Midnight Snack Attack Cookies

Midnight Snack Attack Cookies

Midnight Snack Attack Cookies.

Oh No She Didn’t!!

Oh Yes I did!!!

I made a cookie for those midnight cravings when you can’t decide if you want sweet or salty….. chips or peanuts….. a chocolate bar or a cookie……..

Yep…   I put it all together in one glorious cookie I’m calling the Midnight Snack Attack Cookie!

Midnight Snack Attack Cookies

I simply started with my go-to cookie dough recipe for chocolate chips, but reduced the flour a smidge to make these cookies a little crispier.  I then added some seasoned dry roasted peanuts and salty, crunchy potato chips with the semi-sweet chocolate chips.

The combination is HEAVENLY.

Use any kind of nuts you like.  How divine would these be with cashews or salty pecans??!!  I also think I would like to try them next time with barbecue potato chips.  I think it would really kick these up a notch!  Replace the chocolate chips with chopped Reese’s peanut butter cups or Butterfinger candy bars.

Go Crazy!  It IS a midnight snack attack fix after all…

Midnight Snack Attack Cookies

I received a gift basket of gourmet cookies for Christmas that had some fun combinations of cookies in them that inspired me to try these.  Can’t wait to hear what you think!

Here is my recipe.

Midnight Snack Attack Cookies

Ingredients:

4 sticks (1 lb.) butter, softened
1 1/2 cups packed brown sugar
1 1/2 cups white granulated sugar
2 tsp vanilla
4 eggs
2 tsp baking soda
2 tsp salt
4 3/4 cups all purpose flour
2 cups Nestle Semi Sweet Chocolate Chips
1 cup Planters Dry Roasted Peanuts
2 cups lightly crushed potato chips

Directions:

With electric mixer, beat butter and sugar together until completely incorporated. Add vanilla and eggs, and beat until light and fluffy. Add baking soda and salt, and mix another minute. Gradually add flour and beat until well incorporated, but do not overbeat.

Fold in chocolate chips and peanuts.  Place dough onto counter and gently add in potato chips, folding in with your hands and trying not to crush the potato chips too much.  Put dough in large Ziploc bag, and refrigerate for at least 2 hours or up to 2 days.

When ready to bake, preheat oven to 375 degrees F. With your hands, form a cookie dough ball about 1 inches in diameter.  Place on baking stone. Bake for approximately 11 minutes. Allow to cool on baking stone for 10 minutes, then remove to cooling rack to cool completely.

ENJOY!

Cheers & Hugs,
Jodi

S’More Cookie Bars

S’More Cookie Bars.

What S’more fun than S’mores?!

And what s’more perfect with hot cocoa or coffee than s’mores.

And what s’more delicious than campfire s’mores?

S’more cookie bars any time of year!

I love these adorable little cookie treats I learned from my daughter-in-law, Colleen, who first served them at a holiday cookie exchange she hosted a couple years ago.

They are simple.   They are fun. They are beautiful.  And best of all, they are SCRUMPTIOUS!

The teeny tiny miniature dehydrated marshmallows totally make them!  I purchased them locally at Make a Cake, a local, charming little cake and candy decorating shop, but they are also available online if you can’t find them near you.

Here is how to make them.

S'more Cookie Bars

Ingredients:

Directions:

After breaking all graham crackers and chocolate bars into rectangles, place one chocolate rectangle between two graham cracker rectangles forming a sandwich.

Melt Merckens milk chocolate one pound at a time in microwave.  Heat for 1 minute on high.  Stir well.  Heat 20-30 more seconds.  Stir well until smooth.

Dip each graham cracker and chocolate bar sandwich into chocolate – coating 1/2 – 2/3 of cookie.   Let excess drip, and place on sheet of wax paper to cool and harden.  Dip 4-6, place on wax paper, and sprinkle with marshmallows.  Working in groups allows the marshmallows to stick to the melted chocolate before it cools to harden.  Continue until all are coated and sprinkled with marshmallows.  Allow to cool and harden.

They are ready within 20-30 minutes to enjoy or store in an airtight container.

Enjoy!

Cheers & Hugs,
Jodi

P.S.  If you are local, I made these to share at the Berry Vine Gifts Christmas in the Woods Open House, which starts today, Friday, November 17th (10-6).  It also runs through the weekend, Saturday, November 18th (10-6) and Sunday, November 19th (12-4).  Come munch on one with a cup of cocoa while you browse the beautiful holiday handmade crafts, antique furniture, and gifts in this one-of-a-kind shoppe (including my art and Colleen’s rustic pallet signs!)

Hershey’s Kiss Brownie Bites

Hershey’s Kiss Brownie Bites
might just be the ultimate  little treat
for the inner chocoholic in
all of us (well – 99.999999% of us… Hard as it is to believe – there is an itsy bitsy, teeny tiny  population of people on this earth who do not like chocolate!)

