A Homemade Special Family Coloring Book

Ellas coloring book

One of my favorite Christmas gifts I made to give this year was a special family coloring book I made for Ella.

Ella is my cousin’s daughter, and we have a very special bond.  She is very creative and artistic, so I was excited when my BFF Jill shared a fun site with me called ReallyColor.com where you can create your own coloring book pages from photographs.

Since I recently had the opportunity to do a family photo shoot of Ella and her family at Thanksgiving, I was excited to make some of these photos into coloring book pages in a special book for Ella to recreate.

Here are just a few of the pages.  I can’t wait to see what Ella does with them!

Homemade Old-Fashioned Coconut Cream Pie

coconut cream pie slice

One of the ways I express love is through my baking.  And amidst all of the darkness and sadness of the past few days, I thought it time to share some love.

coconut cream pie

When my dear “Oh Rob” sweetly requested an old-fashioned coconut cream pie for Thanksgiving this year, I was so happy to oblige.

coconut cream pie slice2

As it turns out, his mom always made a coconut cream pie (or two) for Thanksgiving.  Coconut Cream is also one of hubby’s faves and our dear 92-year old Aunt Francie’s too, who joined us this year to celebrate.

coconut cream pie2

This pie was a huge hit – even with the kiddos.

Made with lots of love and dreamy, creamy awesomeness.

Delicious, nostalgic, and oh so yummy!

  • As this mixture begins to thicken, add another cup of scalded milk and continue whisking until it begins to thicken again.
  • Add the final cup of milk, and cook over medium heat until mixture  begins to thicken.
  • Remove from heat, and pour 1/2 cup of thickened mixture into the beaten egg yolks, continuing to whisk.
  • Pour this mixture back into the pot and continue to whisk.
  • Cook for an additional 2-3 minutes until mixture reaches pudding consistency.

Old-Fashioned Hard Tack Christmas Candy

Old Fashioned Hard Tack Christmas Candy

Making Old-Fashioned Hard Tack Christmas Candy is more than just “making candy.”

It is an opportunity to pass down family holiday traditions.

It is an opportunity to create memories.

A chance to spend time with those you love,

and a way to make a homemade Christmas gift.

hard tack candy flavors

So when my daughter-in-law, Colleen asked if we could make hard tack candy this year, I was so excited!

It has been quite a few years since the days when I was about her age and my mother-in-law taught me.

My sister-in-laws and I got together every year with my mother-in-law to make hard tack candy around this time (Thanksgiving weekend), so that the guys could take a bagful in their pockets for their annual deer-hunting trip, which always opens the Monday after Thanksgiving in our neck of the woods, and we would have plenty to enjoy and share as a special homemade gift.

hard tack christmas candy boiling

The recipe is quite simple, but also a bit messy, so we were very fortunate to have an extra helper this year in Charlie, who kept the floor lickety-split clean from any powdered sugar, butter or flying candy that hit it!

Colleen and her sweet sister, Katie, caught on amazingly quick, and we ended up making 10 batches to split between the three of us.

We were happy with our results, and now the tradition has been started for the next generation.

I hope you will give it a try!

Old Fashioned Hard Tack Christmas Candy 2

There is still plenty of time to make this sweet treat and create some memories with a new family tradition.

Here’s our recipe:

Old-Fashioned Hard Tack Christmas Candy

  • Servings: approx. 2 cups
  • Print

Ingredients:Old Fashioned Hard Tack Christmas Candy 2

  • 1 cup water
  • 3 3/4 cup white sugar
  • 1 1/4 cup Karo Corn Syrup
  • Food Coloring
  • 1 dram (tsp) LorAnn Oil & Candy Flavoring of your choice (we used Cherry, Lemon, Strawberry, Raspberry, Watermelon, Orange, Butterscotch, Spearmint, Peppermint, and Cinnamon)
  • 2 cups powdered sugar
  • Butter (room temperature)

Mix water, sugar, and corn syrup in a saucepan.  Heat to boiling and boil until it reaches 300 degrees F (hard tack) on a candy thermometer (takes about 20 mins).

While that is cooking, prepare your cutting station.  Cover counter or table with an old tablecloth.  Pour powdered sugar directly onto the tablecloth and spread around. Amply butter three dinner plates and place on table amidst the powdered sugar.  Sterilize scissors or kitchen shears in a pot of boiling water.

