Grandma’s Old-Fashioned Poppy Seed Cake.

One of the things I love to do around my birthday is bake Grandma’s Old-Fashioned Poppy Seed Cake.

Having a birthday so close after Christmas, when everyone is really “over” sweets, Grandma made this simple cake for my birthday every year for as long as I can remember until she passed away.

May sound kind of strange that I like to bake my own cake these days, but I really do.  For me, it’s more than baking.  It’s reminiscing.  It’s sweet, loving memories.  It’s kind of a tribute to my Stella Star.

I use Grandma’s old tin measuring cup as I measure out the flour and sugar.  I grease and flour the pan – a square tube pan – because that is the way Grandma did it.   I crack eggs and stir and think of conversations Grandma and I had in the kitchen while she cooked and baked.  I put it in the oven and wait for the smell…. That smell that takes me right there to her kitchen.  Right back to that feeling of comfort and peace and unconditional love.

So yep – baking my cake gives me almost as much joy as eating it!

I love the way the outside is crisp and crunchy, and the inside is tender and moist and just a little sweet, but packed full of flavor.

This is a very basic cake.  A cake likely made in times when ingredients were simple, money was tight, and everything was made from scratch with love.  And I love it!

Here is our recipe:

Grandma's Easy Poppy Seed Cake

  • Servings: One Yummy Cake
  • Print

INGREDIENTS:
3 cups flour
2 cups sugar
1/2 tsp baking soda
1/2 tsp salt
4 eggs
1 tsp vanilla
1 cup vegetable oil
1 can evaporated milk
1/4 cup poppy seeds
DIRECTIONS:
Preheat oven to 350 degrees F.  Grease and flour 10 inch tube or bundt pan.
In a large bowl, mix dry ingredients.
Make a well in the center and add eggs, vanilla, oil, and milk.  Mix well.
Fold in poppy seeds.
Pour into prepared pan, and bake for 1 hour or until toothpick inserted into cake comes out clean.
Cool 10 minutes in pan, then turn onto rack to cool.

When cool, sprinkle generously with sifted powdered sugar.

Perfect Prime Rib Roast

Perfect Prime Rib Roast.

On Christmas Eve this year, we decided on a Simple Surf and Turf Dinner menu to have with the family.  The Surf was Bacon Wrapped Scallops.  The Turf was Prime Rib.  Both were prepared simply, and turned out delish!  Baked potatoes, Roasted Brussels Sprouts and a Salad of romaine lettuce, apples, dried cranberries and walnuts accompanied the entrees.

I managed to quickly snap this iPhone photo of Hubby cutting the prime rib.  Not the best photo, but this recipe I found and slightly modified is such a keeper, I had to share!  The roasted vegetables not only help to make the perfect base for the au jus, they also taste great too as an extra veggie.

Whenever you want a simple, but elegant entree, this is a winner you will want to try.

Perfect Prime Rib Roast

Ingredients:

  • 7-8 lb Prime Rib Roast (with bones)
  • 1-2 Tbsp Horseradish
  • 1-2 Tbsp Dijon Mustard
  • 2 tsp coarse salt
  • 2 tsp coarsely ground black pepper
  • 4 tsp fresh thyme
  • 2 tsp garlic powder
  • 4-6 stalks celery, cut into 1-2 inch pieces
  • 1 cup carrots, cut into 1-2 inch pieces
  • 1 large sweet onion, quartered
  • 2 beef bouillon cubes
  • 1 1/2 cups water
  • 1 tsp cornstarch
  • 1 tsp water

Directions:

Preheat oven to 450 degrees F.  Rub roast with horseradish and mustard.

Combine salt, pepper thyme and garlic powder, and sprinkle over roast.

Place celery, carrot, and onion chunks in the bottom of a large roasting pan.  Place roast on top of vegetables.

Roast for 30 mins.  Reduce oven temperature to 350 degrees F, and roast until meat is 135 degrees F.

