What do you make when you have A LOT of leftover spaghetti?

I made this super quick and easy vegetable lo mein last night while baking cookies for an upcoming cookie exchange.

Are you like me and have a hard time judging how much spaghetti to cook?

Our youngest son came over Sunday, so I made one of his favorite chicken dishes, Pepperoni Chicken.  I wanted to make sure to make enough extra so he could take a meal or two home with him, so I got a teensy bit carried away and made two pounds of whole wheat spaghetti.

After I filled a gallon Ziploc bag about 2/3 full and he started calling “halt” to any more, I realized I still had half of what I made left.

Since I had some leftover cut up veggies, tossing them together and making a quick sauce, made this dinner come together in about 10 minutes!  Can’t beat that – right?

You could really use any vegetables you have on hand.  Here is how I made mine.  Use it as a base recipe to flex to your taste!  I imagine mushroom lovers would totally enjoy them thrown in.  Want a protein?  Add some leftover chicken, pork, beef, or shrimp.  I’ll bet some steamed broccoli or fresh green beans and/or sliced sweet peppers would be great too!  You could even toss in some water chestnuts or peanuts, walnuts, or sliced almonds.

Quick & Easy Vegetable Lo Mein

Ingredients:

  • 1/2-1 lb spaghetti (I used whole wheat)
  • 2 Tbsp oil (olive, sesame, canola or vegetable)
  • 1/2 sweet onion chopped
  • 1 cup shredded or chopped carrots
  • 1 cup chopped celery
  • 1 cup green peas
  • Sauce – Whisk together:
    • 3 Tbsp soy sauce
    • 2 Tbsp teriyaki sauce
    • 2 Tbsp honey
    • 1/2 tsp ground ginger
    • Dash Sriracha hot sauce

Directions:

Heat oil in stir fry skillet.  Add vegetables and cook 3-5 minutes until crisp-tender.  Add spaghetti and sauce.  Cook until heated through 1-2 minutes.

Creamy Cauliflower Risotto and Garlic Rosemary Lamb Chops

Creamy Cauliflower Rissoto and Lamb Chops

Last Sunday, I was in the mood to be creative in the kitchen, so I decided to tackle the rack of lamp chops I recently purchased and do something interesting with a head of cauliflower I had.

For the lamb chops, I rubbed them with a simple mixture of fresh rosemary, garlic, salt and pepper and marinated them for 4 hours in the fridge.  When we were ready to eat, I simply pan seared them about 2 minutes on each side in a hot skillet with olive oil.  They turned out amazing!

Here is the recipe for the Creamy Cauliflower Risotto.  I have to say… I absolutely LOVED it!  A little more work than simply roasting cauliflower or mashing russet potatoes, but if you have the time and the inclination, it is SOOOO worth it!

Add some fresh greens, and you have a meal fit for royalty!

Creamy Cauliflower Risotto

  • 1 head cauliflower, cut into florets
  • 3 Tbsp. olive oil
  • 1 large onion, chopped
  • 1/2 cup chopped sweet red, yellow, and/or orange peppers
  • 4 cloves garlic, minced
  • 1/3 cup white wine
  • 1 cup chicken stock
  • 4 Tbsp. butter
  • 1 cup freshly grated Parmigiano Reggiano parmesan cheese
  • 1/4 cup Greek yogurt or sour cream
  • Salt and pepper to taste

Directions:

Finely chop cauliflower florets until it reaches approximate size and texture of rice.  (You can use a food processor if you like, but I did not.)  Set aside.

Heat olive oil in a large sauce pan.  Saute onions, peppers and garlic until caramelized.

Add white wine, and cook for 1 minute.  Add cauliflower “rice” and chicken stock.  Cover and cook on medium for about 10 minutes.

Add butter, and continue to cook for another 5 minutes without lid, allowing some of the liquid to evaporate.  Stir occasionally.

Once the cauliflower “rice” has thickened, stir in the Parmigiano Reggiano cheese.  (There really is no substitute for this BEST Parmesan cheese!)  Remove from heat and add Greek yogurt or sour cream and salt and pepper to taste.  Blend with immersion blender to desired creamy consistency.

Easy Homemade Chicken & Vegetable Lo Mein

I love chicken and all the versatile ways you can prepare it.  I try a new chicken recipe almost every week.  I also love Asian-inspired dishes, so I really enjoyed trying a take on Chicken and Vegetable Lo-Mein.

Like most recipes I make, almost everything can be substituted with any ingredients of your choice.  And though I provide measurements, I rarely measure anything exact myself.  In this recipe, you could use shrimp or pork or even beef if you prefer  instead of chicken.  You could also substitute any vegetables you prefer.  And if you don’t have lo mein noodles on hand, thin spaghetti will work too!

