Aint it Good to Know You’ve Got a Friend!

MOJO359 2
Happy Friday!

Today I am sharing a card I designed for the Sketch Challenge #359 at Mojo Monday (MOJO359).

This card was totally inspired by one I saw done by Mojo Monday’s Julee Tillman.

Mojo359SketchHere is the sketch we were challenged to design from.

For my card, I started with some Navy and White SU DSP, embossed a “friendly” sentiment on vellum with gold embossing powder, colored a flower from SU Bloom with Hope with alcohol markers, then fussy cut and embellished with #WinkofStella and glued and stitched it all together for this fun friend card.

If you have a few moments, enjoy one of my all-time favorite versions of one of my all-time favorite songs 🙂

Friends make the world a better place.

Aint it good to know you’ve got a friend?

Oh My Halupki! (Grandma-Style Stuffed Cabbage)

halupki cover

I think my Grandma made Halupki (stuffed cabbage to some) almost every week.

When Grandma cooked – even when it was just her towards the end of her life – she cooked for a small army…

Halupki pan 1

… and she ALWAYS made a care package for me.

I visited her at least once a week, and there was always a quart jar of some kind of homemade soup waiting for me in the fridge, usually a container of halupkis (or maybe stuffed peppers or something else that week), and then a bag full of goodies (cookies or cereal or candy or ALL three!) to treat the kids.

Grandma 80 birthday with Nick

Grandma’s 80th Birthday sharing her cake with Nick in our backyard

She kept an ongoing bag in the closet that she added to each time she shopped or made something so I always had a “Grandma Bag” to take home.  Sometimes she even picked up dish towels or other small kitchen tools.  She was always thinking of me, and always so giving.

I haven’t made halupkis in quite a while, so thought it would be fun to do.  (Funny how this blog has inspired me to stretch out of the normal chicken salad, pasta with meatballs, and other “usual” dinners to more creativity so I can blog about it…)  Definite bonus for Marty and family and friends that I share the “lovin’ from my oven” with 🙂 .

halupki 1

I hope Grandma would be proud of my halupkis – – – though hers were pure perfection – each sized the same in tight little cabbage packages – – – I’m not so fussy…

Halupki is a dish made of rice, beef, and pork encased in cabbage with a thin, sweet tomato sauce.  Every family has their own twist on this traditional “hunky” comfort food dish.

halupki pan closeup

One of Grandma’s tricks for her sauce was to mix tomato sauce, tomato soup and some of the water the cabbage was boiled in.

halupki 2

I hope you enjoy these with mashed potatoes – a must with Grandma’s halupkis.

halupki plated

Here is the recipe as I made it and as I recall from Grandma.

Makes: Enough for a small army (or approx. 60 halupkis)

Preheat oven to 350 degrees F.

3 large heads of cabbage, cored
2 lbs ground beef
2 lbs pound ground pork
2 lbs ground veal
1  1/2 lbs thick sliced bacon
4 cups cooked white rice
3/4 cup chopped onion
4 cloves garlic, minced
3 eggs
Salt and pepper to taste
2 28 oz can tomato sauce
4-5 Family size cans Campbell’s Tomato Soup

halupki pan closeup

Place cabbage in a deep pot and cover with water. Add salt to taste, and bring water to a boil.

Remove outer leaves as they begin to separate from cabbage head. Continue to pull leaves off while boiling for approximately 15 minutes. Trim thick center vein off cabbage leaves. Chop remaining core of cabbage and place in bottom of greased (I use Pam spray) roasting pan.

Reserve 4 cups of the cabbage water to mix with the tomato sauce and soup for sauce. Combine sauce ingredients and place 2 cupx over chopped cabbage in roasting pan.

Chop bacon into bite-sized pieces and fry. When cooked, drain off most of the grease, leaving enough in the pan to saute onions and garlic. Saute until translucent.

In a large bowl, combine ground beef, pork, veal, bacon, rice, onion, garlic, egg, salt and pepper.

Form oblong balls of meat mixture and place in center of cabbage leaves. Fold sides over filling and roll cabbage around meat.

Place in a roasting pan on top of chopped cabbage and sauce. When all are rolled and placed, pour remaining sauce over top of all.

Cover pan, and bake approximately 4 hours, basting every 30 minutes.
ENJOY!

Birthdays are for the Birds

child birthday card punch art birds on wire

Birthdays were so much fun when we were kids – right?

And even more when my boys were young and we could do (what they eventually came to dread….)

THEME parties!

