Sittin’ on the Dock of the Bay

old boat at three rivers rowing association youth boathouse pittsburgh pa

Sittin’ on the dock of the bay
watching the……

geese and birds and fishermen and rowers,
cars and bikers and joggers and walkers.
Soaking up the early Spring sunshine after a fun little field trip day with hubby on Saturday.

We stopped by the Three Rivers Rowing Association Youth Boathouse in Pittsburgh.

As I snapped photos, I was drawn to this beat up ole’ beauty that sat alone
amidst all the sleek and shiny new sweep and sculling boats.

It’s beauty caught my eye the most.

Kind of like people.

Youth is sleek and shiny and new and beautiful,
but the real beauty that more often catches my attention
is the kind that emanates from the wrinkles on the face of the older woman
who has spent decades loving and smiling and laughing
with her children and grandchildren and great-grandchildren.

or the rough and calloused, knotty, sun-spotted hands of an old man
who worked hard all his life to support his family.
Hands with map-like veins protruding as if telling a story of the places he’d gone and the things he’d done.
Hands that hurt, yet gently stroke his wife’s cheek, guide his children’s path, and cradle his grandchildren.

Yep – sittin’ on the dock of the….. river….
wasting time?
Maybe not.

Cheers & Hugs,
Jodi

Waiting and Watching – A Charlie Guest Post

Charlie Waiting and Watching

Waiting and Watching…

for Dad to come home,
or Cliff the mailman,
or Mike the UPS man,
or Jake or Colleen or Liz to come visit.

Waiting and Watching…

for Pippa and Twiggy (the doggie girls next door) to come out,
or a deer or a turkey or a squirrel or a chipmunk to scamper by,
or a bird or bee or butterfly to flutter by,
or maybe the Easter Bunny!!

Waiting and Watching…

for Mom to say it is time for a walk,
or for dinner,
or a treat,
or an ear scratch or belly rub.

Waiting and Watching…
until my eyes grow weary
and close for “just a blink,”
which is rarely more than two minutes.

It’s a dog’s life.
It’s a good life.
It’s my life.

Woofs and Wags,
Charlie

Jodi’s Mediterranean Crockpot Chicken

Jodis Meditteranean Crockpot Chicken 1

I love chicken, and I love easy crockpot recipes – especially for days you know you are going to be busy, but want a nice, healthy meal at the end of the day.

Crockpot recipes are often thought more about in the winter and often with heavier, creamier sauces, but I love how light and healthy this recipe turned out that was born out of simply searching the pantry one morning last week for what to throw together.

Jodis Meditteranean Crockpot Chicken

I daresay this is good enough for company, yet simple enough for any ole’ weeknight dinner.

Best of all, you can throw it together in about 10 minutes in the morning and forget about it until dinnertime.

Hope you give it a try and enjoy!

Jodi's Mediterranean Crockpot Chicken

Ingredients:Jodis Meditteranean Crockpot Chicken 1

  • 6 frozen chicken breasts (or your favorite cuts – thighs, legs, whole cut up parts)
  • 1 12 oz. jar Marinated & Quartered Artichoke Hearts ( I used DeLallo)
  • 1 12 oz. jar Sweet Roasted Red Peppers (I used Mancini)
  • 3 oz. (1/4 cup) Capers (I used Roland Capers in Sherry Vinegar)
  • 4 cloves garlic, minced
  • 1 Tbsp Italian Seasoning (oregano, basil, parsley, thyme blend)
  • 1/2 cup white wine (I used a bottle of Sauvignon Blanc that was open, but any kind would do, or you could substitute chicken broth)

Directions:

Layer all ingredients in crockpot in order listed above.  Cook on low for 6-8 hours.  Serve alone or over pasta, rice or with a side of new boiled potatoes. Garnish with some fresh basil leaves minced and freshly grated Parmesan cheese.

Easy – Right?!

Delicious?  You’re going to love it!

