Well – no snow happening here in Mars, but we can dream, can’t we?  I’m dreaming of a white Christmas…

My design team inspiration card this week is stamped and heat embossed with a glittery embossing powder for the snow and snowflakes to sparkle, and I added some miniature pearls for an extra special touch.

Old Fashioned Hard Tack Christmas Candy

Making Old-Fashioned Hard Tack Christmas Candy is more than just “making candy.”

It is an opportunity to pass down family holiday traditions.

It is an opportunity to create memories.

A chance to spend time with those you love,

and a way to make a homemade Christmas gift.

So when my daughter-in-law, Colleen asked if we could make hard tack candy this year, I was so excited!

It has been quite a few years since the days when I was about her age and my mother-in-law taught me.

My sister-in-laws and I got together every year with my mother-in-law to make hard tack candy around this time (Thanksgiving weekend), so that the guys could take a bagful in their pockets for their annual deer-hunting trip, which always opens the Monday after Thanksgiving in our neck of the woods, and we would have plenty to enjoy and share as a special homemade gift.

The recipe is quite simple, but also a bit messy, so we were very fortunate to have an extra helper this year in Charlie, who kept the floor lickety-split clean from any powdered sugar, butter or flying candy that hit it!

Colleen and her sweet sister, Katie, caught on amazingly quick, and we ended up making 10 batches to split between the three of us.

Old Fashioned Hard Tack Christmas Candy 2

There is still plenty of time to make this sweet treat and create some memories with a new family tradition.

Here’s our recipe:

Old-Fashioned Hard Tack Christmas Candy

  • Servings: approx. 2 cups
  • Print

Ingredients:Old Fashioned Hard Tack Christmas Candy 2

  • 1 cup water
  • 3 3/4 cup white sugar
  • 1 1/4 cup Karo Corn Syrup
  • Food Coloring
  • 1 dram (tsp) LorAnn Oil & Candy Flavoring of your choice (we used Cherry, Lemon, Strawberry, Raspberry, Watermelon, Orange, Butterscotch, Spearmint, Peppermint, and Cinnamon)
  • 2 cups powdered sugar
  • Butter (room temperature)

Mix water, sugar, and corn syrup in a saucepan.  Heat to boiling and boil until it reaches 300 degrees F (hard tack) on a candy thermometer (takes about 20 mins).

While that is cooking, prepare your cutting station.  Cover counter or table with an old tablecloth.  Pour powdered sugar directly onto the tablecloth and spread around. Amply butter three dinner plates and place on table amidst the powdered sugar.  Sterilize scissors or kitchen shears in a pot of boiling water.

When the mixture reaches 300 degrees F, remove from heat and add food coloring and oil flavoring.  Stir until combined.

Pour onto prepared buttered dishes, dividing evenly between the three.  Let it cool for up to a minute, then begin gently pulling with scissors to edge of plate.  With buttered hands, begin to pull and cut it off into the powdered sugar.  You can snip a little at a time, or pour off large dollops into the powdered sugar.  Let cool slightly and turn over to assure both sides have powdered sugar on them, but do not allow the powdered sugar to mix INTO the candy.  Snip with shears into bite-sized pieces.  Place in a colander and shake off excess powdered sugar.  Spread out on a platter to cool completely.   Store in air-tight containers, mason jars, or Ziploc baggies.

A couple of pointers:

  • I can’t even imagine making this by myself.  I think a minimum of three people are needed to keep it moving as you need to work fast once you pour it as it cools quickly.  Plus – it is so much more fun doing it together!
  • It is HOT!  Be prepared!  Butter your hands and plate liberally to be able to deal with it, and work quickly.
  • Be careful when pouring in the oil flavorings as some are very potent – cinnamon and the mints especially.  Be sure not to breathe in directly over the pot, and have the room well ventilated – open the door or window if necessary and have your exhaust fan on.
  • Some people pour the hot liquid into a pan, let it cool, and then crack it by banging the pan on the counter or table or using a gentle small hammer or tool to pound and crack.  I think that makes it very sharp, but you can do that if you prefer.
  • If you make cinnamon and mint along with fruit flavors – store separately until you put together to gift or serve as the cinnamon and mint flavors can overpower all others.

