Iced Orange Cookies.

Summer baking calls for bright, citrusy flavors; and ever since painting my lemons last week, I have had citrus on the brain!

I found a great old-fashioned cookie recipe for these cakey iced orange cookies from Taste of Home.   I had just bought a bag of clementines, so I knew they would work great for this.

I gave some to my Dad for Father’s Day and served some to our kiddos at our Father’s Day brunch for Hubby.

Be sure to use freshly squeezed orange juice and zest for the best flavor.  These cookies freeze well and taste amazing right out of the freezer on a hot summer day!

Iced Orange Cookies

  • Servings: 2 1/2 dozen

Ingredients:

  • 1/2 cup Butter Crisco shortening
  • 1 cup sugar
  • 2 eggs
  • 1/2 cup freshly-squeezed orange juice
  • 1 Tbsp freshly-grated orange zest
  • 2 1/2 cups flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp salt
  • Icing
    • 2 cups confectioner’s sugar
    • 1/4 cup freshly-squeezed orange juice
    • 2 Tbsp butter, melted

Directions:

Preheat oven to 350 degrees F.

In an electric mixer, cream shortening and sugar until light and fluffy.  Add eggs, one at a time, beating well after each addition.  Beat in orange juice and zest.  Add baking powder, salt and then flour to creamed mixture until well combined.

Drop by tablespoon or cookie scoop onto baking stone or ungreased cookie sheet about two inches apart.   Bake for approximately 10 minutes or until edges just begin to brown.  Cool on wire racks.

In a small bowl, combine icing ingredients until smooth.  Drizzle generously over cooled cookies.

TIP:  I refrigerated the cookie dough for a couple hours making it easier to work with and hold its shape.

Red Raspberry Dark Chocolate Puff Pastry Tarts.

Phew!  That name is a mouthful….

But it really does say it all!

And I’m betting you would love a mouthful of these simple, but elegant and amazingly delicious treats!

I made these this past weekend for a Sunday family football dinner.

Would you believe me if I told you there are only three ingredients?!?!

Well – four if you count the powdered sugar you sprinkle on top.

Puff Pastry is such a dream to work with!

Keep these ingredients on hand and this recipe up your sleeve when you need a quick, but fabulous dessert or treat.

I’m betting you won’t be sorry. 😉

Red Raspberry Dark Chocolate Puff Pastry Tarts

Ingredients:

Directions:

Preheat oven to 375 degrees F.

Roll out one sheet of puff pastry, and cut into 9 squares approximately 3 1/2 x 3 1/2 inches.  Place a teaspoon of raspberry jam in center of each square.  Top with a piece of dark chocolate.  Pull all four corners to center and pinch to seal.

Bake for 15-18 minutes on baking stone or cookie sheet until puffed and lightly browned.    Remove to cooling rack.  Sprinkle with powdered sugar.

Serve warm or cold.

Butternut Squash, Caramelized Onion, & Feta Cheese Pizza

Butternut Squash, Caramelized Onion, and Feta Cheese Pizza.

I am always looking for new ways to enjoy butternut squash, so I did a quick search and found a variety of pizzas using butternut squash.  Yum!

The one I found that had the flavors I love (and ingredients I had on hand), called for mashing the butternut squash as the “sauce” on the pizza, but I prefer the taste of cubed and roasted butternut squash, so I changed it up.

Each roasted chunk gets a bit browned and even a bit crispy on the outside corners, but is soft and sweet and tender on the inside.   I prefer that texture to mashed.

And I might just possibly eat anything with caramelized onions on top.  Just saying…

Add feta cheese – and SCORE!

We had this for dinner with a tossed green salad.

If you are looking for a new twist on pizza or a meatless meal, this may just be the ticket!

Here is how I made it.  Hope you will give it a try.

Butternut Squash, Caramelized Onion, and Feta Cheese Pizza

Ingredients:

  • 1 medium butternut squash, cubed
  • 1 large sweet onion, sliced
  • 1/2 cup crumbled feta cheese
  • 2 Tbsp olive oil, divided
  • 1 Tbsp butter
  • 2 tsp brown sugar, divided
  • 1 Tbsp balsamic vinegar
  • salt & pepper to taste
  • Pizza dough or Pillsbury crescent roll tube

Directions:

Preheat oven to 400 degrees F.  Place cubed butternut squash on stoneware baking pan or baking sheet.  Drizzle with 1 Tbsp olive oil, 1 tsp brown sugar, salt and pepper.  Roast approximately 20 minutes, turning once midway through roasting, until slightly browned and tender.

While squash is roasting, saute onions in 1 Tbsp olive oil and 1 tsp. butter, salt and pepper over medium heat until onions begin to caramelize, approximately 10-15 minutes.  Add balsamic vinegar and brown sugar, and continue to cook for another 5 minutes.