When the mixture reaches 300 degrees F, remove from heat and add food coloring and oil flavoring.  Stir until combined.

Pour onto prepared buttered dishes, dividing evenly between the three.  Let it cool for up to a minute, then begin gently pulling with scissors to edge of plate.  With buttered hands, begin to pull and cut it off into the powdered sugar.  You can snip a little at a time, or pour off large dollops into the powdered sugar.  Let cool slightly and turn over to assure both sides have powdered sugar on them, but do not allow the powdered sugar to mix INTO the candy.  Snip with shears into bite-sized pieces.  Place in a colander and shake off excess powdered sugar.  Spread out on a platter to cool completely.   Store in air-tight containers, mason jars, or Ziploc baggies.

A couple of pointers:

  • I can’t even imagine making this by myself.  I think a minimum of three people are needed to keep it moving as you need to work fast once you pour it as it cools quickly.  Plus – it is so much more fun doing it together!
  • It is HOT!  Be prepared!  Butter your hands and plate liberally to be able to deal with it, and work quickly.
  • Be careful when pouring in the oil flavorings as some are very potent – cinnamon and the mints especially.  Be sure not to breathe in directly over the pot, and have the room well ventilated – open the door or window if necessary and have your exhaust fan on.
  • Some people pour the hot liquid into a pan, let it cool, and then crack it by banging the pan on the counter or table or using a gentle small hammer or tool to pound and crack.  I think that makes it very sharp, but you can do that if you prefer.
  • If you make cinnamon and mint along with fruit flavors – store separately until you put together to gift or serve as the cinnamon and mint flavors can overpower all others.

I hope this was helpful.  Any questions, let me know.

What is your favorite flavor?

Do you have a favorite holiday cooking or baking or crafting tradition?

Cheers & Hugs,

Jodi

Well – I do love a challenge…

And I did happen to have a bag of caramels in the pantry…

Old-Fashioned Fresh Peach Pie

old fashioned fresh peach pie 2

It is fresh peach time in our little corner of the world, and some of the best come from Chambersburg, Pennsylvania, an area known for micro-climate, soil and slopes conducive to growing sweet, juicy, high-quality peaches.  Though Chambersburg is about three hours from Mars, we have a local feed store (that I frequent for bird food) whose owner has a connection and receives fresh peaches and several varieties of plums for just a few weeks every August from a farm in Chambersburg.

old fashioned fresh peach pie slice

Fresh warm peach pie a la mode is one of hubby’s all-time favorite desserts.  He is a fruit pie lover, and peach is at the top of his list.

Old Fashioned Fresh Peach Pie

I was happy to have an opportunity to bake a pie in my less-than-usual spare time this weekend.

blanched peaches

You see, we got a new family member Saturday morning…

Meet Charlie.  We rescued him from a shelter about an hour and a half away.  They believe him to be about a year old.  Day one, he was very shy, but warmed up quickly enough to actually help himself to jumping up and snuggling right in between hubby and me at bed time.  (not sure how long that is going to fly!)

Day two found him to be 45 pounds of galloping, fetching and retrieving exuberance.  His confidence is growing, and his puppy-ness kept me busy.

charlie 080215

He was right by my side in the kitchen while we made this yummy pie for “dad.”  We were both in our happy place!

Enjoy the old-fashioned taste of this classic recipe from our family to yours.

Old-Fashioned Fresh Peach Pie

Ingredients:old fashioned fresh peach pie 2

Preheat oven to 450 degrees F.

Blanch, peel and slice peaches.  (To blanch, place peaches in boiling water for 3-4 minutes, then remove with slotted spoon and place immediately in large bowl of ice water.  The skin will slip right off. )

Mix peaches, sugars, juice of lemon, flour and cinnamon in bowl and let set aside while you prepare pie crust

Line pie pan with one crust.  Add filling.  Cut remaining crust into strips to form lattice top.  Brush with milk, sprinkle with a little white sugar.

Cover edges of pie with aluminum foil to prevent pie crust from burning or overbaking.

Bake at 450 degrees F for 10 minutes.  Reduce heat to 350 degrees F and back for another 30-35 minutes.  Remove aluminum foil during last 10 minutes.

Peach pie is good served warm or cold, and especially yummy with a scoop of vanilla ice cream.