I really believe the ingredient that seals the deal with this recipe is the addition of a lot of fresh spinach in the end that you cook only long enough to wilt.  It adds such great texture, color, taste, and nutritional value.  I also very highly recommend using low-sodium soy sauce.  I am a salt lover, and it has taken me a long time to realize this, but most soy sauce is way too salty.  The low-sodium version gives you just enough saltiness, but the full soy sauce flavor.  And the sesame oil is a must.  This cannot be substituted with corn or vegetable or canola or olive oil.  To get that great Asian lo mein flavor, the sesame oil is key.

Easy Chicken & Vegetable Lo Mein

Ingredients:chicken and vegetable lo mein 3

  • 1 pound boneless, skinless chicken breasts, sliced thinly
  • 10 ounces lo mein egg noodles*
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 cup red, yellow, orange bell pepper, julienned
  • 1 large carrot, julienned or 1/2 cup matchstick carrots
  • 1 cup sliced celery stalks
  • ½ cup green onions, sliced
  • 2 cups baby spinach

Sauce:

  • 2 tablespoons reduced sodium soy sauce, or more, to taste
  • 2 teaspoons sugar
  • 1 teaspoon sesame oil
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon Sriracha, or more, to taste

Directions:

In a small bowl, whisk together soy sauce, sugar, sesame oil, ginger and Sriracha; set aside.

In a large pot of boiling water, cook noodles according to package instructions; drain well.

Heat olive oil in a large skillet or wok over medium high heat. Add chicken, and cook thorough for several minutes.  Add garlic, bell pepper, celery, carrots, and onion. Cook, stirring frequently, until tender, about 3-4 minutes. Stir in spinach until wilted, about 2-3 minutes.

Stir in noodles and soy sauce mixture, and gently toss to combine.

Serve immediately.

*If lo mein egg noodles cannot be found, spaghetti can be substituted.

Nick’s Chopped Chicken & Veggie Wraps

This past Sunday, my son Nick took over the kitchen for dinner and made us his amazing Chopped Chicken & Veggie Wraps.

Nick likes anything chicken and anything that can be wrapped up in a tortilla and eaten by hand.

This recipe requires a bit of chopping ahead of time, but throws together quick and easy and tastes so delish!

Starting with marinated grilled skinless, boneless chicken breasts and adding your favorite veggies makes for a healthy, quick, and oh so yummy dinner or lunch or anything in between!

The secret is in the double chopping.  Once you pile all the chopped ingredients together, you chop again.

And the thing that really kicks this wrap up for me is the Peach Mango Salsa!  OOOOO LAA LAA!

Throw in anything you like, but here is how Nick made these for us.

Nick's Chopped Chicken & Veggie Wraps

Ingredients:Nicks Chopped Chicken and Veggie Wraps 3

  • I lbs boneless skinless chicken breasts and/or thighs
  • 1/2 bottle Wishbone Italian Dressing (or your favorite marinade)
  • 1/2 lb bacon, crisped and chopped (option – but oh so yummy!)
  • Lettuce, chopped
  • 1 tomato, chopped
  • 1/2 seedless English cucumber
  • 1/2 chopped sweet red pepper
  • 4 green onions, chopped
  • 1/4 cup chopped hamburger dill pickles
  • 1/4 cup chopped pickled jalapeno slices
  • 1/4 cup chopped marinated artichoke hearts (or banana peppers)
  • 1/4 cup shredded cheddar cheese (or your favorite)
  • 1/3 cup Herr’s Peach Mango Salsa
  • 4-6 Large Burrito-Sized Flour Tortillas

Directions:

Marinade chicken in Italian salad dressing for approximately 24 hours in Ziploc bag in refrigerator.  When ready to eat, grill chicken and chop.  Chop all veggies and ingredients you plan to use.

To assemble, heat flour tortilla in microwave for 20 seconds to make more pliable for wrapping and prevent cracking.  Heat George Foreman Grill or Grill Pan.

Place all ingredients together for each wrap, top with a heaping spoon of salsa, and re-chop all together.  Mound in center of warmed tortilla and wrap tightly.

Place on grill to heat, crisp, and seal.

Healthy and Oh So Yummy Italian Spaghetti Squash

I know I often post yummy cookie and dessert recipes (and do I ever have an amazing Cinnamon Chip Brown Sugar Cookie recipe I will be posting later this week that I think has become my ALL TIME FAVORITE cookie ever!  Get READY cinnamon lovers!)…

But I had to share this amazingly delicious, totally healthy, guilt-free recipe for SQUASH (of all things squash!) that has even won over hubby and son despite it’s “healthiness!”  Yahoo!

