My Favorite Old-Fashioned Raw Apple Cake

This Raw Apple Cake recipe I received from a neighbor friend, Denise, years ago, is one of my ABSOLUTE favorites, and I make it at least once or twice every Fall/Winter.

My favorite way to enjoy it is with coffee for breakfast/brunch, and I love it kept cold in the fridge, though refrigeration is not at all necessary – just my preference.

raw apple cake 1I made it for our Un-Thanksgiving celebration this year, where we served it with dollops of whipped cream.

If you try it, let me know what you think.  I have never had better!

Raw Apple Cake

Preheat oven to 325 degrees F

Mix together:
2 c. sugar
1 1/2 c. oil
2 tsp. vanilla
juice of 1 lemon
2 eggs, well beaten
1 tsp salt

Combine dry ingredients in another bowl:
3 c. all-purpose flour
1 tsp. cinnamon
1 1/4 tsp. baking soda

Add to batter.

Fold in:
2 c. chopped apples
1 c. golden raisins (optional)
1 1/4 c. chopped nuts (walnuts or pecans)

Pour into greased and floured bundt pan. Bake 1 1/2 hours.

While cake is baking, prepare topping.

Topping:
1 c. brown sugar
1 stick butter
1/4 c. milk
Cook in saucepan 2 1/2 minutes.

Cool cake 10-15 minutes, then gently loosen at outer edges and spoon topping all over and down edges until absorbed.

Let cool for several hours in pan while cake soaks in the topping.

Every single time I make a cake in a bundt pan, I can’t help but chuckle remembering this scene from “My Big Fat Greek Wedding.” “Is a bunnnnn ttt!” “Is a kick!

  1. Oh my gosh, Jodi, that is such a funny scene from a movie that left us howling! We went with an Italian friend who was rolling in the aisles it all seemed so familiar to her. Yes, I have to say this cake looks like something that Roger would cheerfully devour. Thanks!

      • Oh, that’s funny, Jodi, I am a huge cake fan but confess to being rather particular. I don’t like designer cakes with lots of frosting and decor. I like homey cakes exactly like this one or my mother’s sour cream Bundt cake with a cinnamon streusel filling. This apple cake is right up my alley too!

      • I have to agree Barbara. My favorite cakes are those that are rustic and homey too – like poppy seed cake that my grandma made for me every year for my birthday. Since my birthday is on New Year’s eve, it is a time when everyone is tired of sweets, so grandma always made a dense poppy seed cake that is more like a sweet bread that I just adored. Marty has tried to duplicate it through the years for my birthday – which is so sweet. You will love this cake. Get that Roger to fly you up here, and I’ll make it, and we will all enjoy! Hugs!

    And who doesn’t love a buuunt…love that movie. I have Greek neighbors and I would always see a bottle of windex on the patio table…so one day I said what’s with the windex is it a Greek thing…he looked at me like I was nuts!!! LOL I was referring to “My Big Fat Greek Wedding” and the Dad and his windex!!!!

  3. I’m drooling this looks so good.

    The Dr put me on a low food map diet…basically no gluten or dairy… for 4 weeks to see if it helps my stomach issues. What a time to do this..right before the holidays! But if it makes me feel better, I guess it’s worth it. Lost 5 lbs already, and that’s always a good thing!

    I still plan to bake for my family though, and also try some GF non Dairy baking too. I’m going to try the flourless brownies recipe first…anything with chocolate has to be good, doesn’t it?

      I’ve made this three times and it’s delish. People in the office flipped over it. The last time I made it I poured the topping and let it sit overnight and it didn’t pop out so easily due to the sugar getting hard??? I’m making this weekend and thought to take out after two hours so it doesn’t stick?

  5. Followed the recipe with no raisins. Cake only took 1hr to bake. Came out very crumbly, not really dry just very crumbly. Kinda weird. Don’t think I’d make it again.

  6. I followed this recipe exactly and ended up with a bowl full of crumbs. I’m not a novice baker, been doing it for 50yrs. What can I do to salvage my ingredients.