But for the rest of us….
Imagine a bite-sized scoop of Ghiradelli Double Chocolate Brownie mix
baked to perfection of fudgy center with slightly hardened and cracked outside
in a mini muffin baking pan (be sure to line) and topped off with a smooth, creamy milk chocolate Hershey’s Kiss.

Not only are they sheer decadent delight, they are about as easy to make as desserts come.

I have started baking for my son’s wedding next month.  We have a unique tradition in our little part of the world that requires an overflowing cookie table at weddings.  The cookies are eaten for appetizers, dessert (along with wedding cake), and supplied to take home in to-go boxes.  I’m happily in charge of the cookie table for the wedding, so a baking I will go.

I started with these little brownie bites and will be stocking the freezer with chocolate chips and apricot kolaches and lots more in the coming weeks!

Wedding cookie table or not, you are going to want to try these.  Your friends and family will thank you, and you won’t be sorry!

Hershey's Kiss Brownie Bites

Ingredients:

Directions:

Preheat oven to 325 degrees F.

Line mini-muffin baking pan with foil mini-muffin liners.

Prepare brownie mix according to package directions by combining mix, water, oil, and egg.  Scoop batter into foil liners to 3/4 full.

Bake for approximately 12 minutes.  While brownie bites are baking, unwrap Hershey’s kisses.  Remove from oven and immediately insert a Hershey’s kiss into the center of each brownie bite.  Press gently.  Allow to cool.  The kisses take a while to set, so be careful.

Enjoy!

Cheers & Chocolate Kisses,
Jodi

Chewy Pumpkin Cinnamon Chip Cookies

Is there anything better this time of year than pumpkiny, cinnamony treats fresh from the oven?!!

chewy-pumpkin-cinnamon-chip-cookies

I’ve discovered a way to make a FABULOUS Pumpkin Cinnamon Chip Cookie that is like no other pumpkin cookie you’ve ever had!  These are crispy on the outside, chewy and gooey on the inside, and they are seriously BURSTING with cinnamon!

chewy-pumpkin-cinnamon-chip-cookies-2

Most pumpkin cookies are “cake-like,” which is fine, but when you want a “cookie” to sink your teeth into, you have got to try these!

I had some pumpkin and was trying to decide what to make.  I perused some recipes on Pinterest and came across a recipe that reminded me of my standby cookie recipe I use to make chocolate chips and blueberry white chocolate chips and so many other of my family and friends’ favorites.  I decided to tweak it up a bit and found if I use my standard recipe, but substitute pumpkin for the eggs, change the ratio of sugars to a bit more brown, up the vanilla a tinch, and add a zip of cinnamon, I get these amazing Chewy Pumpkin Cinnamon Chip Cookies.

Make some to share with your family and friends.  They are sure to bring smiles. They would make a great addition to a Thanksgiving cookie tray or even a new one to add to your holiday cookie faves.  Go stock up on you Hershey’s Cinnamon Chips and get baking!

  • Print

Ingredients:chewy-pumpkin-cinnamon-chip-cookies-2

  • 1 lb. (4 sticks) butter, room temperature
  • 2 cups brown sugar, packed
  • 1 cup white sugar
  • 4 tsp vanilla
  • 1 cup pumpkin puree
  • 2 tsp baking soda
  • 1 tsp salt
  • 3 tsp cinnamon
  • 5 cups all purpose flour
  • 5 cups cinnamon chips (I use Hershey’s)

Directions:

Preheat oven to 375 degrees F.

Cream butter in electric stand mixer about 2 minutes.  Add sugars and continue beating.  Add vanilla and continue beating.  Add pumpkin and slowly mix in to incorporate.  Next add the baking soda, salt, and cinnamon.  Gradually mix in the flour on very low speed and just until all is incorporated.  Stir in cinnamon chips with rubber spatula or wooden spoon.

Scoop dough with 1/4 measuring cup and roll into a golf ball sized ball.  Place two inches apart on baking stone or prepared cookie sheet.  Bake approximately 15 minutes until golden brown on the outside with crisp edges.  Allow to cool on baking stone/cookie sheet for 15 minutes before removing to cooling rack.

Enjoy!

Rolo Hot Chocolate

Rolo Hot Chocolate

I may have discovered the most amazing, best ever homemade hot chocolate in the entire universe.

And it is EASY!

Rolo hot chocolate

I discovered it on The Country Chic Cottage, but (believe it or not) found I could reduce the sugar content a bit over what Angie recommended in her blog.

This is the perfect warmer-upper comfort drink to enjoy by a crackling fire with your holiday lights on reading a book or watching a holiday movie.

I am sure the little ones that live in or come to your home would love this as a special treat too!

Here it is!  ENJOY!

  • Unwrap Rolo Candies and put in your mug.
  • Microwave for 20 seconds, then stir.
  • Add Skim Milk and stir.
  • Microwave for an additional 1 1/2 minutes.
