Blueberry Streusel Coffee Cake

Blueberry Streusel Coffee Cake.

What is a girl to do when a bestie friend comes home after a long time away?!

Well…. run over and visit and hug as soon as possible!  Right?!

But you can’t go empty handed!

So – what to bake to take?  I needed something quick, but yummy, that my sweet friend Janet and her Mom and Dad would enjoy…

I had some amazing fresh blueberries in the fridge I had recently bought at a local farm market, so I decided to make a blueberry cake.

And OH was it yummy!  (I know because I kept half for hubby and me and took half to them.  She is that kind of friend!  The best kind – that you can take half a cake to – LOL!)

I arrived just in time to serve it to them for dessert!

Oh the joy of friendship!  Oh the joy of baking and sharing!

Make this for yourself!  Make this to give away!  But make this amazing Blueberry Streusel Coffee Cake today!  (oh dear – am I still rhyming?! )

Welcome home sweet Janet!  Looking forward to our time together.

Here is the recipe I made as I adapted from LifeLoveandSugar:

Blueberry Streusel Coffee Cake

Ingredients:

Streusel:

  • 3/4 cup flour
  • 3/4 cup packed brown sugar
  • 1 tsp. cinnamon
  • 6 Tbsp. salted butter, melted

Cake:

  • 1/2 cup white sugar
  • 6 Tbsp. salted butter, room temperature
  • 1/4 cup sour cream (light sour cream works fine)
  • 1/4 cup milk (I used Skim)
  • 1 large egg
  • 1 1/2 tsp. vanilla
  • 1 1/2 tsp. baking powder
  • 1 cup all-purpose flour
  • 2 cups fresh blueberries

Glaze:

  • 1/2 cup powdered sugar
  • 1 Tbsp. milk

Directions:

Preheat oven to 350 degrees F.

Prepare an 8-9 inch cake pan by greasing bottom and sides with shortening and then placing a circle of parchment paper in the bottom.

Prepare streusel by combining ingredients in a medium bowl with a fork.  Set aside.

Prepare cake batter by beating sugar and butter in electric mixer for 3-4 minutes until light and fluffy.  Add sour cream and milk  until well incorporated.  Add egg and vanilla.  Finally, add baking powder, then flour just until thoroughly combined.

Spread half of the batter in prepared pan.  Top with half of the streusel mixture, then  3/4 cup blueberries.  Repeat batter, streusel, then 1 cup blueberries.

Bake for approximately 35 minutes or until toothpick inserted comes out clean.

Cool in pan for 20 minutes, then remove from pan.

Prepare glaze by  by combining powdered sugar and milk until a glaze consistency is achieved.  Add more powdered sugar or milk as needed.

Drizzle cooled cake with glaze, and top with remaining 1/4 cup fresh blueberries.

Serve warm or cold – plain or with a scoop of ice cream or whipped cream!

Enjoy!

Cheers & Hugs,
Jodi

Homemade Old-Fashioned Glazed Donuts

Homemade Old-Fashioned Glazed Donuts!

Seriously…….
could anything be more decadently delish?!

A tender ring of fried sweet dough
drenched in a glorious glaze?

I couldn’t resist making these,
and they did not disappoint.

Every once in a great while,
I allow myself to be treated to a donut….
a wickedly wonderful waste of calories.

But since it is only Hubby and me at home,
a dozen donuts AND holes
are way too much sugary goodness!

So after enjoying one each
(and a few holes – which are completely calorie free  – right?)
I shared the rest.

That really is my joy in baking…
giving it away.

Hopefully creating a brief smile…
a tiny treat or surprise for a loved one or friend.

These are soooooo worth making!
They are easy and quick to make.

I hope you will treat yourself and those you love!