I recall parties themed with pirates and magic shows, and Barney the purple dinosaur………

Oh the days….  (I can’t believe these were over 20 years ago now!)

So I was excited to see The Paper Players Challenge #209 this week be a child’s birthday card.  Gave me a chance to be silly and fun.

pp209

Leanne Pugliese, of The Paper Players Design Team, is celebrating her granddaughter, Cassidy’s, 4th Birthday this week (Happy Birthday Cassidy!), so she chose a Clean and Simple (CAS) Child’s Birthday Card for #PP209 Challenge.

child birthday card punch art birds on wire
My card is a “punch art” card.  I’ve seen some amazingly creative critters created out of punched out shapes.  They range from puppies and turtles and hippos, lions, elephants, and monkeys to caterprillars and lambs and bears and birds – silly birds, angry birds, real birds.  There are some awesomely talented artists and designers out there!

I saw little birds similar to these somewhere at some point and thought they would make a fun child’s birthday card – especially for a “wee one.”  My “birds” are cut out using SU framelit circles and the bird builder punch for the wing and nose.  I sponged them with some pumpkin pie ink, glitzed their feathers a bit with #WinkofStella, cut out party hats from SU DSP, added some Crystal Effects to their beaks, and popped on a candy dot for the eye.  The background is done with a cloud embossing folder, the “telephone wire” is made from baker’s twine, and the Happy Birthday sentiment is from the Bloom with Hope stamp set.

I can’t wait to share this card with a wee one on their birthday.  As for me – no more birthdays please…  Birthdays are for the birds!

Cheers & Hugs,

Jodi

It’s My 100th Post! How Long is a Jiffy?

100

It’s my 100th Post @ lifeinbetween.me!

Woohoo!  sounds like a reason for cupcakes with sprinkles – eh?!  🙂

What a joy this has been so far to share with all of you, and I am looking forward to another 100 or so if yinz all don’t mind.

Instead of letting the stress of what to say “special” in my 100th post, I just went with what was in my head and heart today – nothing extra special…. just random stuff from me…. at… Life in Between.

I must say, this first 100 posts and days sure flew by in a “jiffy!”

Back In A Jiffy_thumb[6]

Did you know a “jiffy” is an actual unit of time?

I didn’t…

I did know, however, that a pinch of salt is six shakes – did you?

It was one of the (ahem) very few Trivial Pursuit questions I got right back in the day – and you know how I knew?

When my mother-in-law taught me to make pie crust years and years and years ago – the recipe was:  1 cup of flour, a heaping 1/3 cup of shortening, 6 shakes of salt, and enough water to make dough.

That recipe is ingrained in my head, and I always smile when I make it and shake six times and think of my mother-in-law.  She loved to play games, and I loved that she loved to enjoy life and have fun.

Here are some more amazing (and mostly useless) facts* I thought were so interesting…

phone

  • More than 50% of the people in the world have never made or received a telephone call.
  • The sentence “The quick brown fox jumps over the lazy dog” uses every letter of the alphabet.
  • The “sixth sick sheik’s sixth sheep’s sick” is said to be the toughest tongue twister in the English language…try it!
  • No word in the English language rhymes with month.
  • Shakespeare invented the words ‘assassination’ and ‘bump’.
  • “Stewardesses” is the longest word typed with only the left hand, ‘lollipop’ with your right.
  • The name of all the continents end with the same letter that they start with.
  • The words ‘racecar’ and ‘kayak’ are the same whether they are read left to right or right to left.
  • TYPEWRITER is the longest word that can be made using the letters from only one row of the keyboard.
  • There are two words in the English language that have all five vowels in order: “abstemious” and “facetious.”
  • There is a word in the English language with only one vowel, which occurs five times: “indivisibility.”
  • The only 15-letter word that can be spelled without repeating a letter is “uncopyrightable.”
  • A “jiffy” is an actual unit of time for 1/100th of a second.

TOUGH MUDDERS!

What an amazing weekend we had!  Starting with Jackie’s Wedding (#mrandmrskallis) on Saturday, and ending with watching both our boys, Jake and Nick (along with Nick’s best friend Jon and his sister Kelly, and Jake’s friend Matt and his brother-in-law Jason) form a team and a bond participating in the TOUGH MUDDER Competition on Sunday.

This post will be filled with photos taking you through the event from start to finish from what we were able to see as spectators.

It was such an awe-inspiring event!  (In fact, after hearing the pep talk and pledge at the Start Line, Marty had tears in his eyes, and Rob was ready to jump in and join them!)

