The Best Sandwich I Ever Made!

…or maybe I was just really hungry….

… but O. M. G. – I made the BEST tomato sandwich for lunch yesterday!

This was after staring at the overflowing bowl of tomatoes I picked the day before that is sitting on the counter with the abundance that is finally coming out of my tiny, little neglected 😦  garden.

(I AM going to do better next year – –  – she says every year!)

Oh  why do they have to come all at once!?!  Wouldn’t it be nice to have about five or six a week ripen throughout the whole year?  But NOOOOO – – – we get 30 at once for a couple weeks – then NOTHING!

And homegrown ones are so much sweeter than what we can get around here in Western PA the rest of the year at our local grocery stores.

So I plopped a couple slices of honey whole wheat bread in the toaster, smeared some mayo on them, then sliced (now this is a WHOLE new experience for me!!) some

SMOKED BUFFALO MOZARELLA cheese

I bought last weekend at Penn Mac in the Strip District.

Oh people – let me tell you….  actually – I can’t describe how YUMMY it is!!!

My favorite before this was smoked gouda, but WOWZERS, did this make for a good tomato sammie!!  (and I’m thinkin’ I must have a thing for smoked cheese…)

On top of the sliced cheese, I layered some fresh basil as if it were lettuce (oh how I love the anisey, licorice-like taste and smell of fresh basil!), then finally the tomatoes, a pinch of salt, and smooshed it down.

And seriously – I’m sorry I did not get a very good photo, but I did not have the patience to check it before diving into it, and then it was too late for any retakes. 😐

So I hope I described it well enough to get you to try.  A simple, but oh so delish sandwich for a hot summer lunch or dinner or snack!  Heck – – – I’d even eat this for breakfast!

Tic-Tac-Toe 3x Three in a Row!

Remember playing tic-tac-toe as a kid?  HangmanDots and Boxes?

Such simple pleasures and cherished smiles revolve around those less complicated, simpler times….

But life moves on….

Times change…

Do kids today still play tic-tac-toe?  On paper?

I love technology, but I also love paper – – –  For example – with books and reading … I sometimes read a book on my iPad, sometimes I listen to a book through Audible on my iPhone, and other times I love holding and turning the pages of a real book!  And sometimes I do all three with the same book – especially when I need to get through one for a book club deadline! 🙂

Anyway – we can dwell on the past reminisce or go with the flow and change with the times.

So it was fun to see The Paper Players offer a Tic-Tac Toe Challenge this week.  My first!  You had to choose any three items combined across, down or diagonal to make your card or project.

And my goal was to see how many ways I could get three in a row in one card!

The Gratitude Challenge

So now the latest “thing” buzzing around on Facebook is the Gratitude Challenge.

The Ice Bucket Challenge was awesome and all – for a while – and it raised some great awareness for ALS.  I did it. Everyone did it.  I’m growing a little weary of it.

But now I’ve been “nominated” to do the Gratitude Challenge.  I just finished my first post, and I’m still feeling a little bleery-eyed from expressing my gratitude for “my guys” (my hubby and my two boys – well men now – but all the same my guys).  Feeling so…… well…… grateful…    so full… so blessed.

There is nothing like spending time thinking about things you are grateful for and expressing that gratitude to make you feel good.

There’s a lot of “crap” that results from social media these days.  My dad and I talk about it regularly.  He’s not such a fan of it all.  I’m pretty much into it.

I am in Corporate Communications…..

And I do like to be “social”  🙂

So despite the “yukky” stuff that comes about through social media (which I need not take the time to mention and remind you about),  like everything else, social media can be used for good as well as bad.

I’m feeling good about the Gratitude Challenge, and I’m also going to make it a point to send a card of gratitude every day for the next five days to go along with my posts.

The card I’m showing here is one I am submitting for the SUO Challenge #104.   This is my first submission for SUO, so wish me luck!  Here is the description of the challenge rules:

“Clean and Simple” – also known as CAS – is a style of greeting card that most of us have tried at one time or another.  A Clean and Simple card is one that doesn’t have a lot going on with it.  It can have layers and it can have embellishments.  But basically with a CAS card, anything that’s part of it helps us all focus on the single important element in the card, including in many cases lots of clean space that forces our eye towards that focal point.  Your challenge for this SUO Challenge is to make a Clean and Simple card.

I love this SU Blended Bloom Stamp and can get lost in “coloring” it with alcohol markers and just blending and creating shades and highlights and different colors.  I hope this card meets the criteria of CAS, as I feel the focal point is the flower and hope your eye is drawn to that when looking at the card.

And…. I am going to send this card to a few ladies that I haven’t met yet, but hear are following my blog, so I am excited to send it with an extra little treat and hopefully bring a few smiles.  🙂    (Hi TSM friends!)

Gratitude: Day 1

Janet Adams and Joyce Brugnoli both nominated me yesterday to do the gratitude challenge. Every day for five days I am challenged to list three things or people for which I am grateful. On each day, I nominate two people to do the same…. This is just about expressing thanks and recognizing amazing gifts in our lives. The sharing of my first three does not necessarily mean I am less or more thankful for those things or people that I share over the next days.
I could so overthink this as I am grateful for so many things in my life! I am having trouble narrowing down how to begin, so I will keep it easy by just expressing the first things that comes to mind…. 1. Marty (Merv) – the man I met when I was 16 and he was 20 – married when I was 19 and he was 23 – and that I still get to say “I love you” to every day – 35 years later. My rock – the man I cannot imagine my life without. 2. Our first born son, Jake – who changed my life forever by showing me the joy of motherhood 27 years ago. He gives me a hard time as often as he can, but also loves me so powerfully in a way that he and I “get” and enjoy. His intelligence and musical talent blow me away and make me so proud. 3. My “baby” Nick, who brought such joy to our little family 24 years ago when he joined it – all 10 bouncing pounds of him. He balanced us out by making us 4 and continues to balance us out in so many other ways. He charms me into doing anything he wants, gives me honest opinions, thinks like me, understands me, and humors me when the others don’t/won’t.