Homemade Old-Fashioned Glazed Donuts

Ingredients:

  • 2 1/4 cup  cake flour  (no cake flour?  no problem!  make it easily by the cupful – take one level cup of all-purpose flour, remove two tablespoons, and then add two tablespoons of cornstarch back in)
  • 1 1/2 tsp. baking powder
  • 1 tsp. salt
  • 1/2 tsp. ground nutmeg
  • 1/2 cup  sugar
  • 2 Tbsp. butter, room temperature
  • 2 large egg yolks
  • 1/2 cup  sour cream or Greek yogurt
  • Canola oil, for frying

For the glaze:

  • 3 1/2 cup  powdered sugar
  • 1 1/2 tsp. corn syrup
  • 1/4 tsp. salt
  • 1/2 tsp. vanilla extract
  • 1/3 cup hot water

Directions:

In a bowl, combine flour, baking powder, salt, and nutmeg.

In the bowl of a stand mixer, beat butter and sugar together until sandy. Add egg yolks, and mix until light and thick. Add dry ingredients to the mixing bowl in 3 additions, alternating with the sour cream, ending with the flour.  Cover with plastic wrap and chill for 1 hour.

On a floured surface, roll dough out to about 1/2 inch thickness. Use a donut cutter to cut out approximately 12 donuts and holes.

Pour 2 inches of canola oil into a heavy bottomed pot with a thermometer attached. Heat to 325°F.  Fry donuts a few at a time, being careful not to overcrowd the pot. Fry on each side about 2 minutes, being careful not to let them burn. Let drain on a paper bag to soak up the excess grease.

For the glaze:

Mix all ingredients in a bowl with a whisk until smooth.  Dip each donut into the glaze. Place on a wire rack above a sheet of waxed paper to catch any excess glaze. Let sit for 20 minutes until glaze is set.

Best served the day they are made, but may be stored in an air tight container at room temperature for a few days.

Cheers & Sugary Sweet Hugs,
Jodi

I’ve Fallen Madly in Love…. with Biscotti

I’ve fallen madly in love… with Biscotti!

I’m not sure why?  But all of the sudden, I can’t get enough of it.

It all started with an “impulse” purchase (dang hungry shopping!) – where I picked up a small package of almond flavored biscotti.

I’ve never really been drawn to biscotti – thinking it rather dry and bland tasting, but oh was I wrong!

Dry?  Maybe… but in an amazingly crispy, crunchy way.

Bland?  Far from it!  So full of flavor and texture.

And when served with coffee (or red wine) 🙂 – and dunked – Wowza!

The word “biscotto” means “biscuit” or “cookie.” Biscotti are named according to their method of baking. The root words “bis” and “cotto” literally mean “twice” and “baked.” When Italians first created biscotti in the region of Tuscany many centuries ago, they were careful to bake the cookies twice, in order to form their unique shape and allow the cookies to develop their signature crisp texture.

So after purchasing the almond…… and then the orange pecan…… I decided it was time I try to bake my own biscotti.

I considered what I had on hand and chose to try a Starbucks Copycat recipe of Dried Tart Cherry and Walnut.

I’m not sure I achieved the correct shape, but I’m pretty sure I nailed the flavor!

Hubby, who would normally not choose biscotti…. well – let’s just say he definitely liked them.  We won’t talk about how many he ate when he found them cooling, but suffice it to say, they were a hit!

Here’s the recipe I tried, and I cannot wait to try more flavors.

This could be a very dangerous love affair!

Cherry Walnut Biscotti

Ingredients:

1 stick  butter, softened
3/4 cup sugar
2 eggs
2 tsp vanilla
1/2 tsp baking powder
1/2 tsp cinnamon
1/4 tsp salt
1 3/4 cups all-purpose flour
1 cup chopped walnuts
1/2 cup dried cherries
1 teaspoon grated orange zest

Preheat oven to 350 degrees F.

Beat butter in electric mixer on high speed until fluffy. Add sugar and continue beating for about 2 minutes. Reduce the speed to low and add eggs, one at a time, beating well after each addition. Beat in vanilla.

