Classic Italian Lasagna

Classic Italian Lasagna.

I’ve shared before, and I’ll declare again… although I don’t have a drop of Italian heritage (that I know of) in me, I am an Italian “wannabe.”

I love cooking and eating Italian food.

Years ago – even before I was married – I worked with a young Italian woman who generously shared her Mom’s classic Italian lasagna recipe with me.

I have never made it any other way.  It is simple and classic and DELICIOUS!

I’ve adapted it to a smaller portion than the recipe originally shared with me since these days this size will last Hubby and I plenty long enough to almost grow tired of eating it for so many days in a row…. ALMOST!

When you are craving classic Italian lasagna, I hope you will give this recipe a try.  Here is how I make it.

Lasagna

Ingredients:

  • 1 quart marinara tomato sauce
  • 1 lb. ground beef, pork, turkey (or combination)
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 Tbsp olive oil
  • 1 box Barilla Oven Ready Lasagna Noodles
  • 2 cups Ricotta cheese
  • 1 egg
  • 1 tsp salt
  • 1 tsp dried basil or 1/4 cup freshly minced basil
  • 1/4 cup chopped parley
  • 1 lb. fresh Mozzarella cheese, thinly sliced
  • 8 oz.  Parmigiano Reggiano (Parmesan) cheese, freshly grated

Directions:

Heat olive oil in saucepan.  Add chopped onions and minced garlic, and saute until soft.  Add ground meat, and cook until browned.  Add marinara tomato sauce and simmer.

In medium bowl, mix Ricotta cheese, egg, salt, basil, and parsley.

Preheat oven to 375 degrees F.

In 8 or 9 inch square baking dish, spread 1/2 cup prepared meat sauce on bottom.  Layer with lasagna noodles – overlapping to cover.  Layer with half of Ricotta cheese mixture.  Top with sliced Mozzarella cheese.  Spoon more sauce over cheese to cover.  Sprinkle with Parmesan cheese.   Repeat layering.  End with sauce topped with remaining Mozzarella and sprinkled with Parmesan.

Cover with foil.  Bake 25 minutes.  Remove foil.  Bake 20 minutes longer or until browned and bubbly.  Cool 15 minutes before cutting and serving.

Old-Fashioned Tomato Pie

Old-Fashioned Tomato Pie.

Looking for something to do with the abundance of fresh, juicy, sweet, beautiful tomatoes in your garden or available this time of year?

How about an old-fashioned tomato pie?!

It’s like a deep dish pizza  in an old-fashioned crust….

Layers of tomatoes, onions, garlic, basil and parsley… topped with cheesy yumminess.

Make one, and enjoy it hot, warm, room temperature, or even cold.  It is a wonderful treat to celebrate the end of summer’s bounty and the delight of vine-ripened tomatoes.

Old-Fashioned Tomato Pie

Ingredients

  • Single Pie Crust
    • 1 cup flour
    • 1/3 cup Crisco shortening
    • Dash of salt (6 shakes)
    • 1/3 cup cold water
  • Filling
    • 2-3 lbs tomatoes, thinly sliced (I used a variety of red and yellow heirloom tomatoes)
    • 1 sweet onion, coarsely chopped
    • 3 cloves garlic, chopped
    • 2 Tbsp olive oil
    • 1/2 cup chopped fresh basil and parsley
    • salt and pepper to taste
    • 1/2 cup freshly shredded Parmigiano Reggiano cheese
    • 1/2 cup freshly shredded Gruyere cheese
    • 1/8-1/4 cup cup mayonnaise

Directions

Preheat oven to 425 degrees F.

Prepare pie crust by blending flour, shortening and salt with a pastry blender to create coarse crumbs.  Add cold water, and mix until just combined.   Do not overwork (this is the secret to flaky pie crust).  Roll out dough on floured surface and line a 9″ pie plate with dough – folding overhanging dough under itself along rim to create rustic edge.

Line piecrust with aluminum foil and fill with dried beans (or pie weights) to keep crust in place.  Bake for 20 mins.  Cool completely.

To prepare filling, place thinly sliced tomatoes on paper towels, and sprinkle with salt.  Let stand 10 mins.  Pat dry with another layer of paper towels.

While tomatoes are resting, saute onion and garlic, sprinkled with salt and pepper, in olive oil for 3-4 minutes until tender.

Layer tomatoes, then onion/garlic mixture, and a sprinkle of freshly chopped herbs into pie crust.  Continue layering until all tomatoes, onions, and herbs are used.

Combine shredded cheese and mayonnaise.  Spread over top of tomato pie.

Bake at 350 degrees F for 30 minutes or until lightly browned, shielding edges with foil or pie shield (the GREATEST invention ever for pie bakers!) to prevent excessive browning.

Serve hot, warm, or at room temperature, whichever you prefer.

Stuffed Pepper Soup

If you are a soup lover like me – especially this time of year when the temperatures turn cooler and the days grow shorter – you are going to love this hearty, rich, and flavorful meal in a bowl.

