Pecan Pie Thumbprint Cookies

Pecan Pie Thumbprint Cookies.

It’s December, and that means time to start Christmas cookie baking!

These cookies are a wonderful version of pecan pie in a cookie!

They are similar to Pecan Tassies, but a lot easier.

The cookie is buttery and shortbread-like, while the filling is nutty and sticky and sweet and AMAZING!

I had a little bit of extra filling left that I just couldn’t throw away, so I spread it on a sheet of crescent roll dough, rolled it up, and sliced it into 8 easier-than-pie pecan “sticky buns!”

Here is the recipe I found at  Crazy for Crust, which I only slightly altered.  Thanks for a great recipe, Dorothy!

Pecan Pie Thumbprint Cookies

Ingredients:

Cookie Batter:

  • 2 cups brown sugar
  • 1 1/2 cups butter, softened
  • 2 eggs
  • 2 tsp. vanilla
  • 4 cups flour
  • 2 tsp. baking powder
  • 1/2 tsp. salt

Pecan Pie Filling:

  • 2 cups pecans, chopped
  • 1/2 tsp. coarse or flaked salt
  • 1 cup brown sugar
  • 4-5 Tbsp. Half and Half or Heavy Cream
  • 2 tsp. vanilla

Optional:  Powdered sugar for sprinkling on top of cooled cookies.

Preheat oven to 350 degrees F.

Beat brown sugar, butter, egg, and vanilla in electric mixer until creamy.   Add in baking powder, salt, and flour, and mix on low speed until well combined.

Shape dough, two tablespoons at a time, into balls, and place the balls two inches apart on a baking stone or cookie sheet.  Indent a hole in center with your thumb.

Prepare filling by stirring pecans, salt, brown sugar, and vanilla with cream until it forms a thick mixture.  Spoon approximately one teaspoonful into thumb indentation of each cookie.

Bake for 10-12 minutes.  Cool for 5 minutes on stone or cookie sheet before removing to rack to cool completely.

Sprinkle with powdered sugar if desired.

Cookies freeze well for up to a month.

As I was painting and listening to one of my favorite new artists, Lucy Spraggan one evening this week – this is what happened. It’s quite large – 24″ H x 36″ W – and done completely with palette knife and acrylic paint from the tube.  This young lady’s music and lyrics touch my heart and soul, and this is my response as I listened and painted. (Thanks to Colleen Brown at The Chatter Blog for introducing me to Lucy!)

World Watercolor Month 2018 – I’m an Artist Ambassador!

My amazing buddy, Charlie O’Shields at Doodlewash is at it again!  He is hosting the annual World Watercolor Month celebration in July, which he created three years ago to inspire people to paint with watercolor while raising awareness for the importance of art and creativity in the world.

Art has brought me so much joy since I discovered watercolor about three years ago that I want to be a part of sharing it, so Charlie honored me with the privilege of being a World Watercolor Month Art Ambassador.

For the month of July, I will be donating $1 from every watercolor sale (originals, prints, greeting cards) from our McKinneyX2Designs ETSY shop to Dreaming Zebra which helps support children in need around the world by providing art supplies and art education.Research has shown that art education has a tremendous impact on the developmental growth of every child and has proven to help level the learning field across socioeconomic boundaries. Unfortunately, arts education programs are too often the first to be cut when cuts are made, so more and more children each year are missing out on the important benefits of art classes.

The Dreaming Zebra Foundation is unique in that they provide an art recycling program that is free to the public. Reusable art & music supplies that would otherwise be discarded, along with new or unsold materials, are donated by individuals and businesses and matched to recipients who have requested those materials for arts education purposes in communities around the world.

And Charlie chose my Yellow Canary, which I created in honor and memory of a special blogging friend, Terry, as the MX2 watercolor to be put on this year’s limited edition Artist Ambassador zippered pouch souvenier merchandise for World Watercolor Month 2018.  100% of the proceeds from the purchase of these zippered pouches will go to the Dreaming Zebra Foundation!

Taking a Blogcation

Taking a Blogcation.

Hi Friends!  On May 18, 2014, I published my very first blog post.
Almost four years later, I’ve been blogging daily or at least five days a week.

I’ve never taken a blogcation – even when I was on vacation!

So I’m thinking I deserve a little break.
I hope you understand.

I am going to take a week or two off as I focus on a few other things going on in my life right now, including a new full-time career.

I’ll try to check in on occassion and may even have a chance to post a time or two, but forgive me if you don’t hear from me for a little while.   Know I am well… very well and happy!

Looking forward to connecting again soon here at “life in between!”

Is anything crazier or more unpredictable than the weather?!

Where I live, we went from record highs one week
to record lows the next.

From open windows and shorts and bare feet –
to snow flurries and wool socks and sweaters.

And one cold day I painted this winter scene
(inspired by a photo I saw that I cannot find credit for).

It’s funny how the cold scene
gives me a warm feeling.

Almost as crazy as the weather!

Summer

A Bumble Bee Named Buzz

On the edge of a meadow lives a bumble bee named Buzz.
He lives near his aunt and his uncle and his cuz.

Aunt Sally, Uncle Sam, and Sherman they was.
They love Buzz more than any other in Americas.

Sherman and Buzz love to play and dance because
It is what all the bumble bees in the meadow does.

So if you see dancing bees and think your eyes are a fuzz,
don’t be surprised if it’s Sherman and Buzz.