Marty and I (with Jake’s Colleen and Nick’s Liz, our Joyce and Rob, Matt’s wife and Jason’s fiancé) covered quite a few miles ourselves following our TOUGHMUDDER team to the obstacles we were allowed to get to.

Enjoy the romp through 10+miles up steep hill treks and obstacles that included such craziness as #ArticEnema, #BallShrinker, #WalkthePlank, and #ElectroShockTherapy!

Tough Mudder benefits the Wounded Warrior Project, and it has raised approximately $3 million to support thousands of warriors returning from the battlefield providing combat stress recovery programs, adaptive sports programs, benefits counseling, and employment services. And these are only a few examples of the programs offered to injured veterans! These programs and services aid in brave Americans’ transition from service-connected injury to civilian life. A team of Wounded Warriors participates in every Tough Mudder event, just to remind everyone what the definition of the word ‘bad-ass’ really means.

Tough Mudder is not a race – it is an event geared toward personal challenge and teamwork.  It is not about getting a faster time than your buddy, but helping your buddy achieve success also (and did we ever see that on the course all day!)

I sure am proud of our boys and our team as well as all of the participants in this challenging event.  Enjoy the visit to TOUGHMUDDER Nation with my guys.  #GlobalMudder

A Visit to Four Points Alpacas

ALP Girls Group

How cute are these girls?!?!

And who knew they only lived 10 minutes away from me….  at Four Points Alpacas – – one of the most beautiful places in Butler County, PA!

aLP House front

This past week, Marty and I had the wonderful pleasure to visit Four Points Alpacas – the home of our friends Don and Christina Wright (who we’ve met through our weekly date night to John’s Bar).  Don asked Marty to look at some electrical work, and they treated us to a wonderful tour of their extraordinary little piece of heaven on earth followed by an amazing dinner al fresco on a beautiful August evening.

alp front porch 3

This was my breathtaking view while dining on perfectly grilled medium-rare filet mignon steaks, fluffy baked potatoes, and tender-crisp roasted fresh asparagus.  (We’ll have to recommend that as a “special” at John’s!)

alp front porch 2

ALP FRONT GARDENIt is apparent Christina not only enjoys, but works very hard to keep everything looking beautiful, from the décor inside and out to the gardens and grounds.

alp GARDENAnd the front porch was only outdone by the beautiful back patio with bar/kitchen, Jacuzzi, gathering area, and a relaxing stone waterfall..

Driving up to Four Points Alpacas, which also boasts a beautiful bed and breakfast suite (The Inn @ Four Points), you experience 360 degree views of rolling hills, beautiful foliage, ponds, birds, and wildlife.

ALP Road

It really took my breath away.

ALP view

And I just love Christina and Don’s style and all of their little homey and whimsical touches.

The trip to the barn was such a highlight.

And there is no doubt that Christina loves her alpaca family…

ALP kisses

ALP hugs

and they love her!

ALP one of these things is not like the others

And besides alpacas, there are chickens, guinea hens, a duck, cats, and an extremely lovable Mom, Dad, and “Puppy” Great Pyrenees family that hang out with the alpacas (and that I also fell in love with!).

ALP barn I was amazed at how many different colors of Alpacas there are, and the Wrights also have a beautiful shop of handmade clothes, socks, teddy bears, rugs, and other beautiful treasures all made from the Alpaca fur at their Alpaca Apparel & Gift Boutique.

alp group shotTEN of these Mommas are “expecting” and due any day.  Christina has promised to call me so I can run over and experience the birth of a Cria (Baby Alpaca).  She says a healthy one is 17-20 lbs, and can you believe these lovely ladies carry them for 11 1/2 months!  They get about a two-week break before they start all over again.

alp fieldAnd the piece de resistance of the evening was watching the beautiful sunset as the Alpacas romped through the fields.

Thanks Don and Christina for one of the best Wednesday evenings I’ve had in a long time!

If you are ever in the area, be sure to check it out or consider spending the night or weekend at The Inn at Four Points Bed & Breakfast.  I guarantee you’ll make lots of new friends (like this pretty girl who stole my heart) while enjoying some of the best views in Western Pennsylvania with a couple of great hosts in their little piece of heaven on earth.

Jodi

Remembering Moments

Happy Wedding Day Jackie and Matt!

May this be a special day, but may you also always keep in mind that life is full of “moments.”

May you have many memorable moments in your lifetime together.

Bloom with Hope – Always and The TOUGH MUDDER!

