Yep – that’s what I baked yesterday… in between a trip to the gym, putting out the patio furniture, a walk with Mikey, and caring for the toughest guy I’ve ever known (dear hubby) who is recovering from some shoulder repair surgery he had this past week like nobody I’ve ever seen! (That’s my Marty!)
You may remember I recently made some Girl Scout Cookie Thin Mint Cookies (my youngest son, Nick’s favorite ever); so when I had the urge to bake some cupcakes and was considering what to make, I knew I had to try these when I came across this recipe by Lizzy @ YourCupofCake. Lizzy’s recipe called for using a boxed Devil’s Food Cake Mix, but I didn’t have that, so I made mine from scratch.
I also baked mine a minute or two too long (darnit!). I’m more of a cookie and pie baker than cake/cupcake, but I’m working on it. And truthfully, I’m not sure you can beat a Duncan Hines Cake Mix, so don’t hesitate to use your favorite chocolate boxed cake mix or cake recipe for this. The real KEY to this cupcake recipe is all in the icing!

OMG Jodi… You’re food styling/photos are as good as any professional! Somebody seriously needs to “discover” you lady! If I get shoulder sugary, will you ship me a box of Thin Mint Chocolate Cupcakes? Hope Marty’s recovery is swift and PT is as painless as possible.

OH AGMA! Thanks for making my day! And if you have shoulder surgery, I sure will! I have to tell you, I enjoy the photographing of the baking almost as much (and sometimes more!) as I do the baking, and I seriously made cupcakes because I thought they would be fun and beautiful to photograph! Sometimes the yummiest food is not the most attractive to photograph, but then that is the challenge of a photographer – eh? Sometimes I get a hit and sometimes a miss, but I just keep trying – and having fun. Thanks for the wonderful encouragement, and thanks for the sweet recovery wishes for Marty. He is doing really, really well!

Your passion for both the baking and the styling/photography comes though loud and clear in a stunning fashion. I couldn’t quit staring at the d*mn cupcake! (Understand that I’m still trying to lose my 25 lbs.) But I know somewhat whereof I speak… I used to be part of the “foodie” scene here in Atlanta in a peripheral way, and worked with a lot of chefs and other food-fanatic types. I’ve seen a lot of food photography and your pictures rank waaayyy up there with the best of them. Seriously. And I’m not just saying that because I’m hungry… But I would like a cupcake. Like right now.

Wow – thank you! It is crazy how some photos can literally make your mouth water – especially when you are trying to diet! I am trying to lose 30 lbs, so I feel your pain! And… I only had a taste. The calories I have trouble giving up are of the squeezed grape varietal. 🙂
