Cookie week continues!

I have been making these classic oldie-but-goodie cookies quite a bit lately and realized I have never shared the recipe here.  Not that you couldn’t likely find it elsewhere or directly on the Quaker Oats website, but I wanted to document it here as one of the classics I make and also highly recommend it to those who may have never heard of or haven’t thought about in a while.

They might seem a bit ordinary after the past two recipes this week (Toffee Coffee Oatmeal Cookies and Macadamia Toasted Coconut Chocolate Chip Cookies), but I promise they are (still) an amazing cookie!

These are one of hubby’s faves.  A chewy oatmeal cookie bursting with bits of butterscotch yumminess.

Do you have a classic cookie recipe that takes you back to a place and time?  Takes you back to a great childhood feeling?  To me, these are that kind of “feel good” cookie.  They are simple, but delicious, and a sure crowd pleaser!

Here is how I make them.

Classic Oatmeal Scotchies*

  • Servings: 3 dozen large cookies
  • Print

Ingredients:

  • 1/2 Pound (2 sticks) butter, softened
  • 3/4 Cup granulated sugar
  • 3/4 Cup firmly packed brown sugar
  • 2 Eggs
  • 1-1/2 tsp. vanilla
  • 1-1/4 Cup(s) all-purpose flour
  • 1 tsp. Baking Soda
  • 1/2 tsp. salt
  • 3 Cups Quaker® Oats (quick or old fashioned, uncooked)
  • 1 package (11 oz.) NESTLÉ® TOLL HOUSE® Butterscotch Chips

Directions:

Heat oven to 375°F. In large bowl, beat butter and sugars until creamy. Add eggs and vanilla; beat well. Add baking soda, salt and flour; mix well. Add oats and butterscotch morsels; mix well. Refrigerate for several hours or overnight. Drop dough by tablespoonfuls onto baking stone or ungreased cookie sheet. Bake 8-10 minutes. Cool 5 minutes on cookie sheets; remove to wire rack. Cool completely.

These cookies freeze well. I simply store in the freezer in Ziploc Freezer Bags.

an hour or two of peace and quiet all to myself to do whatever I pleased.

But now that I am an older, experienced, working-outside-the-home mom
to two amazing and independent young men,

and have gained two “daughters”
and a granddaughter too…

the perfect Mother’s Day “gift” has become
an hour or two of time together

to love and laugh and appreciate
the greatest gift of all…

The gift of
being a Mom!

Everyday Heroes

Everyday Heroes.

They really are among us.

And I have to brag on one of them (maybe two).

For those of you that have been hanging around here at TheCreativeLifeinBetween for any length of time know about our amazing McHendy family.

Well – our youngest Jake (who we affectionately refer to as Baby Jake, but who is far from a baby these days!)  is now a distinguished Naval officer on a ship that was being commissioned this past weekend.  An Everyday Hero he is!

But behind the story of this great hero is another hero.  This everyday hero shuns the spotlight, but she does magical, amazing, generous acts of kindness behind the scenes.

She also just so happens to be my BFF.  Her name is Jill, and she is astonishingly extraordinary.  (Remember the Pay it Forward Christmas Gift Challenge?)

Well – much like any Mom of a military service person would do – Jill sends “care packages.”

But Jill doesn’t send care packages just to her son (our Jake), she sends them to the ENTIRE crew of the ship he is on – EVERY month!

She does it behind the scenes, all on her own, while also working full time and then some in an executive position, being a mom to four grown children and grandma to one (and a half!), and being an amazing friend and philanthropist.

When we recently celebrated Jill’s birthday, Jill insisted on paying the bill for lunch.  When paying, she told our server to “keep the change.”  The server questioned her to assure she meant what she said, because, you see, Jill tipped our server over double the amount of the cost of our lunch.  It was her “gift” to the server – on HER birthday!

That’s the kind of person she is…  Someone I can only aspire to be like!