Remove from oven, cover with foil, and allow to rest for 30 mins.

Make  au jus sauce by placing pan drippings in roasting pan (veggies removed and reserved to serve) over a burner set to medium.  Stir in beef bouillon and water.  Bring to a boil.  Combine cornstarch and water, and whisk into sauce.  Allow sauce to thicken slightly, and serve with roast.

Apricot Kolaches

This week leading up to Christmas, I am sharing a few of my favorite posts from the past.  It just wouldn’t be Christmas without baking Grandma’s Apricot Kolaches.  This year, I made them for our annual cookie exchange party.  Do you have classic cookie recipes you must make every year?

I finally got around to some Christmas cookie baking this weekend, and the highlight for my gang is the Apricot Kolaches.

Mine are not quite as perfect and beautiful as Grandma used to make, but they are getting thumbs ups around here.  Apricot Kolaches are a traditional Polish tender cream cheese pastry cookie with a sweet-tart apricot filling.  Grandma was 100% Polish, and her cooking and baking were like none other!

I remember Grandma painstakingly measuring each 2 inch by 2 inch square so that every singly one looked exactly the same.  I don’t have nearly the patience, but I smile remembering those days in the kitchen with her.  I can also now relate to the aching back and feet she had at the end of the day after rolling, cutting, filling, folding, baking, cooling, packing up…  And I wish I had a young Jodi to rub my feet and massage my legs with Jergen’s cherry almond lotion like I did for Grandma in the evening after an all-day baking session.

But the joy on Marty’s and Nick’s faces and the “Mmmmm’s” that escape their lips between bites make it all worth it!

(and then I have to hurry up and freeze some or they would be gone quicker than it takes me to clean up the dishes!)

I also made some of my Jodi’s Almost Famous Chocolate Chip Cookies – a perennial favorite around here…

…as well as some with dried blueberries and white chocolate chips using the same recipe (another of Marty’s faves).

And it wouldn’t be Christmas without some Peanut Butter Blossoms…

And gotta have some Pittsburgh Thumbprint cookies too.  I made a batch with chocolate fudge and another with colorful sprinkles and green icing centers.

Here is the recipe I use for the Apricot Kolaches.

APRICOT KOLACHES

2 8-oz blocks of cream cheese, softened
2 cups (4 sticks) butter, softened
5 cups all-purpose flour
1 1/2 cups apricot preserves or apricot filling (I use Baker’s)
1 Egg, beaten
Confectioner’s (Powdered) Sugar, for dusting

Beat cream cheese and butter on medium-high speed of stand mixer until light and fluffy, about 3 minutes.  Turn mixer on low, and gradually mix in the flour until a smooth dough forms.

Knead dough on lightly floured work surface, and gently form a ball.  Divide dough into fourths, flatten, and wrap each in plastic wrap.  Refrigerate at least 4 hours.

When ready to bake, preheat oven to 400 degrees F.  Line cookie sheet or baking stone with parchment paper.  Working with one piece of dough at a time (after bringing back to room temperature from refrigeration), roll out to approximately 1/8 inch thick rectangle.  Trim edges and cut dough into 2 inch squares.

Spoon about 1/2 teaspoon of apricot filling into the center of each square.

Fold one corner into the center, dab with the beaten egg, then bring the opposite corner into the center and press firmly to seal.

Place on parchment-lined cookie sheet, and bake for approximately 10 minutes.

Dust with confectioner’s sugar and cool on wire rack.

These cookies freeze well, and thaw quickly.

This recipe makes about a million ….  or at least feels like it when you are making them!  🙂

Dark Chocolate M&M Chocolate Dipped Cookies

Dark Chocolate M&M Chocolate Dipped Cookies.

So the thing about Christmas cookies is that it’s fun to make them fancy.