Add baking powder, cinnamon, and salt, and mix.  Add flour just until blended.

Mix in walnuts, cherries and  orange zest by hand.

Turn the batter out onto a floured work surface and divide in half.  Shape each half into a log 12 inches long and 1 1/2 inches in diameter.  Transfer to baking sheet.

Bake 20-25 minutes until golden brown. Place baking sheet on wire rack and let logs cool for 10 minutes. Using a serrated knife, cut the logs into 1/2 inch wide slices, and carefully place the slices back onto the baking sheet.  Bake for another 10 minutes. Let the biscotti cool completely on the baking sheet. Store in airtight container.

Enjoy!

Jodi

Peanut Butter Banana Bread with Chocolate Chips

peanut-butter-banana-bread-with-chocolate-chips

Peanut Butter Banana Bread with Chocolate Chips.

I had a few bananas hanging out that were getting very ripe, so I decided to make a loaf of banana bread yesterday morning.

Instead of making my usual, I wanted to try something different.  Knowing how yummy peanut butter toast is with sliced bananas (right??!!), I thought peanut butter would be a wonderful addition to banana bread.  And while I was at it, why not throw in a few chocolate chips?!

peanut-butter-banana-bread-with-chocolate-chips-2

Thinking I was a genius for coming up with this idea, I searched online just in case.  Well of course others had tried this combo!  (Where have I been?!) I found a few different versions, so I took what I liked from them and adapted to come up with this one below.  It was delish!  The peanut butter is subtle, but adds a wonderful new twist.  This bread is SUPER moist and really wonderful warm out of the oven.

Hope you’ll give this twist on banana bread a try!

Peanut Butter Banana Bread with Chocolate Chips

Ingredientspeanut-butter-banana-bread-with-chocolate-chips

  • 4 medium ripe bananas, mashed
  • 1/2 cup creamy peanut butter
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1/3 cup buttermilk (I make by mixing milk and a dash of vinegar)
  • 1/4 cup vegetable oil
  • 2 eggs
  • 2 tsp vanilla extract
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 2 1/4 cups all-purpose flour
  • 1 cup semi-sweet chocolate chips or chunks

Directions:

Preheat oven to 350 degrees F.  Grease or spray a large bread loaf pan (of course I use a stoneware bread pan), then line with parchment paper allowing it to hang over the edges for easier removal.

In a large bowl, combine first 8 ingredients.  Mix well.  Add baking soda, salt, and flour.  Mix until combined.  Gently fold in chocolate chips reserving a handful to sprinkle on top. of batter.

Pour batter into prepared pan.  Bake approximately one hour or until toothpick inserted in center comes out clean.   If the bread starts getting too brown, place a tent of foil over top at around 45 minutes.

Cool in pan for 10 minutes, then lift out by grabbing parchment paper.  Cool on wire rack.

Enjoy!

Cinnamon Pecan Crumb Cake

cinnamon-pecan-crumb-cake-piece

BEWARE:  This Cinnamon Pecan Crumb Cake is only for the most serious crumb cake lovers!  Are you one like me?  Do you love more buttery, sugary, nutty crumbs than cake?  If so, this is the cake for you!  And I dare say it should not be consumed without a large steaming cup of coffee to wash down the “crumby” goodness.  Be still my coffee crumb cake lovin’ heart!

Let’s take a closer look at all that “crumby” deliciousness…

cinnamon-pecan-crumb-cake-piece-2

Don’t say I didn’t warn you.  This is a seriously “crumby” cake!

cinnamon-pecan-crumb-cake-piece-3

With buttery, nutty, cinnamony wonderfulness, this cake is a serious indulgence justified as breakfast when served with coffee…. but Hubby discovered it works very well as an evening snack when topped with a scoop of Vanilla Caramel Gelato!

If you don’t like your cake quite so “crumby,” you could double the cake batter or half the crumb topping.  Also – be careful not to overbake and dry the cake out – –  unless you are eating it with vanilla caramel gelato or dunking it in coffee.  In that case – who cares!

