Woohoo!  sounds like a reason for cupcakes with sprinkles – eh?!  🙂

What a joy this has been so far to share with all of you, and I am looking forward to another 100 or so if yinz all don’t mind.

Instead of letting the stress of what to say “special” in my 100th post, I just went with what was in my head and heart today – nothing extra special…. just random stuff from me…. at… Life in Between.

I must say, this first 100 posts and days sure flew by in a “jiffy!”

Did you know a “jiffy” is an actual unit of time?

I didn’t…

I did know, however, that a pinch of salt is six shakes – did you?

It was one of the (ahem) very few Trivial Pursuit questions I got right back in the day – and you know how I knew?

When my mother-in-law taught me to make pie crust years and years and years ago – the recipe was:  1 cup of flour, a heaping 1/3 cup of shortening, 6 shakes of salt, and enough water to make dough.

That recipe is ingrained in my head, and I always smile when I make it and shake six times and think of my mother-in-law.  She loved to play games, and I loved that she loved to enjoy life and have fun.

Here are some more amazing (and mostly useless) facts* I thought were so interesting…

TOUGH MUDDERS!

What an amazing weekend we had!  Starting with Jackie’s Wedding (#mrandmrskallis) on Saturday, and ending with watching both our boys, Jake and Nick (along with Nick’s best friend Jon and his sister Kelly, and Jake’s friend Matt and his brother-in-law Jason) form a team and a bond participating in the TOUGH MUDDER Competition on Sunday.

This post will be filled with photos taking you through the event from start to finish from what we were able to see as spectators.

It was such an awe-inspiring event!  (In fact, after hearing the pep talk and pledge at the Start Line, Marty had tears in his eyes, and Rob was ready to jump in and join them!)

Marty and I (with Jake’s Colleen and Nick’s Liz, our Joyce and Rob, Matt’s wife and Jason’s fiancé) covered quite a few miles ourselves following our TOUGHMUDDER team to the obstacles we were allowed to get to.

Enjoy the romp through 10+miles up steep hill treks and obstacles that included such craziness as #ArticEnema, #BallShrinker, #WalkthePlank, and #ElectroShockTherapy!

Tough Mudder benefits the Wounded Warrior Project, and it has raised approximately $3 million to support thousands of warriors returning from the battlefield providing combat stress recovery programs, adaptive sports programs, benefits counseling, and employment services. And these are only a few examples of the programs offered to injured veterans! These programs and services aid in brave Americans’ transition from service-connected injury to civilian life. A team of Wounded Warriors participates in every Tough Mudder event, just to remind everyone what the definition of the word ‘bad-ass’ really means.

Tough Mudder is not a race – it is an event geared toward personal challenge and teamwork.  It is not about getting a faster time than your buddy, but helping your buddy achieve success also (and did we ever see that on the course all day!)

I sure am proud of our boys and our team as well as all of the participants in this challenging event.  Enjoy the visit to TOUGHMUDDER Nation with my guys.  #GlobalMudder

A Visit to Four Points Alpacas

How cute are these girls?!?!

And who knew they only lived 10 minutes away from me….  at Four Points Alpacas – – one of the most beautiful places in Butler County, PA!

This past week, Marty and I had the wonderful pleasure to visit Four Points Alpacas – the home of our friends Don and Christina Wright (who we’ve met through our weekly date night to John’s Bar).  Don asked Marty to look at some electrical work, and they treated us to a wonderful tour of their extraordinary little piece of heaven on earth followed by an amazing dinner al fresco on a beautiful August evening.

This was my breathtaking view while dining on perfectly grilled medium-rare filet mignon steaks, fluffy baked potatoes, and tender-crisp roasted fresh asparagus.  (We’ll have to recommend that as a “special” at John’s!)

ALP FRONT GARDENIt is apparent Christina not only enjoys, but works very hard to keep everything looking beautiful, from the décor inside and out to the gardens and grounds.

alp GARDENAnd the front porch was only outdone by the beautiful back patio with bar/kitchen, Jacuzzi, gathering area, and a relaxing stone waterfall..

