Fish Tacos (Burritos)

On Monday, I shared a recipe for Pineapple Blueberry Salsa and told you how I used it to make Fish Tacos for dinner Sunday.

They turned out SO DELISH!  And they actually are more like burritos than tacos because we had burrito-sized four tortillas.  You could certainly make them smaller by using smaller tortilla shells and cutting the fish into smaller pieces.

I’m still pretty obsessed with the Pineapple Blueberry Salsa, and think it would be great with grilled chicken too.

I decided to lightly bread and pan fry the fish for our fish tacos because that is the way Hubby likes fish best, but you could surely grill the fish too without breading.

It did add a nice crunch and was complemented by the creamy avocado, crunchy red cabbage, and sweet and zippy salsa.

This is a winner winner of a fish dinner.  Hope you’ll give it a try!

Fish Tacos

Ingredients:fish tacos with pineapple blueberry salsa red cabbage and avocado 2

  • 4 5-oz Hake Loins (or cod, haddock or your favorite fish)
  • 1 egg
  • 1/2 cup flour
  • 1/2 tsp salt
  • 1/2 tsp lemon pepper
  • 1 1/2 cup Panko bread crumbs
  • 1/4 cup olive oil
  • 1 cup shredded red cabbage
  • 1 ripe avocado
  • 4 flour tortilla shells
  • 1 cup fresh Pineapple Blueberry Salsa

Directions:

Prepare three shallow bowls with flour, salt and pepper combined in one, egg and 1/4 cup water whisked together in second, and panko bread crumbs in the third.

Heat olive oil in 12 inch skillet over medium-high heat.

While oil is heating up.  Dredge each Hake Loin first in flour, then in egg, and lastly in Panko  bread crumbs.

Pan fry two at a time in hot oil for approximately 2-3 minutes on each side until Panko coating is browned and crispy.

Remove from skillet to paper towel lined plate to absorb any excess oil.

On a flour tortilla, please Hake loin in center.  Top with 2-3 slices of fresh avocado followed by 1/4 cup shredded red cabbage and topped with 1/4 cup Pineapple Blueberry Salsa.

Fold and roll burrito-style.  Slice in half diagonally.  Serve immediately.

Life and Hope

Lane

My son snagged this amazing shot with his iPhone down the lane to our home one evening this week when the clouds were rolling in.

I love the beauty of the lush green “life,” the bright blue sky of “hope,” and the looming “sadness’ in the darkness under the puffy white clouds.

It reminded me of a dear friend who has been on my mind constantly lately who is going through a difficult period while she tends to her parents’ needs at her father’s journey at end of life.

It made me think of life and hope and sadness and how we all deal with all of it every day – –  often every moment of the day.

The lyrics of one of my all-time favorite songs came to mind, and I want to share them here for my sweet friend, Bub:

If the sky above you
Grows dark and full of clouds
And that old north wind begins to blow
Keep you head together
And call my name out loud
Soon you’ll hear me knocking at you door
You just call out my name
And you know wherever I am
I’ll come running to see you again

 

May we all find cherished moments of life and hope in times of darkness and sadness.
And may we all find comfort in friendship to get us through.

We may not be close enough in geographic proximity to literally always show up and knock on the door, but we can reach out in so many other ways to be there for each other.

I love chicken, and I love easy crockpot recipes – especially for days you know you are going to be busy, but want a nice, healthy meal at the end of the day.

Crockpot recipes are often thought more about in the winter and often with heavier, creamier sauces, but I love how light and healthy this recipe turned out that was born out of simply searching the pantry one morning last week for what to throw together.

I daresay this is good enough for company, yet simple enough for any ole’ weeknight dinner.

Best of all, you can throw it together in about 10 minutes in the morning and forget about it until dinnertime.

Jodi's Mediterranean Crockpot Chicken

Ingredients:Jodis Meditteranean Crockpot Chicken 1

  • 6 frozen chicken breasts (or your favorite cuts – thighs, legs, whole cut up parts)
  • 1 12 oz. jar Marinated & Quartered Artichoke Hearts ( I used DeLallo)
  • 1 12 oz. jar Sweet Roasted Red Peppers (I used Mancini)
  • 3 oz. (1/4 cup) Capers (I used Roland Capers in Sherry Vinegar)
  • 4 cloves garlic, minced
  • 1 Tbsp Italian Seasoning (oregano, basil, parsley, thyme blend)
  • 1/2 cup white wine (I used a bottle of Sauvignon Blanc that was open, but any kind would do, or you could substitute chicken broth)

Directions:

Layer all ingredients in crockpot in order listed above.  Cook on low for 6-8 hours.  Serve alone or over pasta, rice or with a side of new boiled potatoes. Garnish with some fresh basil leaves minced and freshly grated Parmesan cheese.

