)
  • 1/4 cup shredded cheddar cheese (or your favorite)
  • 1/3 cup Herr’s Peach Mango Salsa
  • 4-6 Large Burrito-Sized Flour Tortillas

Directions:

Marinade chicken in Italian salad dressing for approximately 24 hours in Ziploc bag in refrigerator.  When ready to eat, grill chicken and chop.  Chop all veggies and ingredients you plan to use.

To assemble, heat flour tortilla in microwave for 20 seconds to make more pliable for wrapping and prevent cracking.  Heat George Foreman Grill or Grill Pan.

Place all ingredients together for each wrap, top with a heaping spoon of salsa, and re-chop all together.  Mound in center of warmed tortilla and wrap tightly.

Place on grill to heat, crisp, and seal.

Another winner of a chicken dinner recipe to share today.

Anyone who knows me or has followed here for very long knows I love chicken.  It is so versatile, and I love finding ways to throw it in the crockpot in the morning, forget about it all day, and have a yummy dinner.

This one is so easy and very versatile too.   We made it into sandwiches, but it would be really delish served over noodles or rice too.  You could throw it in a tortilla wrap or even make a quesadilla with it.

Make a big batch and serve it several ways or freeze some for a “rainy” or busy day.

Shredded Bacon Ranch Chicken Sandwich 2

Shredded Bacon Ranch Crockpot Chicken

Ingredients:

  • 3 lb bag frozen chicken breasts
  • 2 blocks of cream cheese (I used 1/3 Less Fat Neufchatel cheese)
  • 1 envelope of Hidden Valley Ranch Powdered Dressing Mix
  • 1 lb bacon

Directions:

Place frozen chicken breasts in crockpot.  Place cheese and ranch dressing mix on top.

Cut bacon into small pieces and partially cook in skillet to render off most of the fat.  Drain fat and pat bacon bits dry.  Add to crockpot.  Turn on High and let cook for 6-8 hours.  Shred chicken with a fork and stir into sauce.  Let cook for a bit longer for chicken to soak in sauce and blend.

Serve as a sandwich on your favorite roll and top with dill pickle slices or banana pepper rings, or serve over noodles or rice, wrap in a tortilla or create a quesadilla.

Healthy Egg & Avocado Breakfast Sandwich

I didn’t used to be a big fan of breakfast, but I am beginning to enjoy it more and more.

One of my favorite new hot, healthy, protein and vitamin-rich go-to’s is this yummy breakfast sandwich.

A protein-rich fried egg topped with fresh and juicy, red-ripe Campari tomatoes and slices of nutrient-dense avocado sandwiched between a whole wheat English muffin is just the way to start my day.

When I don’t have ripe avocados, I love to use a slice of smoked gouda cheese or some crispy bacon.  Not nearly as healthy, but oh so yummy!

I’m already looking forward to my next breakfast!  How about you?

Healthy Egg and Avocado Breakfast Sandwich

Ingredients:Breakfast Sandwich Egg tomato avacado

  • I large egg
  • 1 Campari tomato
  • 1/2 avocado
  • 1 whole wheat English muffin
  • butter, salt & pepper to taste

While English muffin is toasting, fry egg to your liking – sunny side up, over easy, over hard (my personal preference).  Add salt and pepper to taste.  Place egg on lightly buttered toasted English muffin, top with slices of tomato and avocado.  Smoosh together, cut in half, and ENJOY!

Are you ready for a party in your mouth?

Looking for a versatile recipe that can be a main course, a sandwich, serve a crowd, be made into a great nacho platter?

Look no further!

I present:

Spicy Dr. Pepper Pulled Pork

ENJOY!  (We sure did)

Spicy Dr. Pepper Pulled Pork

Ingredients:Spicy Dr Pepper Pulled Pork

  • 5 lb boneless pork loin (or your favorite pork roast)
  • 1 large onion, chopped
  • Half of a 16-oz. jar sliced banana peppers rings with juice
  • 1 10-oz. can Rotel Diced Tomatoes with Green Chilis
  • 2 12-oz cans Dr. Pepper soda
  • 2 Tbsp. brown sugar

Place all in crockpot and cook on High for 6 hours.  Remove pork and shred with fork.  Place back in juices and let set at least a half hour.  Even better the next day when the juices and meat all mix and mingle even more!

Serve on Hard Rolls, over mashed or fried potatoes, with rice, in a tortilla wrap with your favorite fillings or over tortilla chips with queso and shredded cheese and pickled jalapenos for the most amazing Pulled Pork Nachos!

Wouldn’t you be the hit of the party serving these nachos for the Super Bowl or a Playoff party this weekend?