If you love the taste of stuffed peppers, but not the fuss, you are going to be in heaven.

Stuffed Pepper Soup is one of my all-time faves.  You can make it on the stove top or throw it in the crock pot to simmer all day.  Your house is going to smell like Grandma’s kitchen, and your belly is going jump for joy!

Here is my easy, yummy recipe.

Stuffed Pepper Soup

  • 2 1/2 lbs. ground beef
  • 1/2 cup chopped onion
  • 3-4 cloves garlic, minced
  • 2 quarts water
  • 2 beef bouillon cubes
  • 1 28 oz. can tomato sauce
  • 1 28 oz. can diced tomatoes
  • 2 cups cooked white rice
  • 2 cups diced green pepper
  • 1/4 cup packed brown sugar
  • 2 tsp salt
  • 1 tsp black pepper

Directions:

In a large dutch oven, brown ground beef with onion and garlic.  Drain.  Stir in remaining ingredients, and bring to a boil.  Reduce heat, cover, and simmer for approximately one hour until peppers are tender and flavors have had the chance to blend.  Serve piping hot, and enjoy!

How I love you from my head to-ma-toes!

It is tomato time of year around here, and there is nothing finer than a fresh-picked tomato right from the vine to the dinner table.

For today’s #WorldWatercolorMonth painting, I give you …. the Tomato…. in Daniel Smith Pyrrol Scarlett, Hansa Yellow, Green Gold, and Sap Green.

And to celebrate, here is a recipe for what we had for dinner the other evening – Brushetta Chicken.  A plump grilled chicken breast smothered with fresh mozzarella cheese and topped with sweet, juicy tomatoes, basil, and garlic.

Oh the yumminess!

And even better – oh the easiness!

Hope you’ll give this winner winner chicken dinner a try.  We had it with some brown rice and quinoa and a fresh spinach salad.  How will you serve yours?

Ingredients:

  • 4 Boneless, Skinless Chicken Breasts seasoned with garlic herb seasoning and salt
  • 1 large ripe red tomato
  • 1 large ripe yellow tomato or 1 cup yellow cherry tomatoes
  • 1/4 cup chopped fresh basil
  • 1 large garlic clove minced
  • 1 tsp salt
  • 1 Tbsp olive oil
  • 1 Tbsp balsamic vinegar
  • 4 slices fresh mozarella cheese, optional

Directions:

Prepare Bruschetta by chopping tomatoes and combining with chopped basil, minced garlic, salt, olive oil and vinegar.  Let sit and flavors mingle while you grill chicken breasts.

Top grilled chicken breasts with slices of mozzarella cheese, if desired, for last few minutes on grill and let melt.

To serve, top grilled chicken breast with large spoonful of fresh bruschetta and enjoy!

Bloody Mary Beef Pot Roast

Last weekend was unseasonably rainy and chilly here in Mars, so comfort food was in order for Sunday supper.

I had recently read a recipe KR posted on AnotherFoodieBlogger for Bloody Mary Beef Stew and was inspired to use up a bottle of Bloody Mary Mix I had in the fridge that I bought on a whim a while back when in the mood for that particular cocktail I only hanker for occasionally.

Here is what I came up with, and it was a definite HIT with my guys here.  Served with some homemade mashed potatoes (which I haven’t made in forever) just sealed the deal.  Enjoy!

Bloody Mary Beef Pot Roast

Ingredients:bloody mary beef pot roast 1

  • 2 1/2 – 3 lb. beef chuck roast
  • 2 cups bloody mary mix (your favorite)
  • 1/2 cup water
  • A shot of two of vodka (or not – whatever you like)
  • 1 head (or bunch) celery, chopped, including some of the leaves
  • 1 large sweet vidalia onion, chopped
  • 3-4 cloves garlic, minced
  • 2 tsp fresh rosemary, minced
  • 1 Tbsp horseradish
  • Salt and pepper to taste
  • 2 Tbsp olive oil

In a large skillet, saute celery, onion, and garlic (the heavenly trinity!) in olive oil for a few minutes until softened and turning translucent.  Add salt and pepper to taste, rosemary, and horseradish, and continue sauteing for a few more minutes until you start to get some little brown bits.

Make room for the beef roast in the center and brown on both sides along with the veggies.  Once the meat is browned, pour all into crockpot.

Combine bloody mary mix, water, and vodka and pour over all.  Cook on high for approximately 6 hours or until beef begins to fall apart with the touch of a fork.  Break apart and stir shredded meat into sauce.  Cook on low another hour if time allows.

Serve with mashed potatoes and a salad or vegetable side dish.  It also tastes yummy on buns as a sandwich (which we had the next day).

Tuscan Chicken & Penne Pasta

I have another Winner Winner Chicken Dinner to share with you today.

This is a great, quick recipe that uses a rotisserie chicken or leftover grilled chicken.