When she was recently called up among dignitaries and military personnel and political celebrities to be honored at the commissioning of the naval ship our Jake is an officer on, she humbly accepted, but raised her arm in respect to doing it “all for the crew!”

I am so stinking proud of her, I had to share!  She will likely not be pleased, but hopefully she will forgive me, because she knows I am doing it out of love and respect for the amazing person she is.

Everyday heroes are among us!  And I am so honored to call one of them my BFF!

Next Sunday is Mother’s Day.
Last Saturday my youngest “child” got married.
My greatest honor in life has been being a mother.
But as this wise verse from Kahlil Gibran in The Prophet reminds me,
I may have housed their bodies, but I cannot house their souls,
For their souls dwell in the house of tomorrow.

I am so proud of the men my boys have become.
As I watched the youngest celebrate marriage, and the oldest toast his brother last weekend,
my heart swelled.
Somehow we managed to do a good job.
And I couldn’t have done it without my husband – their father – by my side.

As I look at this photo I took at Phipps Conservatory in Pittsburgh a few weeks ago of a Momma Duck (made of flowers by the way) and her little ducklings, I was once again reminded of the privilege I was bestowed in life to be a mother.  I am now also blessed with two beautiful “daughters”-in-law and the great privilege of being a “grand”mother.

I am so grateful.

Here’s to all the moms out there!

A few months ago, I recall my youngest son, watching me mix together a batch of cookie dough, asking, “Do you actually enjoy doing that?  Seems like a lot of work!”

I thought about it.

It is a bit tedious.

It makes a mess in the kitchen.

I could be binge-watching Gilmore Girls on Netflix or painting or exercising or reading or so many other things.

But…

There’s something about baking…

There’s something about using Grandma’s old tin measuring cup and reminiscing about childhood summers.

There’s something about the way the house smells like home when you bake.

There’s something about the smiles you know will emerge when hubby sees stacks of cookies cooling on racks when he comes home or comes in from out of the cold.

There’s something about making goody packages to send home with your kids (even though they are grown and on their own and perfectly capable of making themselves).

There’s something about taking a special treat into the office for a long day of meetings and seeing your co-workers’ faces light up.

There’s something about taking a plate of cookies to the Thursday night gang at John’s Bar and watching your buddy eat one cookie before his dinner and two after.

There’s something about trading a cookie or piece of cake with Cliff the mailman when he delivers a package and handful of mail right to the kitchen door (with a treat always in hand for your furry kid).

There’s something about your kids’ friends saying “You make the BEST cookies Mom M!”

So you see – baking is more than the chore of mixing butter and sugar and flour.  It’s about creating happiness.

When I read a recent blog post by one of my very favorite blog writers, Pam at Catching My Drift, I knew I HAD to try her cookie recipe.  Pam is not a food blogger, but a storyteller – a GREAT storyteller I might add.  And the story she wove about her persistent and passionate quest to recreate her ultimate cookie painted a picture of the most heavenly bite on earth.  Pam tells the story of  how she loves sitting in the Starbucks snack bar of her local Barnes & Noble noshing on the most amazing Reese’s peanut butter cookie while sipping dark Italian roast and paging through glossy magazines.  You must read about her 35-year quest to recreate this cookie and the surprising place she found the recipe.

Well, dear Pam, we were certainly not disappointed in this Ultimate Reese’s Peanut Butter Cookie!  It is indeed the ultimate.  It is a new favorite of hubby’s.  And it will now be a staple in my cookie recipe collection!  They are super crispy on the outside edges and tender and  soft on the inside.  The perfect combination of texture and flavor.

Here is the recipe as shared by Pam (which of course I doubled – because I knew I had to share)!