Cheers & Hugs,
Jodi

Roses and thorns

pink rose impressionist watercolor 5x7 matted 8x10 2

I’ve never been very successful at growing roses,
but I thought it might be fun to try painting some this past weekend.

Roses remind me of love,
of Mother’s Day,
of Romeo and Juliet,
of Valentines and fragrance and summertime.

Roses also remind me that there is always two ways to look at things…

Roses have thorns…
or
Thorns have roses!

May you see roses in all of your thorns.

Jodi

Thoughts at dusk while riding home from a celebration of life service for a young girl whose life was cut short much too soon…

More presence –
Less distraction.

More compassion –
Less indifference.

More generosity –
Less accumulation.

Less narrow-mindedness.

More kindness –
Less cruelty.

Lemon Poppy Seed Biscotti

lemon poppy seed biscotti cover

Yesterday was the first day of Spring…

lemon poppy seed biscotti

and it snowed here in Mars!

lemon poppy seed biscotti 3

So I decided to make something bright and sunny and lemony…

lemon poppy seed biscotti 2

to dunk in my steaming cup of coffee by the warmth of a fire.

I’ve never made biscotti before, so decided it would be fun to try.  I love poppy seed, and it is so wonderful with lemon.

I found and slightly adapted a recipe from Lynn at FreshAprilFlowers, and I really enjoyed it.

This would make a wonderful Easter or hostess gift for coffee and tea lovers.

Lemon Poppy Seed Biscotti

Ingredients:lemon poppy seed biscotti cover
  • ½ cup granulated sugar
  • zest of one lemon
  • 1 Tablespoon butter, melted
  • 3 Tablespoons vegetable or canola oil
  • 1 large egg
  • 1 teaspoon vanilla extract
  • juice of one lemon, divided
  • 1 and ¾ cup all-purpose flour
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • 2 Tablespoons poppy seeds
  • Egg Wash: 1 large egg, beaten with remaining lemon juice
Directions:

Preheat oven to 350ºF. Line a large baking sheet with parchment paper.

Place sugar in a medium bowl and add the lemon zest. Using your fingers, rub the zest into the sugar until all of the zest has been incorporated and most of the sugar is pale yellow. Whisk in the butter, oil, egg, vanilla extract, and 2 teaspoons of the lemon juice.

In a large bowl, toss together flour, baking powder, salt, and poppy seeds. Add the wet ingredients to the dry, and mix until combined.

Turn dough out onto baking sheet and pat dough into a rectangle about ½” thick ( approximately 6″ x 7 ½”.   The dough will be a bit dry and crumbly, but can be pressed together.

Brush egg wash on top and on sides of the dough.  Bake for 20 minutes or until the top and sides are lightly browned. Remove from the oven, but do not turn off the heat.

Place baking sheet on a wire rack and allow to cool for 10 minutes. Once the dough is cool enough to touch, cut into 1″ thick slices using a sharp knife. Cut these 1″ slices in half, making a horizontal slice down the center. Set slices cut sides up on the baking sheet. Return to the oven to bake for 6 minutes. Remove from oven, turn biscotti over, and bake the other side for 6 more minutes.

Remove from the oven and allow to cool for 3 minutes on the baking sheet (cookies will become crunchy as they cool). Transfer biscotti to a wire rack to cool completely.

Store biscotti in an airtight container for up to 2 weeks or in freezer for up to 3 months.

Enjoy dunking this delicious treat in a cup of your favorite coffee, tea, or hot cocoa!

Cheers & Hugs,
Jodi

First Day of Spring

vase of pink tulips

Today is the first day of Spring!

Spring always brings with it such energy,
such hope,
the possibility of renewal.

We are awaiting our first McHendy grandchild (my BF’s daughter is due any moment).

I am also mourning the tragic loss of a grandchild to other very good friends.

Life is so precious.
So fragile.
Cherish the moments.

Hugs,
Jodi

Tulips Pink Spring

Your mind is a garden.
Your thoughts are seeds.

You can grow flowers,
or you can grow weeds.

– paraphrase from William Wordsworth

Choose flowers!
Cherish the moments.
