I didn’t used to be a big fan of breakfast, but I am beginning to enjoy it more and more.

One of my favorite new hot, healthy, protein and vitamin-rich go-to’s is this yummy breakfast sandwich.

A protein-rich fried egg topped with fresh and juicy, red-ripe Campari tomatoes and slices of nutrient-dense avocado sandwiched between a whole wheat English muffin is just the way to start my day.

When I don’t have ripe avocados, I love to use a slice of smoked gouda cheese or some crispy bacon.  Not nearly as healthy, but oh so yummy!

I’m already looking forward to my next breakfast!  How about you?

Healthy Egg and Avocado Breakfast Sandwich

Ingredients:Breakfast Sandwich Egg tomato avacado

  • I large egg
  • 1 Campari tomato
  • 1/2 avocado
  • 1 whole wheat English muffin
  • butter, salt & pepper to taste

While English muffin is toasting, fry egg to your liking – sunny side up, over easy, over hard (my personal preference).  Add salt and pepper to taste.  Place egg on lightly buttered toasted English muffin, top with slices of tomato and avocado.  Smoosh together, cut in half, and ENJOY!

Lemon Strawberry Pound Cake

Lemons and strawberries in November?  (A time when we are usually baking with pumpkin and cinnamon and apples….?)

Well – we are experiencing some amazing Indian Summer weather here in Mars – with temperatures in the 70’s, the sun shining brightly, and the sky a vibrant shade of blue – so why not – right?

Well – the truth be told – that same cute little bugger who requested the Royal Flush Halloween t-shirts recently found a photo on Reddit that struck his fancy a few days ago of a freshly baked loaf of lemon pound cake with strawberries.  He texted me the photo saying, “Please make.”

Well…. how could I resist?  (I know….. pushover! – but really…. I live for this stuff!)

Turns out the sweet young lady who posted the photo stating “this just came out of the oven” did not post the recipe!  How dare she??!!  More than one reader called her “evil” for not posting the recipe!

I did some digging, however, and found the source and the recipe… Score!!  (I know – I have issues!)

Turns out Bianca Davies, the “evil” baker/Reddit poster, is a trained chef from Cape Town, South Africa, who attended Le Cordon Bleu in Paris, but is equally inspired by her Granny and Granny’s lemon trees.

Per Bianca, Granny likes a cake that is “rich, moist, light, airy and slightly fudgy.”   This little pound cake amazingly delivers on all of that – and more!

So before we get seriously into Autumn and Winter baking and cooking, you might want to enjoy one last taste of summer!  You will not regret it!

Lemon Strawberry Pound Cake

Ingredients:lemon strawberry pound cake photo

  • 3 eggs
  • 1 ½ cups powdered sugar, sifted
  • 2 tsp vanilla extract
  • 1 ½ cups plain flour
  • ¾ tsp baking powder
  • ¾ cup salted butter
  • zest of 2 large lemons
  • 8-10 fresh strawberries

 Directions:

  • Preheat oven to 350˚F.
  • Grease a loaf pan well with butter.
  • Whisk eggs, sifted powdered sugar and vanilla together in a bowl.
  • In a separate bowl whisk flour and baking powder together.
  • Place butter in a small saucepan. Zest lemons into your butter and place on a low heat to melt. (Do not boil)
  • Combine all three mixes together a little at a time. Do not over mix.
  • Pour into your prepared loaf pan.
  • Chop your strawberries into quarters and arrange evenly on top of the batter.
  • Bake in the middle of the oven for approximately 40 minutes. (The cake should be golden brown and ‘just’ done with your knife or cake tester not coming out completely clean. Do not over bake.)
  • Let cool slightly in the pan, turn out gently and leave to cool on a wire rack.
  • Dust with powdered sugar and try not to eat the whole cake in one go!

Apricot Chocolate Chip Scones

I love waking up early on weekend mornings.
After all, it means extra hours in my weekend!

This past Sunday, I got up before anyone else was awake and basked in the moments of pre-dawn with freshly-brewed coffee and Italian Sweet Cream, the opportunity to paint, and the chance to bake something yummy for breakfast before anyone was awake, so they could rise to the smells and tastes of fresh baked scones.

Awwhh!  This is my happy place….

Scones are quick and easy and so delish!
They throw together quickly and bake in 15 minutes.

These Apricot Chocolate Chip Scones were well  received by the sleepy eyes waking up at our house.

Slather them with a little butter or dunk them in your coffee or tea, and you may have found nirvana….  just sayin’.

