Thin Mint Chocolate Cupcakes

Imagine fresh baked chocolate cupcakes topped with icing that is “spiked” with Girl Scout Thin Mint Cookies (and then topped with one more to grow on!)

Yep – that’s what I baked yesterday…  in between a trip to the gym, putting out the patio furniture, a walk with Mikey, and caring for the toughest guy I’ve ever known (dear hubby) who is recovering from some shoulder repair surgery he had this past week like nobody I’ve ever seen!  (That’s my Marty!)

You may remember I recently made some Girl Scout Cookie Thin Mint Cookies (my youngest son, Nick’s favorite ever); so when I had the urge to bake some cupcakes and was considering what to make, I knew I had to try these when I came across this recipe by  Lizzy @ YourCupofCake.  Lizzy’s recipe called for using a boxed Devil’s Food Cake Mix, but I didn’t have that, so I made mine from scratch.

I also baked mine a minute or two too long (darnit!).  I’m more of a cookie and pie baker than cake/cupcake, but I’m working on it.  And truthfully, I’m not sure you can beat a Duncan Hines Cake Mix, so don’t hesitate to use your favorite chocolate boxed cake mix or cake recipe for this.  The real KEY to this cupcake recipe is all in the icing!

So bake your favorite chocolate cupcakes, and then frost with this yumminess from YourCupofCake.

Thin Mint Chocolate Cupcakes

  • Servings: 14 cupcakes
  • Print
Ingredients:
14 Chocolate Cupcakes – baked and cooledthin mint cupcake 2
Thin Mint Frosting:
1 cup softened butter
1/3 cup unsweetened cocoa powder
2 tsp. vanilla extract
1 tsp. peppermint extract
1/4 cup milk
10 Thin Mint cookies, finely crushed & sifted
2 1/2 cups powdered sugar
Directions:
Beat butter with electric mixer for 2 minutes. Add cocoa powder, vanilla and peppermint extract and milk.  Beat again. Add crushed cookies and powdered sugar, and beat until smooth. Pipe onto cooled cupcakes.  Top with sprinkles and and an extra cookie if desired.

Fresh tulips and hyacinths

Since yesterday was the first day of Spring, and the SNOW came back to Mars (thankfully only briefly), I bought some fresh flowers to bring Spring indoors!

Nothing says Spring to me like the smell of tulips and hyacinths.

This week’s WordPress Weekly Photo Challenge is “Fresh,” so the fresh flowers that are the centerpiece on my kitchen table are my submission this week.  I thought this was a fun angle with a different perspective.

I was driving through a local park recently and practically slammed on my car brakes when I spied this old structure out of the corner of my eye.  I had my camera with me and had to stop and photograph it.

Roasted Caramelized Garlic Carrots

Are you often looking for new ways to prepare and serve veggies?  I’ve got another delicious, nutritious orange food for you today.  This time in the form of beautiful, fresh roasted, caramelized, garlicky carrots.  Nom Nom!  I find so many vegetables are best when roasted.  Flavor and nutrients are retained and the flavor is hard to beet.  (pun intended)

Lots of fresh garlic, thyme, parsley, olive oil, and balsamic vinegar sprinkled onto fresh young carrots creates a wonderful veggie to complement almost any meal.

We had ours with an herb marinated pork tenderloin and tiny roasted golden Yukon potatoes.

Here is the recipe as I made it.  I was inspired by another great recipe Chungah posted on Damn Delicious.  Measurements are guesstimates.  Make it how you enjoy.  That is the true JOY of cooking.

Roasted Caramelized Garlic Carrots

Ingredients:
15 fresh new carrots with stems trimmed, no need to peel
4 cloves garlic, coarsely minced
1 Tbsp dried thyme or 2 Tbsp fresh thyme
1 Tbsp dried parsley or 2 Tbsp fresh parsley
1 tsp. coarse sea salt
1 Tbsp. coarse ground black pepper
Approximately 1/4 cup olive oil
Approximately 1/4 cup balsamic vinegar

Directions:
Preheat oven to 375 degrees F.
Wash carrots and lay in a single layer on a baking stone or baking dish.
Drizzle with olive oil.
Liberally sprinkle with garlic, thyme, parsley, salt and pepper to your taste and liking.
Drizzle all with balsamic vinegar.
Toss to coat.
Roast for 30-40 minutes – turning once or twice during cooking.

I daresay even kids will enjoy these carrots that turn out so sweet and delicious.  I found them almost addicting!

Hey – remember a few days ago when I challenged you (I use that terminology loosely) with “If you are what you eat, then eat something cute?”

Well – this week’s WordPress Weekly Photo Challenge is ORANGE –  and guess what we call Clementines around here?

CUTIES!  (a brilliant marketing campaign established to target kids and their parents).  Are you familiar?

So you really can eat something cute!  And these little buggers are so sweet and delish right now!

I actually have some more orange to post, but I’m going to save it for tomorrow.