It is spaghetti squash – Italian style, and it barely has any calories despite it’s full-flavor and filling-ness.  You can eat oodles of this and not feel a bit guilty!

You can serve it as a vegetarian main course or as a side dish with a protein.

We had it as a side with dry-rubbed pork tenderloin on the grill and a fresh salad for Sunday dinner.

Here’s the recipe as I make it.  Hope you will try, and let me know what you think.  I would love to hear how you make it too!

Italian Spaghetti Squash

  • Servings: approximately 6
  • Print

Ingredients:spaghetti squash

  • 1 large spaghetti squash
  • 3 Tbsp olive oil
  • 1/2 sweet onion, diced
  • 3 large cloves garlic, minced
  • 1 large can diced tomatoes
  • 2 Tbsp dried Italian Seasoning (oregano, basil, thyme)
  • Salt and pepper to taste
  • Fresh Parmesan cheese to taste

Directions:

  • Pierce whole squash 3-4 times with a fork, and microwave for approximately 12 minutes.
  • Let cool slightly until manageable to work with.
  • Cut squash in half and remove seeds.
  • Scrape squash with fork forming strands of “spaghetti,” and set aside.
  • In a large skillet saute chopped onion in olive oil and a sprinkle of salt until “sweated” out – 2-3 minutes.
  • Add minced garlic and saute another 1-2 minutes.
  • Add spaghetti squash and saute all together.
  • Add diced tomatoes and seasonings and saute all together.
  • Top with freshly grated Parmesan cheese.
  • Serve immediately.

Can you imagine any more amazing way to make potatoes?

Garlic, Crisp Smokey Bacon, and Creamy Blue Cheese?!?!

If you are looking for a SIMPLE, but KNOCK-OUT potato dish to serve for special company, with a steak for dinner, or to take to a potluck, get ready to make a lot of new friends with this dish and make your tummy VERY happy too!

Roasted New Potatoes with Garlic, Bacon, & Blue Cheese

My friend Janet came over for dinner the other evening, so I wanted to step up the potatoes a little and thought of this.  We had them with marinated grilled London Broil, Sauteed Fresh Green Beans and Fresh, Sweet Cantaloupe.  YUM!

And if you don’t like Blue Cheese (I realize some people do have an aversion for this cheese that I absolutely ADORE), you can substitute Cheddar or Swiss, or Monterrey Jack, or your favorite cheese – or – you can even eat them without cheese.  They are good that way too.

Here’s the recipe.  I dare you to not like this!

Roasted New Potatoes with Garlic, Bacon & Blue Cheese

Ingredients:Roasted New Potatoes with Garlic, Bacon, & Blue Cheese on fork

  • 3 lbs Baby New Potatoes – I used 1.5 lbs of Yukon Golds and 1.5 lbs of Red
  • 8-10 Strips Thick Sliced Bacon – I used Peppered Slab Bacon
  • 4 Large Cloves Garlic, Minced
  • 2-3 Tbsp Olive Oil
  • Salt & Pepper to taste
  • 4-6 oz. High Quality Blue Cheese, Crumbled

Directions:

  • Preheat oven to 450 degrees F.
  • Dice bacon into small bite-sized pieces and fry in skillet until cooked well, but not too crisp as it will continue to cook and crisp when you roast the potatoes in the oven.
  • Drain the diced bacon on paper towels, and remove all but 1 Tbsp of bacon drippings from pan.
  • Add Olive Oil, Garlic and Potatoes.  Mix to coat potatoes.  Sprinkle with salt and pepper, and stir fry for 3-4 minutes.  Add bacon back in, and stir.
  • Place all in a shallow baking dish and roast at 450 for 20 minutes or until potatoes are done.
  • Remove from oven and crumble blue cheese over all.  Stir to coat, and ENJOY!

Zucchini Lasagna

The Challenge:  Take a classic recipe, and make a healthier version.

That was the assignment my son, Nick’s girlfriend, Liz, had for her final assignment in a cooking class she is taking as part of her Master’s Degree Program in Nutrition.

We were excited to help her out and have her cook dinner for us last evening.

And she rocked it!  This Zucchini Lasagna recipe is a KEEPER!  I do believe I like it even better than the classic version.

Liz was sweet enough to allow me to photograph her and share the adventure and recipe here with all of you.

One of the joys of cooking is appreciating and embracing the fresh ingredients that make a recipe so wonderful – like the smell of fresh basil.

And the only thing better than smelling fresh basil is the smell of sauteed onions and garlic in olive oil!

For the meat sauce, Liz used lean ground turkey instead of beef or sausage, and when mixed with crushed tomatoes, fresh basil, onions and garlic, you would never know you are “missing” anything – except you get the bonus of less fat and calories!