Bake pizza crust five minutes short of done on a round baking stone.  Remove from oven, and layer butternut squash cubes, caramelized onions, and feta cheese on crust.  Return to oven for 5-10 minutes.  Serve immediately.

Lemon Crinkle Cookies

Lemon Crinkle Cookies.

Amidst all the chocolate and peanut butter and pecans and raspberry and apricot, we needed a fresh, bright, citrusy, spring cookie for the wedding cookie table.

This light, delicate Lemon Crinkle Cookie is just the ticket!

A tangy zip of lemon juice and zest in a small little puff rolled in powdered sugar and “crinkled” will make a lovely  contrast in flavor and color.

It’s wedding week, and we are so excited!

Lemon Crinkle Cookies

Ingredients:

  • 1 8-oz package cream cheese, softened
  • 1/2 cup butter, softened
  • 1 1/2 cups sugar
  • 2 Tbsp freshly grated lemon zest (2 large lemons)
  • 2 Tbsp freshly squeezed lemon juice (from same 2 lemons)
  • 1 tsp vanilla extract
  • 1 tsp lemon extract
  • A couple drops of yellow food coloring
  • 1 tsp salt
  • 1 large egg plus 1 large egg yolk
  • 2 tsp baking powder
  • 2 1/4 ups flour
  • 1 cup powdered sugar (to roll cookies in before baking)

Directions:

In the mixing bowl of electric stand mixer, combine cream cheese and butter until creamy and smooth.  Beat in sugar, lemon zest and juice, vanilla and lemon extract, food coloring and salt.  Mix until well combined, light and fluffy.  Add egg and egg yolk and beat for 1-2 minutes on medium until creamy and light.

Gradually add in baking powder and flour on low speed until just incorporated.  Dough will be quite sticky.  Cover bowl and refrigerate for several hours or overnight.

Preheat oven to 325 degrees F.

Roll dough into 1 inch round balls and then roll in powdered sugar.  Place balls about 2 inches apart on baking stone or cookie sheet.  Bake 10-12 minutes until cookies puff and crinkle.  Do not overbake.  Cookies should not brown.  Cool completely on wire rack.  Cookies are wonderful when frozen or refrigerated for a “cool” taste.

Rhubarb Custard Pie (& Secrets to Successful Pie Crust)

Rhubarb Custard Pie is not a common one in circles I’m in, but this was a favorite of Marty’s family, and has become a favorite of ours too.

The recipe is Marty’s mom’s.  She taught me how to make it – and how to make a simple, but tender and flaky pie crust.

Rhubarb Custard Pie was always one of Pap’s (and IS Nick’s) favorite pie I make.  For Marty, it is not complete without a scoop of vanilla ice cream on top.

Many folks I know like to mix rhubarb with something else sweet, like strawberries.

Not here… sliced chunks of the tart, crimson, tangy rhubarb stalks

are a perfect contrast to the creamy, sweet, simple custard to make this a dynamite summertime pie.

We took it to a picnic this weekend, but of course I had to make one for home too.

Here is my recipe in its original form passed on and lovingly stained from my mother-in-law, who taught me so much about baking and cooking and canning… and how sometimes good things are messy.  🙂

I think it takes me longer to clean up than it does to make it.

You may notice the recipe does not include how to make the pie crust, so here is our “secret family recipe.”

Note that I was making 6 crusts in these photos (for 3 pies), but my recipe will be for one crust.  You simply double or triple or quadruple, etc. as necessary.

For 1 pie crust, mix 1 cup flour, a heaping 1/3 cup Crisco shortening, and a dash of salt in a bowl blending with a pastry blender till crumbly.

rp 3Add enough cold water to just moisten and be able to form a ball (about 1/3 cup)

and put on a floured surface to roll out.rp 5Important:  Do not overwork the dough.  This is NOT bread dough.  It shouldn’t be “kneaded.”  The more you work it, the tougher it will become.  The less you play with it, the more tender and flaky it will be.

rp 6If you are doing more than one crust, simply divide the dough into that number of balls and set aside all but one to roll out.

rp 7I like to use a heavy marble rolling pin to gently roll out the pie dough – working it as little as possible and turning over a few times to keep from sticking to the rolling pin and surface.

rp 8Lift it from the surface to your pie pan (I prefer baking stones) by folding it in quarters, placing in the pan,

For Rhubarb Custard Pie, I like to make a lattice crust, so simply roll out another ball of dough and cut into 8 strips.

rp 13Place 4 on the pie in one direction, then weave by lifting two alternating and place one the opposite direction, then lifting the other two, and repeating.

A finishing touch is to brush with some cream (or melted butter)

Lastly, cover the edges of the pie with strips of aluminum foil to prevent the edges from getting overbaked or burnt.

And with those leftover scraps of dough, Marty always loves with I brush them with a little cream or melted butter and sprinkle with cinnamon and sugar and bake into yummy cinnamon stick treats.