Driving up to Four Points Alpacas, which also boasts a beautiful bed and breakfast suite (The Inn @ Four Points), you experience 360 degree views of rolling hills, beautiful foliage, ponds, birds, and wildlife.

And I just love Christina and Don’s style and all of their little homey and whimsical touches.

The trip to the barn was such a highlight.

And there is no doubt that Christina loves her alpaca family…

and they love her!

And besides alpacas, there are chickens, guinea hens, a duck, cats, and an extremely lovable Mom, Dad, and “Puppy” Great Pyrenees family that hang out with the alpacas (and that I also fell in love with!).

ALP barn I was amazed at how many different colors of Alpacas there are, and the Wrights also have a beautiful shop of handmade clothes, socks, teddy bears, rugs, and other beautiful treasures all made from the Alpaca fur at their Alpaca Apparel & Gift Boutique.

alp group shotTEN of these Mommas are “expecting” and due any day.  Christina has promised to call me so I can run over and experience the birth of a Cria (Baby Alpaca).  She says a healthy one is 17-20 lbs, and can you believe these lovely ladies carry them for 11 1/2 months!  They get about a two-week break before they start all over again.

Thanks Don and Christina for one of the best Wednesday evenings I’ve had in a long time!

Bloom with Hope – Always and The TOUGH MUDDER!

Tomorrow is THE BIG DAY!  Jackie and Matt’s Wedding!!

Hopefully she is much too busy to be bothered reading my little ole’ blog post (or she will see her wedding card!)

This card is my #FreebieFriday post for our #WheretheRubberHitstheRoad group, and I couldn’t be more excited for a Friday!

Tomorrow’s celebration will be followed by an overnight with some of our besties, Joyce and Rob, followed by the #ToughMudder Event on Sunday, where Jake and Nick are participating in a team with Nick’s best buddy, Jon and his sister, Kelly.  Go Team McKinney/Randza!

#ToughMudder is a 10-12 mile (18-20 km) obstacle course designed to test all-around strength, stamina, teamwork, and mental grit.  The idea of Tough Mudder is not to win, but to have a story to tell!

Oh Boy!  Eh?  It sounds like a lot of fun (for us spectators!) and is for a great cause – the Wounded Warrior Project.

Hopefully, I will get some fun photos and have some good stories to tell, but until then, have a great weekend all!

PS – In perusing some new bloggers and blogs, I came across a fun new challenge site:  Addicted to Stamps Challenge Blog and Laurie’s beautiful entry into the CAS Challenge #109.

CAS means “clean and simple” in the stamping and cardmaking world, so I thought I would give it a try with this card I made last week for Jackie and Matt’s wedding.

Clean and Simple can often be a challenge for me – I tend to want to over-embellish, but I think I kept this one pretty clean and simple 🙂 .

Color Challenged in a Color Challenge

For my card-making/stamping escapades this week, I sure was stumped on a color challenge.

I have been enjoying participating in various card challenges as a way to expand my creativity.  The challenges typically give you a sketched layout, an inspiration photo, a particular embellishment that must be used, or a grouping of 3 -4 colors to incorporate into your project.

So…. after feeling a little bit proud (woohoo! I’m easily excited) for being recognized as a “Cut Above” the past two weeks – last week for the Paper Players Challenge #207 Button Challenge (thanks Andrea!) and the week before in the Paper Players Challenge #206 Sketch Challenge (thanks Claire!), I just couldn’t figure out what to do with the Paper Players Color Challenge #208.  I actually made three different cards three nights this week until I settled on the watercolor swallowtail card above to submit.

The challenge was to incorporate 4 colors into your project:  Calypso Coral, Blushing Bride, Hello Honey, and Basic Gray.  Here they are:

I was having trouble being creative with these colors.

This was my first attempt:

Then I made this one:

Almost gave up…

Then this one came to me:

Still the same colors…. Yet more different techniques….

As I look at all three, I see such a vast difference in all three despite the same four colors being used.

