Fried Egg Burger ala Marty

fried egg burger

Happy Labor Day!

It’s a day for barbecue…

A day for burgers and hot dogs and family and friends…

A day for picnics or just relaxing…

A day to celebrate the end of summer.

Here’s a photo of a burger hubby recently made.

We love to mix Lipton Onion Soup mix in with our ground beef to make the burger patties.

For this yummy sandwich, we topped the grilled burger with a fried egg, sauteed peppers and onions, an heirloom yellow tomato, a greens mix of arugula and spinach, and some smoked Gouda cheese sandwiched between some toasted sourdough bread.

What your favorite way to to enjoy a burger?

Roasted New Potatoes with Garlic, Bacon & Blue Cheese

Roasted New Potatoes with Garlic, Bacon, & Blue Cheese on fork

Can you imagine any more amazing way to make potatoes?

Garlic, Crisp Smokey Bacon, and Creamy Blue Cheese?!?!

If you are looking for a SIMPLE, but KNOCK-OUT potato dish to serve for special company, with a steak for dinner, or to take to a potluck, get ready to make a lot of new friends with this dish and make your tummy VERY happy too!

Roasted New Potatoes with Garlic, Bacon, & Blue Cheese

My friend Janet came over for dinner the other evening, so I wanted to step up the potatoes a little and thought of this.  We had them with marinated grilled London Broil, Sauteed Fresh Green Beans and Fresh, Sweet Cantaloupe.  YUM!

And if you don’t like Blue Cheese (I realize some people do have an aversion for this cheese that I absolutely ADORE), you can substitute Cheddar or Swiss, or Monterrey Jack, or your favorite cheese – or – you can even eat them without cheese.  They are good that way too.

Here’s the recipe.  I dare you to not like this!

Roasted New Potatoes with Garlic, Bacon & Blue Cheese

Ingredients:Roasted New Potatoes with Garlic, Bacon, & Blue Cheese on fork

  • 3 lbs Baby New Potatoes – I used 1.5 lbs of Yukon Golds and 1.5 lbs of Red
  • 8-10 Strips Thick Sliced Bacon – I used Peppered Slab Bacon
  • 4 Large Cloves Garlic, Minced
  • 2-3 Tbsp Olive Oil
  • Salt & Pepper to taste
  • 4-6 oz. High Quality Blue Cheese, Crumbled

Directions:

  • Preheat oven to 450 degrees F.
  • Dice bacon into small bite-sized pieces and fry in skillet until cooked well, but not too crisp as it will continue to cook and crisp when you roast the potatoes in the oven.
  • Drain the diced bacon on paper towels, and remove all but 1 Tbsp of bacon drippings from pan.
  • Add Olive Oil, Garlic and Potatoes.  Mix to coat potatoes.  Sprinkle with salt and pepper, and stir fry for 3-4 minutes.  Add bacon back in, and stir.
  • Place all in a shallow baking dish and roast at 450 for 20 minutes or until potatoes are done.
  • Remove from oven and crumble blue cheese over all.  Stir to coat, and ENJOY!

Crockpot Chicken Philly Cheesesteak Sandwiches

chicken philly cheesesteak 2

Last week, I made some yummy chicken sandwiches: Chicken Philly Cheese Steaks, which were easy peasy and full of flavor.

Just imagine juicy, shredded chicken with ooey gooey melted cheese and sweet caramelized onions and peppers on a buttery, toasted bun.  Sound like heaven?

Crockpot meal to the rescue!

If you’re looking for an easy, satisfying dinner, lunch, picnic or party pleaser, look no further, and enjoy these yummy sammies.

I know we did!  We enjoyed ours with some fresh garlic green beans and a vinaigrette-based light cole slaw.  Do I have you hungry yet?

I found a recipe I tweaked every so slightly from CinnamonSpiceandEverythingNice.com.

chicken philly cheesesteak

Crockpot Chicken Philly Cheesesteak Sandwiches

Ingredients:chicken philly cheesesteak 2

  • 1 cup chicken broth
  • 1 Tbsp Dijon mustard
  • 1 tsp Worcestershire sauce
  • 1/2 tsp chili powder
  • 1/4 tsp ground cumin
  • 1/2 tsp each onion and garlic powder
  • Olive oil for sauteing
  • 2 lbs boneless, skinless chicken breasts or thighs
  • 2 large sweet onions, sliced
  • 2 large red or orange or yellow bell peppers sliced
  • 4 cloves garlic, minced
  • 8 buns
  • 8 slices Mozzarella or Provolone cheese (or your fave)
  • Pickled Jalapeno or Banana Peppers or Pickles to garnish
  • Hot sauce if you want to “zip” it up some more

Directions

Add the broth, mustard, Worcestershire, chili powder, cumin, onion powder, garlic powder, salt and black pepper to a crockpot set on high and whisk together.