This adorable amateur in the kitchen totally mastered using a mandolin (which she formerly only knew as a musical instrument 🙂 ) to perfectly slice the zucchini to replace the pasta noodles.

And of course Mikey was on his steadfast “clean the floor” duty making sure no crumb is left behind (and yes – he even likes raw zucchini).

This recipe even includes mastering the grill, so Nick was in charge of instructions here, and the zucchini strips were char-grilled beautifully.

Yummy ricotta and Parmesan cheeses are mixed with some parsley, salt, pepper, and an egg for the traditional filling.

Everything was layered, using the zucchini strips as “noodles” and topped with fresh slices of mozzarella for that extra yumminess.

And who can’t resist an extra sprinkle of freshly grated Parmesan on top before diving in?!

Here is the recipe Liz used as adapted from Skinnytaste.com:

Zucchini Lasagna

Ingredients:  z

  • 1 lb ground turkey
  • 4 cloves garlic, minced
  • 1/2 onion, chopped
  • 1 tsp olive oil
  • salt and pepper to taste
  • 1 28 oz can crushed tomatoes
  • 4 Tbsp chopped fresh basil
  • 4 medium zucchini, sliced thin
  • 24 oz part-skim ricotta cheese
  • 1 Tbsp fresh or dried parsley
  • 1 1/2 lbs. part-skim fresh mozzarella cheese, sliced
  • 1/2 cup shredded Parmigiano Reggiano
  • 1 large egg

Directions:

In a medium sauce pan, brown ground turkey.   Season with salt.  Remove from pan to bowl, and add olive oil to the pan.   Saute garlic and onions about 2 minutes.  Return the meat to the pan, add tomatoes, basil, salt and pepper. 

Simmer for 30-40 minutes, covered.

While sauce is simmering, slice zucchini into 1/8″ thin slices.  Salt lightly, and set aside for 10 minutes. Zucchini has a lot of water when cooked, salting it takes out some of the moisture. After about 10 minutes, aggressively blot excess moisture with a paper towel.

On a gas grill or grill pan, grill zucchini on each side, until cooked, about 1-2 minutes per side. Place on paper towels to soak any excess moisture.

Preheat oven to 375° F.

Stir together ricotta and Parmesan cheese, parsley, salt, pepper and egg in a medium bowl.

With zucchini, sauce, and cheese mixture complete, you are ready to begin assembling the lasagna.

In a 9×12 inch casserole, spread half the sauce on the bottom and layer the zucchini to cover. Then place the ricotta cheese mixture topped with half  of the mozzarella cheese.

Repeat with remaining sauce, another layer of zucchini, mozzarella and a bit of extra Parmesan.

Cover with foil, and bake for 45 minutes.

Uncover, and bake an additional 15 minutes.

Let stand 10 minutes before serving to “set.”

Roasted Caramelized Garlic Carrots

Are you often looking for new ways to prepare and serve veggies?  I’ve got another delicious, nutritious orange food for you today.  This time in the form of beautiful, fresh roasted, caramelized, garlicky carrots.  Nom Nom!  I find so many vegetables are best when roasted.  Flavor and nutrients are retained and the flavor is hard to beet.  (pun intended)

Lots of fresh garlic, thyme, parsley, olive oil, and balsamic vinegar sprinkled onto fresh young carrots creates a wonderful veggie to complement almost any meal.

We had ours with an herb marinated pork tenderloin and tiny roasted golden Yukon potatoes.

Here is the recipe as I made it.  I was inspired by another great recipe Chungah posted on Damn Delicious.  Measurements are guesstimates.  Make it how you enjoy.  That is the true JOY of cooking.

Roasted Caramelized Garlic Carrots

Ingredients:
15 fresh new carrots with stems trimmed, no need to peel
4 cloves garlic, coarsely minced
1 Tbsp dried thyme or 2 Tbsp fresh thyme
1 Tbsp dried parsley or 2 Tbsp fresh parsley
1 tsp. coarse sea salt
1 Tbsp. coarse ground black pepper
Approximately 1/4 cup olive oil
Approximately 1/4 cup balsamic vinegar

Directions:
Preheat oven to 375 degrees F.
Wash carrots and lay in a single layer on a baking stone or baking dish.
Drizzle with olive oil.
Liberally sprinkle with garlic, thyme, parsley, salt and pepper to your taste and liking.
Drizzle all with balsamic vinegar.
Toss to coat.
Roast for 30-40 minutes – turning once or twice during cooking.

I daresay even kids will enjoy these carrots that turn out so sweet and delicious.  I found them almost addicting!