For the one I chose, I watercolored the inks on water color paper with a water brush starting with the blushing bride on top, then calypso coral, and finally hello honey.  After it dried, I stamped the swallowtail on with Memento black ink, then outlined and shaded with some glittery dazzling effects.  I then simply mounted that on the gray card stock, and then onto a white base.  With all the glitz of the butterfly, I thought I should keep the rest muted and simple.

So now I have three cards I can use – all because I was seriously color challenged in this week’s color challenge.  Thanks Nance!

Rosemary Garlic Pretzels

My recent snack OBSESSION is Rosemary Garlic Pretzels.

Those that know me best know that even though I  L-O -V-E  to bake…………..

999,997.4 times out of 1,000,000, I would chose a salty pretzel over a chocolate chip cookie as a snack…

to go with my red wine or G&T especially.

So lately, I have been making these SUPER simple, yet oh so DELISH Rosemary Garlic Pretzels.

All you need to do is take a bag of hard pretzels of your choice, break them into “bite-sized” pieces, and layer them on a baking dish.

Then you simply drizzle with some olive oil, fresh chopped rosemary, garlic & herb (or your favorite) seasoning, and (the special ingredient) a drizzle of honey.

Bake at 250 for 30-40 minutes, stirring every 15 minutes, and voila!

Grandpap’s Rocking Chair

I wonder if my boys (or maybe my grandchildren if I am blessed with them someday) will have something of mine that will bring as sweet of memories as Grandpap’s Rocking Chair does for me?

Do you have any thing(s) like that?

This beautiful chair, that grandma refinished and varnished to a S-H-I-N-E, is now safely preserved in one of our guest bedrooms, but oh the memories it evokes of evenings spent on Grandpap’s lap watching his favorite show together – Lawrence Welk.

I’m surely showing my 51 years of age.  Who else remembers:  “Uh oneah and uh twouh and a three…. ?” as good ole’ Lawrence swung his magical musical baton….

or the polkas, the accordians, the singers, and the dancers.

What shows will our children and grandchildren remember like that?

Yikes!

Grandpap was a very gifted musician.  Oh if I only would have gleaned even a drop of that talent, but despite a stint at clarinet lessons, and even shorter stint of piano lessons, and don’t even ask me to sing (even though I love to 🙂 ), it is lost on me.

Grandpap died when I was only 10 years old, but I smile thinking of him.  I can vividly picture him shaving his 5 o’clock shadow in the deliberate and methodical way he did twice every day with his bristly lathery brush in the basement sink…

I can still hear him saying, “Grandma’s gonna gimme the dickens!” every time he took us to Kerber’s Dairy and bought us double dipped ice cream cones taller than we were, which he helped keep from dripping all over the car by taking turns licking around my brother, Johnny’s, and mine one after the other, but we still ended up dripping it all over ourselves…

And I can still taste the Coffee Soup he so loved that was made out of saltine crackers and coffee with lots of cream.

Another very treasured item I have, but one I DO USE –  probably EVERY single day – is Grandma’s tin measuring cup.

Of all her treasures we divided up when she died, I longed to have this and her recipes the most.

Marty has even had to repair this by re-securing the handle, but I love how it allows me to fondly remember her when I measure a cup of rice for dinner or a cup of flour when baking.

What tangible things will our children and grandchildren hold dear that evoke such fond memories of us?

The sweetest ones usually come from the simplest of things we don’t even realize….

as we travel through this journey of life.

BLT with Fresh Basil Mayonnaise – A Simple Sunday Supper

We had such a wonderful weekend – starting with The Best Book Club Ever Friday evening followed by a fun Saturday with family and friends eating, shopping, brewery touring and tasting, and lake cruisin’ at #ConneautLake.

After a busy weekend away, a simple Sunday supper was in order:  Bacon, Lettuce, and Tomato (BLT) Sammies with fresh corn on the cob.

The fresh basil mayo is what REALLY puts this sandwich over the top (thanks Joyce for teaching me this yummy twist!).   Simply mix some chopped fresh basil and a sprinkle of sea salt to mayonnaise.  You WILL NOT REGRET it!