Well – sometimes fancy might mean taking a usual cookie (like my “Jodi’s Best Ever  Chocolate Chip Cookies,” and using Dark Chocolate M&Ms instead of chocolate chips (DARK Chocolate M&Ms is the key here! They are insanely delicious!), and then dunking them in some more dark chocolate….

…. but only half way….

to be fancy!

They are sure to be a crowd pleaser.

You can make these by simply following my tried and true recipe here and substituting Dark Chocolate M&Ms or your favorite Maybe you want to use chopped up Butterfingers or Snickers or Milky Way candies or maybe even peppermint sticks.

Go wild.  Get fancy!

Have you heard of it?!

This was something new and intriguing to me when mentioned by a friend on Facebook who said she was making it because she was coming down with a cold.

I couldn’t get it out of my mind, and I finally made it this past week.

O M G!

What have I been missing?!?!

As far as I can tell, this recipe was originally posted on The Noble Pig several years ago, and I totally missed it.

It is a wonderful combination of tart, sour, salty pickles and creamy potato soup.  It reminds me of a delicious potato dish we’ve eaten at a local favorite restaurant that combines potatoes and cheese and pickles.

What a great comfort food recipe!

What a wonderful flavorful, warm meal in a bowl.

I can’t wait to hear if you’ve heard of it or if you are going to try it.

I tweaked it up a bit by adding a few more potatoes (especially some small gold, red, and purple ones to add color and texture).

Here is how I made it.

Dill Pickle Soup

Ingredients:

  • 6 cups chicken broth (I use 6 cups water and 6 tsp. chicken base)
  • 2 lbs potatoes (large potatoes peeled and quartered or small yellow, red, and purple potatoes halved – I used a combination of all)
  • 2 cups chopped carrots
  • 1 cup chopped dill pickes
  • 1/2 cup (1 stick) butter
  • 1/2 cup flour
  • 1 cup sour cream
  • 1/4 cup water
  • 2 cups dill pickle juice
  • 2 tsp. Old Bay Seasoning
  • 1 Tbsp. coarsely ground black pepper
  • 1/2 tsp. cayenne pepper

Directions:

In a large pot, combine chicken broth, potatoes, carrots, and butter.  Bring to a boil, and cook until the potatoes are tender.  Add chopped pickles, and continue to boil.

In a medium bowl, whisk together flour, sour cream, and water, making a paste.  Vigorously whisk paste into soup, small portions at a time, breaking up lumps.  Add pickle juice, Old Bay Seasoning, pepper and cayenne.  Cook 5 more minutes to incorporate.

Soup is now ready to serve.

Raspberry Linzer Cookies

Christmas cookie baking continues with these divine little shortbread “sandwiches.”

Buttery, tender shortbread cookies with a hint of almond kicked up with a generous spoonful of raspberry preserves and lightly dusted with sweet powdered sugar.

Such an elegant, beautiful, and mouth-watering treat!

Raspberry Linzer Cookies

Ingredients:

  • 1 1/2 lbs. salted butter, room temperature
  • 2 cups sugar
  • 1 tsp. pure vanilla extract
  • 1 tsp. almond extract
  • 7 cups flour
  • 1/2 tsp. salt
  • 1 1/2 cups raspberry preserves
  • Powdered sugar, for dusting

Directions:

Cream butter and sugar with electric mixer.  Add vanilla and almond extracts followed by salt.  Add flour and mix until dough is formed.  Remove dough from bowl to counter and flatten.  Place in large Ziploc bag or wrap in plastic wrap, and refrigerate for 30 minutes.

When ready to bake, preheat oven to 350 degrees F.  Roll dough out 1/4 inch thick.  Cut circles with biscuit cutter or round cookie cutter.  For half of the round cookies, cut a hole in the middle with smaller cookie cutter.  Bake approximately 12 minutes until lightly browned.  Cool completely.

Spread raspberry preserves on the flat side of each solid round cookie.  Top each with a cut-out cookie.  Dust top with powdered sugar.