Easy – Right?!

Delicious?  You’re going to love it!

Chessy Caprese Tarts

In honor of National Cheese Lovers Day today, (you knew that – right?!) I am sharing a yummy new Cheesy Caprese Tart recipe I made this past weekend for the family while we got together to watch football playoff games.

This recipe could also be great for brunch, lunch or even a light dinner.   It would be a well-received snack to take to a Super Bowl Party too, I am certain!

Does anything beat ooey, gooey, chewy fresh melted mozarella cheese?!  Especially when topped with sweet juicy tomatoes and some lovely fresh basil?!  And everything is yummy when on top of golden, flaky puff pastry – right?

This recipe is really simple, yet it turns out looking so impressive, you are going to be a Cheese Lover’s ROCK STAR when you make this!

Caprese Puff Pastry Tarts

  • Servings: depends on how hungry you are!
  • Print

Ingredients:caprese tarts 2

  • 1 sheet of frozen puff pastry, thawed
  • 1 lb fresh mozzarella cheese
  • Fresh ripe Campari  (my favorite!) or cherry tomatoes
  • Fresh basil
  • Olive Oil
  • Salt
  • Pepper

Directions:

Roll out the puff pastry sheet and cut into four squares.  Top with sliced fresh mozarella and then sliced tomatoes.  Drizzle with olive oil, then salt and pepper to taste.  Bake in 375 degree F oven for approximately 15 minutes or until puff pastry begins to puff and turn golden brown and cheese is melted and bubbly brown.  Remove from oven and top with freshly chopped basil.  Tastes wonderful hot or cold.

For small bite-sized tarts, you could cut into 16 squares and do same.  You could also do one large “pizza” by not cutting the pastry sheet at all.

Balsamic Grilled Peaches & Chicken Salad Dinner

Oh Friends… you know how much I love chicken and discovering new and different ways to prepare it.

Well this week I discovered another Winner Winner Chicken Dinner!

It’s simple, it’s fast, it’s healthy, and it’s YUMMY!

I have seen and heard about grilling peaches, and I was intrigued.

Having some ripe peaches in the fridge that weren’t getting eaten, now was the time to try it!

It was so easy, and they were DELISH! 

Balsamic Grilled Peaches and Chicken

If you are looking for another light and simple, but full-flavored summer chicken dinner, look no further!

And remember, like I always say, if you don’t like a particular ingredient, switch it up!  Substitute goat cheese or feta or even shredded cheddar for the blue cheese if you are not a blue cheese fan (but BOO to you because it is DIVINE!).  Change up the greens to ones you prefer.  I used Spring Mix, but it would be awesome with Spinach or Arugula or Kale too!

Be creative.

Balsamic Grilled Peaches & Chicken Salad

  • 4 chicken breast halves
  • 4-6 cups Spring Mix Salad Greens
  • 2 large sweet Vidalia onions, sliced into 1/2 thick slices
  • 4-6 ripe peaches – cut in half and pitted
  • 1/2 cup crumbled blue cheese
  • 1 Bottle Balsamic Vinaigrette Dressing (I used Ken’s Light version)
  • Olive Oil
  • Balsamic Vinegar
  • Salt & Pepper to taste

Directions

  • Marinade chicken breasts in 1/2 bottle balsamic vinagrette for at least 4 hours.
  • Grill chicken when ready to serve.
  • Place Onion Slices in a grill basket (or foil).  Sprinkle with olive oil, salt and pepper.  Grill until translucent and char-grilled.  Place on one side of grill while chicken is grilling on the other side.  These two take about the same amount of time – approximately 20 minutes.
  • Once chicken is done, remove from grill, and set aside.
  • Sprinkle peach halves with olive oil, salt, and balsamic vinegar.  Place cut side done on grill, and grill for about 5-7 minutes until soft and char-grilled.  When done, remove from grill and slice peach halves into three or four pieces.
  • To plate, place a cup of greens on plate, top with grilled onions, peach slices and crumbled blue cheese.  Add chicken to side or slice and mix in with chicken.
  • ENJOY!