Cheers & Hugs,
Jodi

Homemade Basil Pesto

basil 0715

It’s not easy being green….

unless you are yummy homemade basil pesto sauce!

I have an abundance of basil in my garden this year (for once!), and decided to try my hand at homemade pesto.

basil 2 0715

So I picked a bunch – oooooh the glorious smell! There is seriously nothing like (except maybe rosemary!)

pesto marcona almonds and garlic
Then I added some fresh garlic and a handful of Marcona almonds I had (as I didn’t have pine nuts on hand).  These made a great sub!

Marcona almonds are imported from Spain. They are shorter, rounder, softer, and sweeter than the California variety. They are blanched and roasted in olive oil, then sprinkled with sea salt, making for a truly delicious flavor if you have never tried.

parmesan grated for pesto

Olive oil, salt, pepper, and freshly grated Parmesan cheese are the only other things you need to make this amazing fresh sauce that goes great on a caprese sandwich or as a pasta sauce, pizza topping, or chicken marinade around here.

pesto

We especially like it on orzo pasta.

Here’s the recipe.  Enjoy!

Homemade Basil Pesto

  • Servings: approximately 1 cup
  • Print

Ingredients:

  •  2 cups fresh basil leaves (packed)pesto
  • 2-3 cloves garlic
  • 1/4 cup marcona almond or pine nuts
  • 3/4 cup extra virgin olive oil
  • 1/2 cup freshly grated parmesan cheese
  • salt and pepper to taste (freshly ground is best)

Combine the basil, garlic, nuts, and olive oil in food processor or blender.  Season with salt and pepper.  Pour into a bowl, and gently mix in the parmesan cheese.  Serve immediately over pasta, chicken or fish, on a caprese sandwich, as a pizza topping or use as a marinade.

Fresh Old-Fashioned Blackberry Pie

Fresh Blackberry Pie Slice

Last night, I made my favorite old-fashioned homemade pie.

Fresh Blackberry Pie.

Baking this pie brings me joy for so many reasons…

fresh blackberries

It reminds me of hot summer days spent at Grandma’s house where she did her best to tame the wild blackberry bushes that framed the edge of the woods that surrounded her house.

I remember picking them with her (begrudgingly at the time) and eating more than I put in the bucket or bowl I was assigned to filling.

Fresh Blackberry Pie Slice 2

I remember the way the house…

and the porch…

and even the yard smelled when the pies were baking as fans were blowing and windows were wide open in Grandma’s non air-conditioned home.

I can picture her wiping her brow with the tea towel that was on her shoulder…

I can hear the joy in Grandpap’s voice when he came home from work and smelled it too.

Fresh Blackberry Pie 2

Any time I bake a pie, it also brings back warm memories of my mother-in-law and time spent with her and my sister-in-law and the entire family as we made dozens of pies in assembly-line fashion.

I recall the guys sitting on the porch pitting cherries or peeling apples or blanching peaches or cleaning berries while us girls were in the basement mixing filling and rolling out crusts.

My mother-in-law is the one that taught me the secret and magic to the perfect pie crust, and it is one of the things that hubby brags on me about.  It always makes me smile when I think of this simple pleasure.

Fresh Blackberry Pie Slice 3

And then there is the joy my family expresses when eating a perfect pie that makes my heart soar.

I have to admit, I had two bites before asking who would finish my piece (still trying to lose 20 more pounds!), and it was GLORIOUS!  Might have even been worth skipping dinner for!

blackberries

It took me about a week to pick enough berries to make this pie.

You see, you have to try to beat the birds and the deer and the rabbits and all the other critters that also love these sweet and tart bursts of summer sunshine when they ripen.

And then you have to battle the thorns and the poison ivy that seems to love to grow in the same area as the berry bushes.

Fresh Blackberry Pie

I collected them by the handful on walks to the mailbox or around the yard.

I would then lay them on a cookie sheet and flash freeze them, toss in a Ziploc bag after frozen, and wait until I had enough to make this glorious pie.

And it is SO WORTH IT!

Have you ever made a fresh homemade old-fashioned wild blackberry pie?  If not, I so urge you to give it a try.

I’m guessing your family will thank you, and I’m also guessing you may just begin creating some pretty amazing memories for them like I have when I recall some very special family times from my past.