Turkey Cranberry Quesadilla

Turkey Cranberry Quesadilla.

Today is December 9th.
Hopefully your leftover turkey and cranberry sauce is long gone from Thanksgiving.

But Christmas is right around the corner.
And more turkeys will be on the menu.

This Turkey Cranberry Quesadilla is so so delicious, it is worth roasting a turkey for!

Remember the Cranberry Jalapeno Holiday Dip recipe I shared that I made for Thanksgiving?

Turns out – it is an AMAAAZZZING sandwich spread and Quesadilla Filling!

With the last of our turkey, a generous slathering of Cranberry Jalapeno Holiday Dip, and some shredded cheddar cheese, I made this Turkey Cranberry Quesadilla last week that I am still “jonesing” for right now.

It is pretty hard to beat any type of protein (turkey, chicken, beef, pork) topped with some veggies or fruit and cheese, pressed between a couple of tortillas and toasted up crisp on the outside, but warm and gooey on the inside.

Here is how I made my Turkey Cranberry Quesadilla.

Turkey Cranberry Quesadilla

Ingredients1/2 cup chopped or shredded cooked turkey

Directions

Heat a large cast iron skillet over medium-high heat.  Butter one side of each tortilla.  Place one tortilla on skillet.  Top with Cranberry Jalapeno Holiday Dip, turkey and cheese, followed by remaining tortilla.  Top with cast iron press and grill for 2-3 minutes.  Flip tortilla and grill for an additional minute.

Cut into wedges to serve.

Turtle Thumbprint Cookies

I decided this past weekend to start my holiday Christmas cookie baking.

Every year, I make several of my same, tried and true faves, but I also like to try one or two new recipes, so I couldn’t resist the visions dancing in my head when I came across  these Turtle Thumbprint Cookies I discovered through a Pinterest search.

And – oh boy – they did not disappoint!

If you love the flavor combo of chocolate, caramel and pecan that makes the classic “turtle,” you are going to go nuts over these!

Hope you will give them a try.

Turtle Thumbprint Cookies

  • Servings: approx. 6 doz.
  • Print

Ingredients:

  • 1 lb. (4 sticks) salted butter, softened to room temperature
  • 2 2/3 cup sugar
  • 4 eggs (divided – yolk for cookies, white for topping)
  • 1/2 cup milk
  • 2 tsp. vanilla extract (please only use pure – not imitation)
  • 1 1/2 tsp almond extract
  • 4 cups all-purpose flour
  • 1 1/3 cups unsweetened cocoa powder
  • 1 tsp. salt

Topping:

  • 2 – 2 1/2 cups chopped pecans
  • Egg whites (from divided eggs above)
  • 1 jar caramel sauce (your fave – I used Smuckers)

Directions:

Beat butter and sugar in mixer on medium-high speed until well blended – about 3 minutes.  Add egg yolks, vanilla, and almond extract, while continuing to beat.

In a separate bowl, combine flour, cocoa powder, and salt.

Reduce mixer speed to low-medium, and add half of the flour mixture.  Beat until incorporated, then add half of milk, followed by other half of flour mixture, and finally other half of milk.  Beat until all ingredients are incorporated, but do not overbeat.

Place dough in Ziploc plastic bag or cover bowl tightly, and refrigerate for at least 1 hour.

When ready to bake, preheat oven to 350 degrees F.

Whisk egg whites until fluffy.

Roll dough into 1 inch balls.  Coat each ball with egg white, then roll in chopped pecans.  Place on baking stone (the only thing I bake cookies on) or cookie sheet.  Using a small spoon (I used a baby spoon) or your finger, indent each cookie ball in the center until a circle is formed.

Bake for 12-13 minutes.  Cookies will still be soft when you remove from oven.  Allow to cool on baking stone/cookie sheet.

Once cooled, remove to cooling rack, and spoon in caramel sauce.

Enjoy right away or pack in single layers in Ziploc freezer bags and freeze until ready to serve.