Season the chicken with salt and pepper and place on top of sauce in the crockpot.

In a skillet, saute the onion, peppers and garlic in olive oil. Season with salt and pepper, cook, stirring occasionally for 5 – 7 minutes. Remove half the mixture and place on top of chicken in the crockpot and save the other half for serving.  You can store it in a small covered container in the refrigerator.

Cook the chicken mixture on low for 6 – 8 hours.

During the last hour shred the chicken with 2 forks right in the crockpot and let cook in the juice.

Reheat the onion, pepper and garlic mixture you set aside earlier.

Butter the insides of the buns and toast on a hot skillet until golden brown. Lay your choice of cheese down then top with chicken, some of the onion mixture and pickles or pickled peppers and hot sauce if you like.

Enjoy!

Chicken Noodle Soup Casserole

chicken noodle soup casserole

I’m a soup lover.  My guys – not as much.

I ADORE homemade chicken noodle soup, so when I saw this recipe for a Chicken Noodle Soup Casserole, I knew it was right up my guys’ alleys!

chicken noodle soup casserole 2

I made it even a little more hearty than the original I found by adding more chicken, cheese, and veggies, and it turned out to be another Winner Winner Chicken Dinner!

chicken noodle soup casserole 3

I make chicken for dinner at least once, if not twice a week, so am always looking for new chicken recipes to try.  I am sure this one will be made again.  And what a great casserole to take to someone who is recovering from an illness, welcoming a new baby, just moving into a new home…  It is comfort food for the soul.

Here is how I adapted it from the recipe I found at The Weary Chef:

Chicken Noodle Soup Casserole

Ingredients:chicken noodle soup casserole 2
1 lb of your favorite pasta
4 Tbsp butter
1 large sweet onion, chopped
1 cup chopped carrots
1 cup chopped celery
3 cloves garlic, chopped
1/2 cup sliced green onions
2 lbs boneless skinless chicken breasts, diced
2 Tbsp chopped fresh rosemary
1 tsp chopped thyme
1 tsp sage
1/2 tsp nutmeg
salt and black pepper to taste
3 Tbsp flour
2 1/4 cups chicken broth
1/2 cup shredded fresh Parmesan cheese
8 oz. sliced Havarti cheese (or our favorite – this is what I had on hand)

Directions:

Boil pasta according to package directions to al dente.

Preheat oven to 350 degrees F, and spray a 9×13 baking stone or pan with cooking spray.

Melt butter in a large skillet over medium to high heat. Add onions, carrots, celery, garlic and green onions, and saute for 2-3 minutes. Add in chicken and seasonings, and stir fry until chicken is cooked through – about 10 minutes.

Stir in flour and 1 cup of the chicken broth until smooth. Add remaining broth and bring to a low boil, then simmer for a few minutes as the broth thickens.

Place pasta in greased baking dish, and pour the chicken mixture on top. Gently stir until all pasta is coated in the yummy sauce. Layer the cheese on top and sprinkle additional green onions if desired.

Bake for 20-30 minutes until cheese is melted.

Enjoy!

Jodi

Beer Chicken in the Crockpot

beer chicken 2

Are you looking for a super simple chicken dinner you can throw in the crockpot in the morning, forget about, and arrive home at dinner time to a taste-like-you-slaved-all-day meal?

I adore cooking and baking, but many (really most) days don’t allow me the luxury to spend the time I’d like in the kitchen, so this recipe is just the ticket.  It is full of flavor, tender, and moist.

Beer Chicken in Crockpot 2

And it’s EASY!  Besides the chicken, there are only FOUR ingredients:  a bottle of your favorite beer, a tablespoon or two of seasoning (I used Montreal Steak Seasoning – yep STEAK seasoning), 2 Tablespoons of fresh herbs (I used rosemary), and 2 large cloves of garlic.

Beer Chicken in Crockpot

You can use a whole chicken or chicken parts, or boneless chicken breasts like I did.  Put it all in the crockpot on low for 8 hours or high for 4-5 hours.

beer chicken

The sauce can be made into a beautiful gravy, and I served it with mashed potatoes and steamed broccoli.

SCORE!

The chicken tastes almost like those moist, tender rotisseries chickens you get at Costco or your local grocery, but even better!

Add this to your collection of winner winner chicken dinners!  You won’t be sorry!

Beer Chicken in the Crockpot

Ingredients

  • 4 chicken breasts or a whole chicken or your favorite chicken pieces
  • 1 bottle of your favorite beer
  • 2 Tbsp Montreal steak seasoning (or your favorite blend)
  • 2 Tbsp fresh Rosemary (or your favorite herb)
  • 2 large garlic cloves, minced

Directions

  • Place all in crockpot and cook for on high for 4-5 hours or low for 8 hours.

