Oh Yes I did!!!

I made a cookie for those midnight cravings when you can’t decide if you want sweet or salty….. chips or peanuts….. a chocolate bar or a cookie……..

Yep…   I put it all together in one glorious cookie I’m calling the Midnight Snack Attack Cookie!

I simply started with my go-to cookie dough recipe for chocolate chips, but reduced the flour a smidge to make these cookies a little crispier.  I then added some seasoned dry roasted peanuts and salty, crunchy potato chips with the semi-sweet chocolate chips.

The combination is HEAVENLY.

Use any kind of nuts you like.  How divine would these be with cashews or salty pecans??!!  I also think I would like to try them next time with barbecue potato chips.  I think it would really kick these up a notch!  Replace the chocolate chips with chopped Reese’s peanut butter cups or Butterfinger candy bars.

Go Crazy!  It IS a midnight snack attack fix after all…

Midnight Snack Attack Cookies

I received a gift basket of gourmet cookies for Christmas that had some fun combinations of cookies in them that inspired me to try these.  Can’t wait to hear what you think!

Here is my recipe.

Midnight Snack Attack Cookies

Ingredients:

4 sticks (1 lb.) butter, softened
1 1/2 cups packed brown sugar
1 1/2 cups white granulated sugar
2 tsp vanilla
4 eggs
2 tsp baking soda
2 tsp salt
4 3/4 cups all purpose flour
2 cups Nestle Semi Sweet Chocolate Chips
1 cup Planters Dry Roasted Peanuts
2 cups lightly crushed potato chips

Directions:

With electric mixer, beat butter and sugar together until completely incorporated. Add vanilla and eggs, and beat until light and fluffy. Add baking soda and salt, and mix another minute. Gradually add flour and beat until well incorporated, but do not overbeat.

Fold in chocolate chips and peanuts.  Place dough onto counter and gently add in potato chips, folding in with your hands and trying not to crush the potato chips too much.  Put dough in large Ziploc bag, and refrigerate for at least 2 hours or up to 2 days.

When ready to bake, preheat oven to 375 degrees F. With your hands, form a cookie dough ball about 1 inches in diameter.  Place on baking stone. Bake for approximately 11 minutes. Allow to cool on baking stone for 10 minutes, then remove to cooling rack to cool completely.

Not quite sure what you call it….
but it is a scrumptious little treat!

Does anyone remember these little gems from their childhood?

A simple mixture of crunchy chow mein noodles, butterscotch chips, peanut butter, and dry roasted peanuts make a treat that looks like a tiny little haystack and is just the right mixture of sweet and salty, crunchy and creamy.

I made these for a “Wizard of Oz” party, thinking they were just the thing to do with the leftover “straw” that fell out of Scarecrow.

There are a variety of ways people have made them through the generations…

With our without the peanuts… with or without the peanut butter.
Some add a bit of vegetable oil.
Some add a a mixture of chocolate and butterscotch chips.

And if you haven’t tried them, they are definitely worth a try!  Super easy and super yummy!

  • Servings: approx. 3 dozen

Ingredients:

Directions:

Melt butterscotch chips in a large microwavable bowl in microwave on high for 1 minute.  Stir.  Microwave an additional 30 seconds.  Stir again.  Add peanut butter.  Microwave 30 more seconds, and stir well.  At this point, mine is completely melted.  Add 30 second increments if necessary according to your microwave’s power until all is melted and smooth.  (If necessary, you can add a teaspoon of vegetable oil to create a smoother texture, but do not overcook or it will create a thick, gunky texture that will not work.)

Add bag of chow mein noodles and peanuts and stir gently until all noodles and peanuts are coated and ingredients are well combined.

Working relatively quickly before mixture cools, drop by tablespoonfuls onto wax paper or parchment paper.  Allow to set for several hours.  Store in an airtight container at room temperature or serve.

I created and started baking this super yummy cookie years ago by taking my old reliable base cookie recipe and adding dried blueberries and white chocolate chips.

It has become a favorite of hubby’s and some of my other cookie-lovin’ friends.  I was surprised to realize I had not posted this recipe here yet, so I’m excited to share it with you.

If you are looking for a unique and delightful treat, you really should try this cookie.  I have been hard-pressed to find someone who doesn’t like these!

Dried blueberries can be a bit pricey, but Trader Joe’s is a great source of delicious and reasonable ones.  And they are sooooo worth it once you’ve taken a bite of this cookie!

Ingredients:Blueberry White Chocolate Chip Cookies

1 12-oz bag Nestle Premier White Chocolate Chips (or your favorite)
1 8-oz bag Trader Joe’s dried blueberries (or your favorite brand)

With electric mixer, beat butter and sugar together until completely incorporated. Add vanilla and eggs, and beat until light and fluffy. Add baking soda and salt, and mix another minute. Gradually add flour and beat until well incorporated, but do not overbeat.

Fold in white chocolate chips and blueberries. Refrigerate dough for at least 2 hours or up to 2 days.

When ready to bake, preheat oven to 375 degrees F. With your hands, form a cookie dough ball about 1-1/2 inches in diameter.  Place on baking stone. Bake for 8-10 minutes. Do not overbake. Allow to cool on baking stone for 2-3 minutes, then remove to cooling rack to cool completely.

Milk Chocolate Toffee Chip Cookies

Ingredients:

1 11.5 oz bag Nestle Milk Chocolate Chips
2 8-oz bags Hershey’s Heath English Toffee Bits’O Brickle Toffee Bits

Directions:

With electric mixer, beat butter and sugar together until completely incorporated. Add vanilla and eggs, and beat until light and fluffy. Add baking soda and salt, and mix another minute. Gradually add flour and beat until well incorporated, but do not overbeat.

Fold in Milk Chocolate Chip morsels and Toffee Bits. Refrigerate dough for at least 4 hours or up to 2 days.

When ready to bake, preheat oven to 375 degrees F. With your hands, form a cookie dough ball about 1-1/2 inches in diameter.  Place on baking stone. Bake for 8-10 minutes. Do not overbake. Allow to cool on baking stone for 2-3 minutes, then remove to cooling rack to cool completely.