Diet shmiet – this cake is worth the calories!  Enjoy!

Cinnamon Pecan Crumb Cake

Ingredients:cinnamon-pecan-crumb-cake-piece-2
  • Topping
    • 2 1/2 cups flour
    • 1 cup packed light brown sugar
    • 2 1/2 tsp ground cinnamon
    • 1/2 tsp freshly ground nutmeg
    • 2 sticks (1 cup) butter, melted
    • 1 cup finely chopped pecans (or walnuts)
  • Cake
    • 1 1/2 cups flour
    • 1/2 cup sugar
    • 2 1/2 tsp baking powder
    • 1/2 tsp salt
    • 2/3 cup milk
    • 1 large egg
    • 2 Tbsp canola or vegetable oil
    • 3 tsp vanilla extract

Directions:

Preheat oven to 325° F.  Prepare  8 or 9 inch square baking pan by spraying with vegetable spray and lining with parchment paper so it overhangs sides of pan. Spray the parchment paper with vegetable spray and set aside.

Make topping by combining flour, sugar, cinnamon, and nutmeg in a large bowl.  Make a well in the center of the mixture and add the melted butter. Stir to combine, then add the pecans using your hands to thoroughly mix. Topping should have a loose, crumbly consistency.  Set aside.

Prepare cake by whisking milk, oil, egg, and vanilla in medium bowl.  Add sugar, baking powder, salt, and flour.  Stir until just combined.

Pour the cake batter into prepared pan. Add all of the crumb topping evenly over the batter.

Bake approximately 30 mins.  The cake will rise, and the topping will bake into the cake batter.

Remove from oven and cool for 10 mins. in pan. Run a butter knife along the edges of the pan to loosen cake and lift it out to a cutting board. Cut into 9 squares. Sprinkle with powdered sugar to garnish if desired.

The Perfect Hard Boiled Egg

perfect-hard-boiled-egg

The Perfect Hard Boiled Egg

It’s a age old debate, and there are likely as many methods as there are stars in the sky, but I recently tried this method from a great book I’ve started devouring that was recommended by a friend, Deep Run Roots by Vivian Howard.  This book is as much a story as it is a cookbook and as much an inspiration as it is picture book.  I am thoroughly enjoying it.  Vivian also has a PBS Series called A Chef’s Life and a restaurant called Chef & the Farmer.

So I tried Vivian’s method and loved it.  Complete simplicity and success.  A hard boiled egg generously topped with more salt and pepper than seems reasonable and a dab of Cholula hot sauce served on a bed of sprouts drizzled with fresh lemon juice = the perfect quick breakfast!

Here’s how to make them:

The Perfect Hard Boiled Egg

Place two eggs in a 2-quart sauce pan.  Cover with cool water to an inch above theperfect-hard-boiled-egg eggs.  Bring to a boil and cook for one minute.  Remove from heat, cover, and let sit for 10 minutes.  Drain the eggs, and run cold water over them until they are cool enough to handle.

If you are cooking more eggs, let sit 12 minutes.

That’s it!  Simple!  Success!  The perfect food.

Enjoy!

Jodi

Chunky Homemade Granola

Chunky Homemade Granola 0

I was itching to get back in the kitchen and make something after almost a week away.

Chunky Homemade Granola 1

And after a week of indulging, I thought I’d make something a bit healthy, but yummy to have on hand for the coming week.

chunky homemade granola 3

Homemade granola it was, and oh how yummy too!  Made with healthy ingredients like oats and nuts and dried fruits and held together with raw local honey and coconut oil, this recipe is delish just as is, but also delicious as a cereal with some extra fresh fruit like blueberries,

chunky homemade granola 4

or on top of Greek yogurt with some fresh fruit like blackberries!

chunky homemade granola 5

It also makes a lovely hostess or nice “thinking of you” gift in a clear bag with a pretty bow.