Festive Flurry of Snowflakes

Turquoise Brusho Festive Flurry Sparkle Snowflake Card

This week’s challenge at The Paper Players is a Tic Tac Toe Challenge.   These are always so fun to choose which way to go.

For my Design Team Inspiration Card this week, I choose the Diagonal: Snowflake-Sparkle-Die Cut.

I had an idea in mind, but when I saw a card done by one of my favorite stamper/ cardmakers, Sharon White of Copy Cat Cards, I was totally blown away and completely inspired to create my version featured here (with her permission of course – gracious CAS’er that she is!)

Turquoise Brusho Festive Flurry Sparkle Snowflake Card 2

This card combines Brusho Watercolor Crystals with embossing and stamping and die-cutting.

I started with Arches 140lb watercolor paper.

Using the StampinUp Festive Flurries Stamp Set, I randomly stamped a few snowflakes with VersaMark Ink and then heat embossed with Sparkle Embossing Powder.

I then taped the watercolor paper down, masking off the edges with painter’s tape and painted the paper with water.  I then sprinkled Turquoise Brusho Crystals onto the paper and spritzed with some additional water before letting it thoroughly dry.

While that was drying, I stamped a festive flurry snowflake in turquoise on white card stock for the the first card and one in Versamark on Pacific Point Blue card stock for the second one and then heat embossedwith some more Sparkle Embossing Powder.  Once dry, I die cut them with the matching Festive Flurry Die.

I then attached each to a card base, the first to Whisper White, and the second to Pacific Point.  I used some different fun sparkly ribbon for each and added a snowflake embellishment to the center of the large snowflake.

I’m thinking these will make beautiful Hanukkah cards for a few dear friends!

Tired, Blocked, Blessed…

How is it that is is January 3rd, 2015 already?!?!

What a busy, wonderful, joy-filled holiday season it has been.

I have been a bit lazy in my posts lately, but only because I have been so busy simply enjoying life!

I have taken two full weeks off from my full-time job to just relish in and enjoy the holidays, and boy has it been lovely!

I spent the first few days of my vacation baking and shopping and last-minute preparations for the upcoming 4-days in a row of hosting festivities.

We started on Christmas Eve by sharing dinner and the evening with our boys and and our sweet daughter-in-law.  We made our first prime rib dinner, exchanged gifts, and played games.

On Christmas Day, we hosted extended family for a hunky styled feast of halupkis and pierogies, ham, and lots of other goodies.

The day after Christmas was our special McHendy Christmas celebration with our “best friend family,” followed by Saturday with my Dad and “Mom II,” brothers and their families, Aunt and Uncle.

Sunday was spent with hubby’s 91-year-old Aunt who was in need of a little TLC.

Monday was an effort to get back to some normalcy and a bit of time in the gym.

Tuesday was prepping for New Year’s Eve celebrations, and Wednesday brought friends and family to celebrate New Year’s Eve (and my birthday!).

We were fortunate to have friends stay over and enjoy New Year’s brunch.

Friday brought my first “free” day, so Marty and I took a ride to the city and I got to take some photographs with my new camera from Santa 🙂 .

Two more days of vacation, and I’m thinking,  “where did the time go?”

I’m glad the weekend is still in front of us!  Then it is time to get my groove back. 🙂

Making Homemade Polish Pierogies

We revived another one of Grandma’s Christmas traditions this year.  We made her homemade Polish pierogi recipe.

I don’t know how Grandma did all this work herself every year for our holiday meal.  She never asked anyone else to bring anything.  She did all the cooking, all the baking, hosted, and did all the clean up.  Occasionally I was asked to dry dishes….  and I complained!  UGH!  How could I have?!  If only we had the wisdom of experience and could turn back time to show our gratitude and appreciation…

I am fortunate enough to have my hubby, Marty, help with these little buggers.  There are not a lot of ingredients, but there are a few tedious steps, and the dough is a bit “tight” to roll out.  pierogi 1

In fact, you would laugh if you would have seen me climbing on a chair and kneeling on the kitchen counter to roll it out easier!  Much less strain on the back that way! 🙂

We made the filling the day before and refrigerated overnight so it was easy to roll into little balls for the filling.