Our family LOVES Guacamole!

and it is so easy to whip up in just a few minutes if you have a couple of ripe avocados on hand.

Here is my super simple, but SUPER YUMMY recipe for Jodi’s Holy Guacamole!

INGREDIENTS:
4 ripe avocados
1 lime
2 cloves garlic, finely chopped
1/2 large sweet Vidalia onion, chopped
1 ripe tomato, chopped
1/2 cup chopped fresh cilantro
Salt to taste (1/2 – 1 tsp)

Cut the avocados in half, pit, and scoop out flesh by using a tablespoon.  Place in bowl.

Then coarsely chunk/smash using a pastry blender until it looks like this – takes less than a minute when the avocados are ripe.

Squeeze the juice of the lime over avocados and mix well.

Add remaining chopped ingredients:  garlic, onion, tomato, cilantro; and then salt to taste.

Easy Peasy!  Serve with tortilla chips.

Jake and Colleen came over Sunday, and we ate it all!  First some before dinner, then polished it off after dinner with a couple drinks and a game of Scrabble (Which PS I won the first game!  Beat Jake by ONE Point! You cannot realize what a big deal this is – LOL!  Jake takes his Scrabble very seriously.  🙂  So he won the second game.  We will have to have a tiebreaker SOON – Game on Jake!)

The Strip District is the place to go.  The Strip District is a neighborhood in Pittsburgh, Pennsylvania that is about a half square mile area of land northeast of the central business district bordered to the north by the Allegheny River and to the south by the Hill District. The Strip District runs between 11th and 33rd Streets and includes three main thoroughfares — Smallman Street, Penn Avenue, and Liberty Avenue — as well as various side streets.

So Saturday was the day for my buddy Janet and me.  Janet had not been to the Strip since she was a child, and since she is only around for a few months in the summer before heading South, we decided to squeeze a field trip in.

Henry has worked at Strip District Meats for 11 years, and he is the most amazingly sweet, informed, fun, and charming salesperson and butcher you will ever meet!

Not only did he specially cut Janet’s Lamb Chops exactly to her specification (which just so happened to be whatever Henry thought was best!),

but that little charmer talked me into buying a couple of Wagyu Steaks for Marty and me at the GREAT DEAL of only $19.95 – drastically on sale from the usual $31.95 per pound.  Oh they better be good Henry!  He went through three cases to pick the best two out for me.  Did you know Wagyu Beef are given daily massages and beer to drink (which so appealed to another shopper near me that he asked to be signed up to be a Wagyu Cow, until Henry gently reminded him –   with a swift hand motion across the neck – that they get their heads cut off after about 18 months of this spa-like treatment…

But if Wagyu or Lamb Chops are not your “cup of tea,” how about some Ground Camel – or Alligator – or Kangaroo – or Ostrich – or only the finest hind legs of rabbit?????!!!!!…..

Melanie was Henry’s apprentice, and just as sweet – and even a little cuter (if that is possible 🙂 ). What a great place to shop that I will never miss again when visiting the Strip!

The Day We Almost Caught a Fish

Yesterday was such a great day on the lake.

What an enjoyable extra day off Marty and I had going out for a late breakfast and then heading to Moraine State Park for a boat ride/fishing trip.

Of course we took our trusty First Mate Mikey with us too, who attentively tried to sniff out the fish.

The sky was blue, the water was calm, and there was just enough of a breeze to make it even more pleasant.

I read about 12.5 pages of a book I’ve been meaning to get to.

It was a BIG one!

It had to be about  20-24 inches…  at least!

A Striped Bass.

The biggest one Marty ever (almost) caught.

He pulled the line, grabbed the net, and just as he was pulling it up into the boat………..  SNAP!

The line broke, and Mr. Bass got away…..

I tried to get a picture, but to no avail…….

So I guess our story will just have to remain…

And after a gloriously relaxing day with this hunk of a guy – – – who I remembered especially today how much I adore 🙂 – – –  our pizza was delicious for dinner.

Gone Fishin’

Where did summer go?

I can’t believe it is Labor Day Weekend already!

And Marty and I are celebrating early as we both took today off to extend the weekend into four days instead of three.

And we are going fishing today!  Well……..  Marty is going fishing, and I am going for a boat ride 🙂

And our trusty First Mate Mikey will be with us.

I hope you are taking some time to relax and enjoy this holiday weekend.

Savor every moment of these last days of summer as we approach the magnificence of Fall – which I am going to strive to embrace again this year!  (Fall is so beautiful, but for many years I have not savored it knowing that winter was ahead and summer was over, but I realized last year that I was wasting a lot of beauty and joy worrying about what was behind and what was ahead instead of enjoying the moment I was in.)

So here’s to the ending days of Summer…..

the beginning days of Fall……

and every moment at Life in Between.