Reese's Peanut Butter Cup Cookies

Ingredients:

  • 1 cup margarine (I used butter)
  • 1 cup peanut butter (I used Jiff Creamy)
  • 1 cup white sugar
  • 1 cup brown sugar
  • 2 eggs
  • 1 tsp vanilla
  • 2 1/2 cups flour
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • 1 tsp. salt
  • Candy or chocolate of your choice to mix in (I used 4-6 Reese’s peanut butter cups, chopped, and 1/2 cup chopped Hershey’s Kisses.)
  • Sugar for dipping

Directions:

Preheat oven to 350 degrees F.

Beat first six ingredients until fluffy.  Add next four ingredients.  Blend well.  Fold in chopped candy.  Shape into 1 1/2 – 2 inch balls.  Roll in sugar.  Place 2 inches apart on ungreased cookie sheet.  Flatten with sugared bottom of glass.  Bake 12-15 minutes or until browned on the edges and beginning to crinkle.  Remove from oven, and cool completely on wire cooling rack.  

Enjoy immensely!

A Hot Air Balloon Themed Baby Shower

Oh what fun we had this past weekend celebrating the anticipation of the sweet baby girl we are awaiting with a Hot Air Balloon Baby Shower!

I made these miniature hot air balloons using super inexpensive 12″ white paper Chinese lanterns that I attached to quart-sized cardboard pulp berry baskets with wooden skewers and embellished with all the pink ribbon, yarn, sequins, buttons, lace, or pearls I had in my craft stash.  I added a tiny battery operated tea light to each basket and hung and placed them all over the house.

It was such a collaborative effort of all the girls involved.   Check out this amazing Aunt Squad surrounding the beautiful momma to be!

We had a hot air balloon cupcake cake,

Hot Air Balloon Cake Pops in a puffy white cloud,

The favors were made using Eos Lip Balms to thank our guests for sharing their time and love with us.

A Hot Air Balloon banner with baby pictures of the mom and dad to be as babies themselves was a nostalgic trip down memory lane.

An Extra Large Basket Lady Pole Handle Wicker Storage Basket with pink and white balloons tied to it was filled to overflowing with children’s books guests brought in place of cards to start a wonderful library for baby.

The books were requested by a special insert in the invitation, and the overflowing abundance of new and extra special, well-loved books from people we love will be so cherished.

The time and love put into gifts blew us away.  A very special Gram blessed Mom and Dad to be with this amazing handmade Hot Air Balloon quilt.

We also had a Hair Bow Boutique…

where guests were invited to create a hair bow (or two or three – like sweet Ella did) for baby.

And they surely blew us away with their talent and love.

Instead of a guest “book,” we had guests add their fingerprint and name to a hot air balloon watercolor painting that can hang in baby’s nursery as a sweet reminder of all who shared in her special party.

A simple game of “Guess the Baby Item  in the Bag” had guests brainstorming

while munching on fruit from a hot air balloon fruit tray (which we forgot to get a picture of – 😦 – sorry Jen!) – but looked a lot like this inspiration from Pinterest, as well as Hawaiian Ham and Cheese Sliders and Chicken Salad with dried cranberries and walnuts in miniature croissants, veggie pizza, and Strawberry Spinach Salad.

Balloons are now popped, and the house is back in order.  Grandma is still glowing, though, as we await the arrival of this already abundantly loved baby girl.

Two sweet boys… two years apart

Once upon a time…   (isn’t that how all fairy tales begin?)
there was a young woman

whose dreams came true
when she was blessed with the gift

of two sweet boys
two years apart.

The young mom lived next
to another young mom

who had a boy and two girls
a few years older.

The one little girl
came to visit quite often.

She loved the other mom’s babies,
and the mom loved the little girl.

Her name was Stefanie,
but the boys could not say that,

so she became “Bunny”
forever and always.

Time and distance
have a way of dividing

people and lives
even those that are special.

But time and distance
can also be overcome

like it was this past weekend
for that mom and sweet “Bunny”

when the news of another
baby brought them together.

Some special relationships
are simply meant to be

like the mom who will now
soon be a grandmother

and the little girl who now
is the best momma to her own

two sweet boys
two years apart.