Apricot Chocolate Chip Scones

Ingredients:apricot chocolate chip scones

  • 2/3 cup butter
  • 3 1/2 cup flour
  • 1/2 cup sugar
  • 4 tsp baking powder
  • 1/2 tsp salt
  • 1 cup coarsely chopped dried apricots
  • 1 cup semi sweet chocolate chips
  • 2 eggs
  • 1 cup half and half
  • 1 tsp vanilla
  • coarse raw sugar for topping (optional)

Directions:

  • Preheat oven to 400 degrees F.
  • In large bowl, combine flour, sugar, baking powder and salt.  cut in butter with pastry blender until crumbly.
  • Stir in apricots and chocolate chips.
  • Add eggs, half and half and vanilla, and mix until soft dough forms.
  • Turn dough onto floured surface and knead lightly.
  • For dough into rectangle approximately 15 inches wide by 4 inches high.  Cut in half, then each half in half, and each half in half again until you have 8 equal sections.  Cut each section in diagonal until you have 16 triangular sections.
  • Placed on baking stones or greased baking sheets.
  • Brush top of each with a little more half and half and sprinkle with coarse raw sugar if desired.
  • Bake approximately 15 minutes.

Chocolate Chunk and Fresh Red Raspberry Chocolate Muffins

Last week I wrote about “perfect pairs.

But seriously…

does anything “pair” better than the divine taste of rich, creamy semi-sweet chocolate and the tangy, sweet, juiciness of fresh red raspberries?

If you are looking for an amazing muffin recipe that goes as wonderfully with coffee in the morning for a decadent breakfast treat as it does with red wine or milk for dessert or as a snack, look no further.  Here is a recipe I slightly adapted from Creme de la Crumb.  ENJOY!

Chocolate Chunk and Fresh Red Raspberry Chocolate Muffins

Ingredients:
  • 2 cups flour
  • 1 cup white sugar
  • 1 cup semi sweet chocolate chunks or chips
  • ½ cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • 1 egg
  • 1 cup red raspberry Greek yogurt
  • ½ cup Half & Half
  • ½ cup vegetable oil
  • ¼ cup semi sweet chocolate chunks or chips
  • 1 pint fresh red raspberries

Directions:

  • Preheat oven to 400 degrees and line muffin pan with liners.
  • Combine flour, sugar, 1 cup chocolate chunks or chips, cocoa powder, and baking soda in a large bowl.
  • Whisk egg, yogurt, milk, and vegetable oil in another bowl until smooth.
  • Add dry ingredients to wet ingredients and mix until just combined.
  • Scoop into muffin pan.
  • Divide raspberries and remaining ¼ cup chocolate chunks among the muffins (just sprinkle the chocolate chips on the tops of the batter and gently press the raspberries into the top – I used 3 raspberries per muffin)
  • Bake for 18-20 minutes or until an inserted toothpick comes out clean.
  • Allow to cool for about 10 minutes before removing.

Fresh Red Raspberry Pancakes

You may have noticed I am on a bit of a red raspberry kick… fresh raspberry chocolate chip cookies…    fudgy fresh raspberry chocolate chip brownies

Well – last weekend I made these homemade fresh red raspberry pancakes for breakfast.  They were quite the hit!  Maybe you are looking for something special and different for breakfast this long holiday weekend…

These easy and yummy little hotcakes might be just the ticket.

I served them with a side of thick-sliced peppered slab bacon.  The sweet and savory together totally rocked it!

Here’s the recipe.  Hope you enjoy!

Fresh Red Raspberry Pancakes

Ingredients:

  • 2/3 cup all-purpose flour
  • 1 tablespoon sugar
  • 1 teaspoon baking powder
  • 3/4 teaspoon baking soda
  • Pinch of salt
  • 1/3 cup plain or red raspberry or blackberry Greek yogurt
  • 1 large egg, beaten lightly
  • 1 tablespoon butter, softened to room temperature
  • 1/2 cup half and half
  • 1/4 cup skim milk
  • 1 cup fresh red raspberries
  • Confectioners’ sugar

Directions:

  • Whisk together flour, sugar, baking powder, soda, and salt. Set aside.
  •  In large bowl, whisk together yogurt, egg, butter and milk. Add to flour mixture; stir just until combined. Fold in raspberries.
  • Heat a griddle over moderately high heat coated lightly with oil. Drop scant 1/4 cupfuls of batter onto griddle; cook for 1 minute or until bubbles form on top. Turn and cook 1 minute more. Serve with raspberry jam, syrup, powdered sugar, or just as is!