I made some luscious roasted carrots for dinner last night.   Look for the recipe tomorrow.  They are seriously like veggie candy – caramelized with olive oil, balsamic vinegar, garlic, cracked black pepper, thyme….  Ooooh La La!

And while we are talking about sunshine….  We were – weren’t we?

Oranges come from Florida, the Sunshine State, so yes – you see my logic – right?

I declared yesterday “50 Shades of SUNSHINE Day.”

Mikey and I got two wonderful walks in – one at lunch time and one after work – and no coat needed at 50 degrees and sunshine!  WOOHOO!

Spring is in the air!

There are so many things I could think of to post that represent “reward” in a photo, but I decided upon this one that brings so much joy to my heart and such a huge smile to my face – e v e r y single time I look at it!

As a baker, there is no greater reward than for someone to completely and thoroughly enjoy what you baked – right?

Have you ever seen greater enjoyment over eating a sweet treat than this little guy eating a chocolate Thanksgiving Turkey Oreo Cookie Ball I made this past Thanksgiving?

I snapped the photo from across the table trying to freeze the joyous moment in time.

This is REWARD to me!

Iridescent Ice Bubbles

I was talking with a friend yesterday who asked how I was doing.   You know… just the usual small talk.

She commented, “I’ll bet you wish you were back in Florida with your friend in the warmth.”

And yes – I do wish I was back there, especially with my dear friend.  And especially because our high temperatures have barely reached double digits for the past two weeks let alone get above freezing….

Yet, as I explained to my friend, if it weren’t for these bone-chilling temps, I’m not sure I would appreciate the warmth of Spring and Summer or trips to Florida as much….

I truly love the beauty of the four distinct seasons we are fortunate to experience in my part of the world –  life here in Mars.  It always amazes me that our yard can look so differently in the different seasons, and the snow and ice I tromp through in the Winter to get to the mailbox is the same yard I lay in and walk through in bare feet in the Summer and pile leaves on in Autumn and watch life burst through in Spring.

And though the temperature was a mere 9 degrees F yesterday, the sky was a deep azure blue and the sun was shining so brightly and reflecting on the snow that I needed sunglasses.

It was melting the icicles on the back of our house, and they were glistening and sparkling like bright diamond shards against the clear sky.  And the crystal droplets created a beautiful sheet of frozen iridescent ice bubbles on the deck beneath.

Through the lens of my camera, there is so much beauty to be found.

This week’s WordPress Daily Post Photo Challenge is to use the Rule of Thirds with a Bokeh Effect.

It’s been snowing non-stop here in Mars this weekend, but I took this photo a week ago when in Florida.  I always love the way flowers look after a rain shower.  I thought this photo was a good example of the challenge effect, and it also reminds me of warmer sunny days and wonderful memories with a dear friend.

Discovering Six Mile Cypress Slough Preserve

Weekly Photo Challenge – Symmetry

One of the highlights of my recent trip to Fort Myers, Florida last week was an afternoon spent wandering around the Six Mile Cypress Slough Preserve.

In 1976, a group of Lee County, Florida students studying the role of forested wetland in Florida’s ecology became alarmed at how fast these environmental treasures were disappearing to private interests.  The students, known simply as “the Monday Group,” envisioned a place where visitors could stroll amongst majestic cypress trees and catch the whisper of Florida’s primordial past.  They sought an oasis where guests could observe the vast array of plants and animals that can live in a place which is sometimes land, sometimes water, sometimes both.  In such pristine surroundings, they hoped that people could begin to learn how wetlands provide priceless, but often hidden benefits such as water purification and storage, natural flood control, and wildlife habitat.  Knowing the Six Mile Cypress Slough (pronounced slew) was under imminent threat from logging in the channeling away of its water, the Monday Group launched a daring campaign to save it for future generations.  Lee County, Florida voters responded overwhelmingly by increasing their own taxes to purchase and convert the Slough into a preserve.*

Along the beautiful 1.2 mile elevated and fully handicapped-accessible boardwalk, there are a number of observation decks that shoot off the beaten path with benches for sitting still, relaxing, reflecting, communing with nature, photographing and contemplating the thought-provoking quotes posted along the way.

I hope I captured even a snippet of the beauty and grandeur of this 3,400 acre, 11-mile long wetland to share with you here,  and it encourages you to visit if you are ever in the area.

This gator was enchanting to see swimming nearby…

…but this 12-footer across the lake was really something to see!

There were dozens of species of songbirds, wading birds, and birds of prey – including many which are threatened or endangered.  The Slough also serves as a resting spot for many migrating birds.

I watched this snowy egret successfully fish for lunch,

and turtles sunning and warming themselves.

There was no way to take it all in, and I am certain that one could walk it every day of the year and experience something new each time.

The Slough offers guided tours if you like.  I chose to take it at my own pace, meeting and chatting with others along the way, including an avid unofficial tour guide, who showed me tracks and rubbings and explained much of the plant and wildlife.

What a wonderful way to spend a Tuesday afternoon in February… with a great friend… in the warmth of sunny Florida away from the wintry, snowy weather of home… and enjoying nature – at Life in Between.