It is really important to seal them completely so the filling doesn’t seep out when boiling.

I use a little bit of water on my fingers to help seal, then pinch with tines of a fork.

Boiling only takes a few minutes, and they are done when they float to the top.

When ready to serve, fry the pierogies in a skillet with butter until golden brown.

Then the really yummy part comes when you caramelize sweet onions in butter and layer in between your pile or bowlful or pan full of these wonderful little pasta pockets of cheesy potato goodness.

Pierogies are a Polish tradition and a Pittsburgh tradition.  There are even several stores/restaurants that strictly sell and serve pierogies.  They can be made with a variety of fillings.  Our favorite is potatoes and cheese, but we also love them filled with homemade saurkraut sauteed in pork.  Others fill them with a cottage cheese or prune filling.  Grandma always pronounced them ‘pee dough gee‘.  Some people spell them ‘pieroghi’.

Whatever way you pronounce it or spell or fill it, pierogies are a wonderful treat and another fond memory of my dear Grandma, my Stella star.

Here is Grandma’s Polish Pierogi Recipe:

Dough:
4 cups flour
2 eggs
1 tsp salt
1 pint sour cream
2 Tbsp melted butter

Potato & Cheese Filling:

2 lbs. potatoes (I like to use Yukon Gold) Peeled, Boiled and Mashed
1/2 lb Shredded Extra Sharp Cheddar Cheese (do not use pre-shredded)
Salt to taste
2 Tbsp butter

For Filling: Mash potatoes, add rest of ingredients, and blend well. Chill until ready to use.

Assembling the Pierogies:
Mix all dough ingredients together and knead until dough is smooth.
Roll out to approximately 1/4″ thickness and cut into 2-3″ circles with a drinking glass.
Add about a tablespoonful of filling to center, then fold over, seal, and crimp.
Place pierogies in boiling water and boil until they rise to the top, then remove.
When ready to serve, fry in butter in a skillet until golden brown.
Sauteed onions – the more the better are excellent served with pierogies.
We also love a dollop of sour cream on top.

Giving Keys and Mini Beers

Our family is so fortunate to have a “best friend” family.  My BFF Jill and her family make up our extended chosen family.  Together we are the McHendy Family (a combination of McKinney and Henderson). 🙂

Our kids have grown up together.  We have spent Christmases and New Years and many other holidays and celebrations together through the years (as well as a few trying times, tragedies, changes, and everything else life throws at all of us!).

This Christmas, even though are kids are grown – – with a few married and a few moved away to other states – – we were able to all gather together the day after Christmas to celebrate our family friendship.

I like to share small, but hopefully meaningful gifts with our McHendy family.

This year, I was excited to find The Giving Keys for the girls.  If you haven’t heard of it, I urge you to check out their website and their mission.  Per their website, “The Giving Keys exists to employ those transitioning out of homelessness to make jewelry out of repurposed keys that get sold and shared around the world. Each key is unique and carries a message like HOPE, STRENGTH, DREAM or COURAGE. When the wearer of the key encounters someone else who needs the message on the key, they give it away and then send us the story of their key being paid forward.”

I ordered a key bracelet (The Never Ending Bracelet) for each of the girls and had the word “Grateful” engraved on it, because I am grateful for each one of them in my life.  After they wear it for a while, they are to pass it on and express their gratitude to someone in their life.

For the boys, I painted “McHendy” in gold sharpie on a shot glass for each of them.

To try to get them all to look relatively the same, I chose a font I liked and printed the word “McHendy” out on a sheet of white paper.  I cut it out to fit into the glass and simply drew over it while it was inside the glass.

Once opened, we filled each shot glass up with a “Mini Beer.”   Have you ever had one?  They actually taste more like a creamsicle than beer, but they look like a little glass of beer, so are fun to make.  (To make a Mini Beer, simply fill a shot glass 2/3 full with Licor 43 and top with a splash of heavy cream)