Cinnamon Chip Scones

cinnamon chip scones watercolor 5×7 arches 140lb cold press, raw sienna, cad orange, burnt sienna, burnt umber

I first shared this recipe I am “almost famous” for about two years ago here.

I made them twice this week for two different occasions, so when time came for me to decide on a watercolor painting for #WorldWatercolorMonth today – Cinnamon Chip Scones it was.

My painting does not do these amazingly yummy scones justice, but trust me, you and anyone you serve these to will LOVE them.

Here is what they really look like.

cinnamon chip scones

Cinnamon Chip Scones

Ingredients:cinnamon chip scones

2 3/4  Cups Flour
1/4 cup Sugar
1 Tbsp Baking Powder
1 tsp Baking Soda
Pinch of Salt
2 tsp Cinnamon
1 tsp vanilla
1 1/2 Sticks Cold Butter
3/4 – 1 Cup Buttermilk (easy substitute is 1Tbsp white vinegar added to 1 cup milk)
1 10 oz. bag Hershey’s Cinnamon Chips
Coarse Raw Sugar for Sprinkling

Directions:

Preheat oven to 400 degrees F.

In a large bowl, mix together flour, sugar, baking powder, baking soda, salt, and cinnamon.  Cut butter into small cubes and cut into dry ingredients with a pastry blender until coarse crumbs are formed.  Pour in vanilla and buttermilk, and mix with pastry blender just until incorporated.  Pour in bag of cinnamon chips.  Dump dough onto counter and gently shape into a 15″ x 3″ rectangle.  Cut dough in half, then each half in half, then each quarter in half, so that you have 8 rectangles.  Cut each rectangle on the diagonal to form 16 triangular shaped scones.

Place on backing stone or cookie sheet, brush with some milk or water, and sprinkle with coarse raw sugar.  Bake at 400 degrees F for 10-15 minutes.  Cool for a few minutes on stone or cookie sheet, then remove to cooling rack to cool completely.  Best served immediately.

Fresh Orange Date Walnut Bread

Orange Date Walnut Bread 3

I was looking for something new to try baking early yesterday morning before I settled into work for the day.

It was a cool, rainy day after a wonderful stretch of warmth and sunshine.  I was in the mood for a nut bread, but after traveling most of the week, I didn’t have a lot of fresh ingredients on hand.

Orange Date Walnut Bread 1

I found a bag of dates, but I wanted to “Springify” a date and nut bread recipe up a bit, so I thought fresh orange flavor might just do the trick.  Adding a bit of freshly squeezed orange juice and fresh orange zest was just the ticket to brighten up this lovely bread.

Orange Date Walnut Bread 2

It’s nice to have something like this on hand for a quick breakfast with coffee, a nice little treat for a guest or a late night or after dinner urge for something just a bit sweet, but not too.

I’m sure this would freeze well and be great to pull out when needed.

Hope you enjoy your weekend!

May it be bright and fresh and Springy, but a little nutty too!

Fresh Orange Date Walnut Bread

Ingredients:Orange Date Walnut Bread 3

3/4 cup sugar
1/2 cup butter, softened
1/2 cup sour cream
1/3 cup fresh orange juice
1 Tbsp freshly grated orange zest
2 eggs
1  3/4 cups all-purpose flour
3/4 tsp baking powder
 3/4 tsp baking soda
1 cup chopped dates
1 cup chopped walnuts

Directions:

Preheat oven to 350°F. Grease bottom only of 9×5-inch loaf pan. Set aside.

Beat sugar and butter at medium speed with mixer, scraping bowl often, until creamy. Add sour cream, orange juice, orange zest and eggs; continue beating until well mixed. Add flour, baking powder and baking soda; beat at low speed until well mixed. Gently stir in dates and walnuts.

Pour into prepared pan. Bake 45 minutes or until toothpick inserted in center comes out clean. Let stand 10 minutes; remove from pan. Cool completely.