Homemade Basil Pesto

basil 0715

It’s not easy being green….

unless you are yummy homemade basil pesto sauce!

I have an abundance of basil in my garden this year (for once!), and decided to try my hand at homemade pesto.

basil 2 0715

So I picked a bunch – oooooh the glorious smell! There is seriously nothing like (except maybe rosemary!)

pesto marcona almonds and garlic
Then I added some fresh garlic and a handful of Marcona almonds I had (as I didn’t have pine nuts on hand).  These made a great sub!

Marcona almonds are imported from Spain. They are shorter, rounder, softer, and sweeter than the California variety. They are blanched and roasted in olive oil, then sprinkled with sea salt, making for a truly delicious flavor if you have never tried.

parmesan grated for pesto

Olive oil, salt, pepper, and freshly grated Parmesan cheese are the only other things you need to make this amazing fresh sauce that goes great on a caprese sandwich or as a pasta sauce, pizza topping, or chicken marinade around here.

pesto

We especially like it on orzo pasta.

Here’s the recipe.  Enjoy!

Homemade Basil Pesto

  • Servings: approximately 1 cup
  • Print

Ingredients:

  •  2 cups fresh basil leaves (packed)pesto
  • 2-3 cloves garlic
  • 1/4 cup marcona almond or pine nuts
  • 3/4 cup extra virgin olive oil
  • 1/2 cup freshly grated parmesan cheese
  • salt and pepper to taste (freshly ground is best)

Combine the basil, garlic, nuts, and olive oil in food processor or blender.  Season with salt and pepper.  Pour into a bowl, and gently mix in the parmesan cheese.  Serve immediately over pasta, chicken or fish, on a caprese sandwich, as a pizza topping or use as a marinade.

Balsamic Grilled Peaches & Chicken Salad Dinner

balsamic grilled peaches and chicken 3

Oh Friends… you know how much I love chicken and discovering new and different ways to prepare it.

Well this week I discovered another Winner Winner Chicken Dinner!

It’s simple, it’s fast, it’s healthy, and it’s YUMMY!

balsamic grilled peaches and chicken 2

I have seen and heard about grilling peaches, and I was intrigued.

Having some ripe peaches in the fridge that weren’t getting eaten, now was the time to try it!

grilled peaches

It was so easy, and they were DELISH!

Balsamic Grilled Peaches and Chicken

If you are looking for another light and simple, but full-flavored summer chicken dinner, look no further!

And remember, like I always say, if you don’t like a particular ingredient, switch it up!  Substitute goat cheese or feta or even shredded cheddar for the blue cheese if you are not a blue cheese fan (but BOO to you because it is DIVINE!).  Change up the greens to ones you prefer.  I used Spring Mix, but it would be awesome with Spinach or Arugula or Kale too!

Be creative.

Have fun!

Make dinner a celebration.

Create art on a plate.

You won’t be sorry about this one!

Balsamic Grilled Peaches & Chicken Salad

Ingredientsbalsamic grilled peaches and chicken 2

  • 4 chicken breast halves
  • 4-6 cups Spring Mix Salad Greens
  • 2 large sweet Vidalia onions, sliced into 1/2 thick slices
  • 4-6 ripe peaches – cut in half and pitted
  • 1/2 cup crumbled blue cheese
  • 1 Bottle Balsamic Vinaigrette Dressing (I used Ken’s Light version)
  • Olive Oil
  • Balsamic Vinegar
  • Salt & Pepper to taste

Directions

  • Marinade chicken breasts in 1/2 bottle balsamic vinagrette for at least 4 hours.
  • Grill chicken when ready to serve.
  • Place Onion Slices in a grill basket (or foil).  Sprinkle with olive oil, salt and pepper.  Grill until translucent and char-grilled.  Place on one side of grill while chicken is grilling on the other side.  These two take about the same amount of time – approximately 20 minutes.
  • Once chicken is done, remove from grill, and set aside.
  • Sprinkle peach halves with olive oil, salt, and balsamic vinegar.  Place cut side done on grill, and grill for about 5-7 minutes until soft and char-grilled.  When done, remove from grill and slice peach halves into three or four pieces.
  • To plate, place a cup of greens on plate, top with grilled onions, peach slices and crumbled blue cheese.  Add chicken to side or slice and mix in with chicken.
  • ENJOY!