Mediterranean Sourdough

I picked up a loaf of Mediterranean Sourdough bread at the local farm market  (#Soergels) where I also got the Yellow Heirloom Tomatoes and Corn on the Cob.

All you need do is:  Toast the bread, then generously spread with some fresh basil mayo.  Top that with lettuce of your choice, fresh sliced tomato and a couple slices of crisp smoky bacon.  Smoosh it together and ENJOY!

Add a side of corn on the cob with a sprinkle of Old Bay Seasoning (thanks Rob for this idea, because now I don’t even want or need butter on it!) – and that completes a yummy, but simple Sunday supper.

I’m just guessing, but I think this dinner would also taste good ANY night of the week :).

Jack Daniel’s Bacon Mac n Cheese

If you are looking for an extra special version of Mac n Cheese to take to a picnic or party or special event – meet Jack Daniel’s Bacon Mac n Cheese.

We were heading to “The Best Book Club Ever” this weekend and were to bring wine and cheese or a cheese dish.

Well – knowing “The Best Book Club Ever” host’s love of all things Jack Daniel’s

and pretty much everyone’s love of bacon – I couldn’t resist this combo to try out and take.

I found a recipe by Julie Espy of White Lights on Wednesday and tweaked it up Jodi-style, then doubled the recipe since we were feeding a crowd, and put it in the crockpot to keep warm after baking.

I have to say – it was a hit.  What a yummy combination of bourbon soaked smoky bacon that gets candied with brown sugar and cayenne for a kick that stays with ya and creamy cheese and noodles.

This should probably not be on your regular weekly dinner menu (though you may want and crave it after experiencing) because it is only low-fat and low-calorie when served at parties….

But when partyin’, it goes great with an icy glass of Jack and lime.

If you want a crowd pleaser, make this for your next gathering!

Jack Daniel’s Bacon Mac n Cheese

1 lb thick sliced bacon
½ cup Jack Daniel’s Tennessee Whiskey + 1 Tbsp
1 cup brown sugar
1 teaspoon cayenne pepper
1 pound macaroni pasta
3 tablespoons unsalted butter
⅓ cup all-purpose flour
2 cups milk
1 cup extra sharp cheddar cheese, shredded (do not use pre-shredded cheese in the bag!)
1 cup smoked gouda cheese, shredded
1 lb ball fresh mozzarella cheese, broken into pieces
½ teaspoon paprika
Salt and pepper to taste

Preheat oven to 400 degrees F.

In a small saucepan, bring ½ cup Jack Daniel’s to a boil. (WATCH CAREFULLY – and cover with a lid.  I didn’t put a lid on mine and was making double.  I put it on to boil, turned around, and when I looked back, a flame 2 feet high was rising from the boiling alcohol.  No worries – we all survived – just lost a little Jack in the process.)  Reduce heat to medium, and simmer until reduced to 2 tablespoons. (My flaming alcohol reduced very quickly, but I don’t recommend that method!)  Remove from heat.  (I really think you could make this without even heating the Jack and may just skip next time, so feel free to do that if  you prefer.)

On a plate, combine brown sugar and cayenne. Dip bacon into Jack Daniels and then press each side into brown sugar mixture to coat. Place on a baking sheet (with sides if you don’t want bacon grease and alcohol dripping in your oven).  Bake for 7 minutes, then flip and bake for about 5 more minutes.  Remove the bacon to a plate coated with non-stick cooking spray to cool.  Chop bacon when cool.

Bring water to a boil in a large pot. Add macaroni and cook until al dente. Drain pasta; set aside.

While pasta is cooking, melt butter in a medium sauce pan over medium-high heat. Add flour, and whisk to combine.  Add 1 tablespoon Jack Daniel’s and whisk into roux. Whisk in 1 cup milk until combined. Add remaining milk. Whisk frequently until sauce thickens and begins to bubble. Add cheeses; whisk until cheeses melt and sauce is smooth. Add paprika and salt and pepper to taste. Pour sauce over pasta, and add chopped bacon. Stir until pasta is completely coated in sauce.

Bake for 30-40 minutes uncovered until top begins to brown and cheese sauce is bubbling.