Bloom with Hope Always

StampinUp Bloom with Hope Watercolored in Shades of Blue

Tomorrow is THE BIG DAY!  Jackie and Matt’s Wedding!!

Hopefully she is much too busy to be bothered reading my little ole’ blog post (or she will see her wedding card!)

This card is my #FreebieFriday post for our #WheretheRubberHitstheRoad group, and I couldn’t be more excited for a Friday!

Tomorrow’s celebration will be followed by an overnight with some of our besties, Joyce and Rob, followed by the #ToughMudder Event on Sunday, where Jake and Nick are participating in a team with Nick’s best buddy, Jon and his sister, Kelly.  Go Team McKinney/Randza!

#ToughMudder is a 10-12 mile (18-20 km) obstacle course designed to test all-around strength, stamina, teamwork, and mental grit.  The idea of Tough Mudder is not to win, but to have a story to tell!

Check out this video:

Oh Boy!  Eh?  It sounds like a lot of fun (for us spectators!) and is for a great cause – the Wounded Warrior Project.

Hopefully, I will get some fun photos and have some good stories to tell, but until then, have a great weekend all!

Cheers & Hugs,

Jodi

PS – In perusing some new bloggers and blogs, I came across a fun new challenge site:  Addicted to Stamps Challenge Blog and Laurie’s beautiful entry into the CAS Challenge #109.

CAS means “clean and simple” in the stamping and cardmaking world, so I thought I would give it a try with this card I made last week for Jackie and Matt’s wedding.

Clean and Simple can often be a challenge for me – I tend to want to over-embellish, but I think I kept this one pretty clean and simple 🙂 .

Color Challenged in a Color Challenge

PPC 228 swallowtail

For my card-making/stamping escapades this week, I sure was stumped on a color challenge.

I have been enjoying participating in various card challenges as a way to expand my creativity.  The challenges typically give you a sketched layout, an inspiration photo, a particular embellishment that must be used, or a grouping of 3 -4 colors to incorporate into your project.

So…. after feeling a little bit proud (woohoo! I’m easily excited) for being recognized as a “Cut Above” the past two weeks – last week for the Paper Players Challenge #207 Button Challenge (thanks Andrea!) and the week before in the Paper Players Challenge #206 Sketch Challenge (thanks Claire!), I just couldn’t figure out what to do with the Paper Players Color Challenge #208.  I actually made three different cards three nights this week until I settled on the watercolor swallowtail card above to submit.

The challenge was to incorporate 4 colors into your project:  Calypso Coral, Blushing Bride, Hello Honey, and Basic Gray.  Here they are:

pp208

I was having trouble being creative with these colors.

This was my first attempt:

PPC 228

Didn’t love it….

Then I made this one:

Joy PPCUsed the same colors….  different techniques….

Didn’t love it….

Almost gave up…

Then this one came to me:

PPC 228 swallowtail

Still the same colors…. Yet more different techniques….

As I look at all three, I see such a vast difference in all three despite the same four colors being used.

For the one I chose, I watercolored the inks on water color paper with a water brush starting with the blushing bride on top, then calypso coral, and finally hello honey.  After it dried, I stamped the swallowtail on with Memento black ink, then outlined and shaded with some glittery dazzling effects.  I then simply mounted that on the gray card stock, and then onto a white base.  With all the glitz of the butterfly, I thought I should keep the rest muted and simple.

So now I have three cards I can use – all because I was seriously color challenged in this week’s color challenge.  Thanks Nance!

Jodi

Rosemary Garlic Pretzels

rgp cover
My recent snack OBSESSION is Rosemary Garlic Pretzels.

Those that know me best know that even though I  L-O -V-E  to bake…………..

999,997.4 times out of 1,000,000, I would chose a salty pretzel over a chocolate chip cookie as a snack…

to go with my red wine or G&T especially.

rgp snack bowl

So lately, I have been making these SUPER simple, yet oh so DELISH Rosemary Garlic Pretzels.

All you need to do is take a bag of hard pretzels of your choice, break them into “bite-sized” pieces, and layer them on a baking dish.

rgp ingred

Then you simply drizzle with some olive oil, fresh chopped rosemary, garlic & herb (or your favorite) seasoning, and (the special ingredient) a drizzle of honey.

rgp pan

Bake at 250 for 30-40 minutes, stirring every 15 minutes, and voila!

rgp jar top

A yummy snack!

rgp jar

And you should probably NOT do as I do and put a jar full on your kitchen counter…..

Yummy for the Tummy

at Life In Between.

Jodi