Chicken Caprese Penne Pasta

chicken caprese penne pasta

I had a rotisserie chicken in the refrigerator that I purchased grocery shopping a day or two earlier.  I knew it would be good to have on hand for picking at or making a quick dinner.

foodie dice chicken caprese penne pasta

Looking for some inspiration, I thought I’d bring out the Foodie Dice and see what creativity I could stimulate for dinner.

fresh chopped tomatoes

I have to admit I cheated and made the chicken dice happen.  But when I rolled, tomatoes, garlic, basil, and pasta….

fresh basil

Caprese came to mind and came to dinner plate.

goat cheese

I didn’t have any fresh mozzarella on hand, but I did have some yummy goat cheese that makes a glorious quick and easy creamy pasta sauce.

rotisserie chicken

And the rotisserie chicken became the star of the evening.

chicken caprese penne pasta
This was so quick and easy, but SO SO SO SO SO to die for delicious.  I have to admit I sort of moaned (and bragged!) while eating it….

Though quick and easy, I must say this dish could be served for company – and I just may do that.

If you don’t have a rotisserie chicken on hand or available, you could simply roast a chicken or saute some chicken breasts and/or thighs to use.

Thanks to the roll of the Foodie Dice for this yummy dinner.

  • 1 rotisserie chicken, skinned and chopped

Hummingbird Cake

hummingbird cake 6

Have you ever heard of Hummingbird Cake?

Well – it is one of my Dad’s faves…

So I decided I was going to give it a try for his birthday.

hummingbird cake 2

This sweet, dense, banana, pineapple and pecan smothered cake is not for the faint of heart!  A thin slice goes a long way!

It reminds me of carrot cake with its thick layers of cream cheese frosting between the three layers of decadent delightfulness.

But WHY is it called Hummingbird Cake?

hummingbird cake 5

Considering the key ingredients – bananas and pineapple – this famously southern cake is thought to have been invented in Jamaica in the late 1960s.

It was originally called the “Doctor Bird Cake,” nicknamed after a Jamaican variety of hummingbird called the Red-billed Streamertail. The name came from the way the bird’s long beak probes flowers, like a doctor inspecting a patient.

But what does that have to do with a pineapple and banana cake?  According to Celebrity Chef, Jamie Oliver’s website, some say the cake was named after the bird because it was sweet enough to attract hummingbirds (who eat only nectar), while others say the yellow streaks of banana are reminiscent of the bird’s plumage.

In 1968, the Jamaican tourist board decided to try attracting tourists by sending out press kits to the US. In the packs were a few recipes from the island, including one for the Doctor Bird Cake. Shortly thereafter, similar recipes started to crop up in local papers and community cookbooks across the South.

Most food historians agree the first printed recipe for Hummingbird cake was by Mrs. L. H. Wiggin. She supplied the recipe to Southern Living magazine in February 1978.  Even before then, however, there were countless references to the cake in county fair reports and baking competitions across Southern America.

hummingbird cake 3

This is a really lovely special occasion cake for that someone special in your life.

hummingbird cake 4

And it freezes well to save individual servings for just when you need that something special for a guest or yourself.

hummingbird cake 1

I sure enjoyed sharing a slice with Dad and Mom II and hubby yesterday – and then leaving the rest with them, so I am not tempted to eat more!

I’d love to hear if you are familiar with this cake or if you make it and how it differs from the recipe I found that is the “Most requested recipe in Southern Living Magazine history.”

Hummingbird Cake

Ingredients:hummingbird cake 3

  • 3 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 2 cups sugar
  • 1 tsp ground cinnamon
  • 3 large eggs, beaten
  • 1 cup vegetable or canola oil
  • 1 1/2 tsp vanilla extract
  • 1 (8-ounce) can crushed pineapple, undrained
  • 1 cup chopped pecans
  • 2 cups chopped ripe bananas
  • Cream Cheese Frosting
    • 2 (8-ounce) pkgs cream cheese, softened
    • 1 cup butter, softened
    • 1 (32-ounce) bag powdered sugar
    • 1 tsp vanilla extract
  • 1/2 cup chopped pecans

Combine dry ingredients in a large bowl; add eggs and oil, stirring until dry ingredients are moistened. (Do not beat.) Stir in vanilla, pineapple, 1 cup pecans, and bananas.

Pour batter into three greased and floured 9-inch round cake pans. Bake at 350° for 25 to 30 minutes or until a wooden pick inserted in center comes out clean. Cool in pans on wire racks 10 minutes; remove from pans, and cool completely on wire racks.

While cake is cooling, prepare cream cheese frosting by combining softened cream cheese and butter with electric mixer until creamy.  Slowly add powdered sugar until incorporated and desired consistency.  Stir in vanilla until combined.

Spread Cream Cheese Frosting between layers and on top and sides of cake; sprinkle 1/2 cup chopped pecans on top. Store in refrigerator.

Enjoy this special cake!

Cheers & Hugs,

Jodi