Herb and Garlic Roasted Spaghetti Squash

Herb and Garlic Roasted Spaghetti Squash.

Simple.
Healthy.
Amazingly Delicious!

I thought I was going to make something a bit more extravagant when I decided to roast some spaghetti squash by simply drizzling with olive oil, sprinkling with coarse ground pepper and salt, and topping with some garlic cloves and fresh herbs.

But when it came out of the oven looking like this….

And I took a teensy taste when scraping the flesh with a fork….

I ended up eating an entire half for my lunch!

I adore spaghetti squash, and have made it a number of ways that I’ve shared here:

But this super simple, quick and easy way is my new fave…..   at least for today!

Here is how I made it:

Herb & Garlic Roasted Spaghetti Squash

Ingredients:

  • 1 Spaghetti Squash
  • Extra Virgin Olive Oil
  • 4-6 cloves garlic
  • Salt & Pepper
  • Fresh Herbs

Directions:

Preheat oven to 400 degrees F.

Cut spaghetti squash in half, and scoop out seeds.  Place in cast iron skillet.  Drizzle liberally with extra virgin olive oil, toss garlic cloves and fresh herbs on top (I used fresh parsley and rosemary), and sprinkle liberally with fresh ground pepper and salt.

Roast for 45-55 minutes.

Remove from oven, and scrape flesh with fork to create spaghetti.  Serve immediately.

Cranberry Jalapeno Holiday Dip

Cranberry Jalapeno Holiday Dip.

When I was asked to bring an appetizer to my new Daughter-in-Law, Liz’s family Thanksgiving, I knew I had to make this after being told by my BFF, Jill that everyone was “jonesing it” when she made it for a party.

First I had to laugh at our 50+ year old selves using urban slang, then I had to make it and see if it was so!

Well – Yep!  It was a hit! One sister asked if the recipe was on the blog, because she wanted it (here it is Laura!), and another said she normally doesn’t like salsas, but she really liked it.

It is sweet, and it is spicy. It is crunchy, and it is creamy. All of this in a bite!

Thumbs up from all, except for hubby, who said it was… meh… He preferred the other appetizer I made – Pumpkin Pecan Baked Brie – which was pretty amazing too!

But will you make this and let me know and prove him wrong? <wink>

So secret revealed here.  I did not take pictures of the batch I made for Thanksgiving, so I made it again this past week just to get pictures <whistles and rolls eyes… not owning up to the fact that I ate a quarter of it for lunch one day…..>

And guess what else I did with it this week?  I made a leftover cold turkey sandwich and slathered some of this on the Smart Bun first.  YUM!  Who knew it would make a great turkey sandwich spread too??!!

This will be a hit at any holiday gathering, and it is so easy and pretty!  Here is the recipe as I slightly tweaked from a recipe I found through Pinterest:

Cranberry Jalapeno Holiday Dip

Ingredients:1 12oz. bag fresh cranberries

  • 1/3 cup sliced green onions
  • 1/4 cup sliced jalapeno pepper slices in a jar (or 1-2 fresh if you like it HOT!)
  • 2 Tbsp. chopped cilantro
  • Juice of 1 fresh lemon
  • 1/4 tsp salt
  • 1 cup sugar
  • 16 oz. cream cheese, softened

Directions:

Chop cranberries (I used the Pampered Chef Food Chopper, and it worked wonderfully, but you can also chop by hand.  Do not put in a food processor as they will become too mushy), and place in a medium bowl.  Add chopped green onions, jalapenos, cilantro, lemon juice, salt, and sugar, and stir gently, but well.

Cover, and let refrigerate overnight.

When ready to serve, strain or squeeze liquid from cranberry relish.

Spread cream cheese in bottom of a pie plate or serving dish.  Top with cranberry relish mixture.

Serve with crackers, tortilla chips, pita chips, celery sticks, or your favorite “dipper.”