Tuscan Chicken and Penne Pasta

It really is bursting with flavor, full of tomatoes and spinach and chicken, and pulled all together with a simple chicken stock based sauce and incorporated with pasta to make it a full meal deal!

Serve it with a salad and some crusty bread if you dare!

Tuscan Chicken & Penne Pasta*

Ingredients:Tuscan Chicken and Penne Pasta 2

  • 1 Tbsp olive oil
  • 4 cloves fresh minced garlic
  • 1 box frozen chopped spinach or 4 cups fresh chopped spinach
  • 1 small sweet onion, chopped
  • 1 tsp oregano
  • 1 tsp basil
  • 1 tsp black pepper
  • 1 tsp salt
  • 2 (14 oz ) cans diced tomatoes (or fresh if in season and plentiful)
  • 2 cups chicken stock
  • 1 rotisserie chicken chopped or 2-3 cups chopped leftover grilled chicken
  • 1/2 cup half and half or skim milk
  • 3 Tbsp flour
  • 1 lb penne pasta, cooked al dente
  • Garnish:  Fresh diced tomato, fresh chopped basil, shredded fresh parmesan cheese

Directions:

In a 6 qt dutch oven, saute the garlic, spinach, and onion in the olive oil.  Add the spices, salt and pepper, tomatoes and chicken stock.  Bring all to a boil.  Add chicken.

Whisk together half and half and flour until no clumps remain.  Stir into boiling pot until combined.

Allow all to simmer about 10 minutes.  Add the pasta and mix well.  Garnish and serve.

This recipe is super yummy fresh, and it is delicious reheated the next day too as leftovers for lunch or dinner as the flavors have had time to truly meld.

Chicken Caprese Pizza

A fun, fresh, delicious way to use a rotisserie chicken is to make it into a pizza!

A tube of Pillsbury Pizza Crust, some red, ripe campari tomatoes, fresh mozzarella, basil, garlic and balsamic vinegar, along with the chicken make an amazing quick and easy weekday or weekend dinner.

Served with a fresh green salad, and you are ready to rock in 30 minutes or less.

We made this last night for dinner and absolutely loved it!

What is your favorite way to use a rotisserie chicken?

Chicken Caprese Pizza

  • 1/2 rotisserie chicken, diced
  • 1 Pillsbury pizza crust or your favorite
  • 1 lb fresh mozzarella cheese, sliced
  • 3-4 campari tomatoes, sliced
  • 1 clove garlic, minced
  • 1 Tbsp olive oil
  • 1 Tbsp balsamic vinegar
  • 1/4 cup fresh basil, chopped

Directions:

Preheat oven to 425 degrees F.  Spread pizza crust out on baking stone or cookie sheet.  Drizzle with olive oil and sprinkle with minced garlic.  Bake for 5 min.

Remove pizza crust from oven and spread chopped rotisserie chicken evenly on top.  Layer sliced campari tomatoes, followed by sliced mozzarella cheese and chopped basil on top.  Drizzle with balsamic vinegar.  Return to oven, and bake an additional 10-15 minutes until cheese is melted and beginning to brown and crust is golden brown.

I hope you will enjoy this yummy pizza as much as we did!

The Best Sandwich I Ever Made!

…or maybe I was just really hungry….

… but O. M. G. – I made the BEST tomato sandwich for lunch yesterday!

This was after staring at the overflowing bowl of tomatoes I picked the day before that is sitting on the counter with the abundance that is finally coming out of my tiny, little neglected 😦  garden.

(I AM going to do better next year – –  – she says every year!)

Oh  why do they have to come all at once!?!  Wouldn’t it be nice to have about five or six a week ripen throughout the whole year?  But NOOOOO – – – we get 30 at once for a couple weeks – then NOTHING!

And homegrown ones are so much sweeter than what we can get around here in Western PA the rest of the year at our local grocery stores.

So I plopped a couple slices of honey whole wheat bread in the toaster, smeared some mayo on them, then sliced (now this is a WHOLE new experience for me!!) some

SMOKED BUFFALO MOZARELLA cheese

I bought last weekend at Penn Mac in the Strip District.

Oh people – let me tell you….  actually – I can’t describe how YUMMY it is!!!

My favorite before this was smoked gouda, but WOWZERS, did this make for a good tomato sammie!!  (and I’m thinkin’ I must have a thing for smoked cheese…)

On top of the sliced cheese, I layered some fresh basil as if it were lettuce (oh how I love the anisey, licorice-like taste and smell of fresh basil!), then finally the tomatoes, a pinch of salt, and smooshed it down.

And seriously – I’m sorry I did not get a very good photo, but I did not have the patience to check it before diving into it, and then it was too late for any retakes. 😐

So I hope I described it well enough to get you to try.  A simple, but oh so delish sandwich for a hot summer lunch or dinner or snack!  Heck – – – I’d even eat this for breakfast!
